    Thank you so much for this recipe. I had such a hard time finding the ingredients in Germany but lucky for me, a new "asian supermarket" opened right around the corner and now I get to try all the good stuff Korean kitchen has to offer. As I'm writing this my first Kimchi is enjoying its salt bath. I hope the Kimchi gods are in my favor. Again, thank you so much and greetings from Germany.

    Tried this out! I halved the recipe so I could use 1 cabbage and make it even smaller, lol. It's SO good 😍 Before, the only brand I liked was Tobagi's Country Vegan Kimchi but this is better (it's one of those recipes without starch gravy. Would love to see a recipe for that too as it warms up)! The "fish" sauce is brilliant, I'll be using it in other recipes now and recommended it to other fishless friends~ 🥬🌶💗

    Been looking forward to this video :) I might've missed it though but, how long are the shelf life of the vegan fish sauce and "shrimp" paste? I'm allergic to fish and shellfish so the fact you're making substitutes makes me feel very excited (and included). Was thinking of making bigger batches of that just to be able to substitute in other recipes :)

    👋Fluffinator👋. Great questions! If you are making a bigger batch (which is definitely a great idea👍) for other uses for flavoring Korean stews/soups, as long as it is stored in a glass container that is super clean, I would let it go for 3 months stored in the refrigerator (I would store it in the back of the refrigerator where it won't be exposed to the constant temperature interruptions, when placed at the 'front' of the fridge). Make sure to put a layer of plastic wrap on the seaweed paste. And, be extra careful to not double-dip when going in to the storage containers, to avoid contamination. THANKS SO MUCH for cooking Korean food with me🙏🙏🙏

    another benefit to this recipe being vegan and using seaweed and kelp instead is that is also going to be lower histamine! I've got a health condition that means i have to limit the amount of histamines I'm getting in my food and fish/seafood is something that is high histamine unless very fresh so _fermented_ sea food is especially bad for me to eat regularly. can't wait to try this recipe once I've started making my own kimchi!

    Hi! If I let the kimchi ferment in an air tight jar, instead of a kimchi container, is it still ok, or like you warned in the store-bought kimchi storage tips video, will it explode everywhere? My jars are the ones in glass, with a rubber circle on the lid, and a metal clip to really make it air-free. I would not fill it to the top like you said, and allow the liquids to fluid out, but still I'm worried!

    If u leave at least 1 inch of space to the rim, it should be fine. The store bought ones r usually filled with kimchi to the brim. If u r worried about the over flow, leave 2” of space to the rim.

    Hi Chiun Yee Loh. If you have dietary restrictions for onions and garlic, perhaps you can use green onions/scallions? I think you'll have better luck finding substitutions for onions and garlic by Googling it. Good luck🤗

    Planning to make my second patch of kimchi. Still can't find Korean chilli flakes. Can I use Kashmiri chilli powder 🤦... I know.... I just thought it will be less hotter than the last time I made with local chilli🥵🥵🥵

    👋Salma Soliman. Sorry that you can't find any Korean red peppers flakes near you. I never used Kashmiri chilli powder before, but at this point, you might as well experiment with your local pepper flakes. Just make sure you are using Coarse-Grind.     Hi Sue! If you cannot use the salt fermented shrimp, just skip it and use the fish sauce only.     You can order the Korean ingredients online, if you can't get to a Korean market (product links are in the video description box and on the written recipe). As for broth, just add water instead.
