VEGAN GHORMEH SABZI (HERBS STEW) | قورمه سبزی وگان

An Iranian classic stew, typically made with beef chunks; I gave it my own twist to make it #Vegan!

INGREDIENTS:
- Chopped Fresh Herbs Mix for Ghormeh Sabzi; a combination of parsley, leeks or green onions, cilantro, and fenugreek
(I used freshly frozen by Chop Chop Foods)
- Caramelized Onions
- Cooked or Canned Red Kidney Beans
- Cooked or Canned White Beans
- Frozen Shiitake Mushrooms
- Turmeric
- Dried Lime Powder
- Whole Dried Lime
- Saffron
- Salt & Pepper

I’m Persian & I utterly miss & crave Ghormeh Sabzi but have been vegan for 8 yrs & I’m so glad that I can use ur recipe! BTW …. Love Shitake as substitute.

Love this finally a good vegan versian. I love ghormeh sabzi andjeot feeling like something was missing when i made it, its saffron! Btw the link for the ginger turneric tea doesnt work i hope that the ginger doesnt throw it off. Gonna make this is the instapot on the slow cooker setting with black eyed peas
