Vegan Corn Porridge

Corn Porridge is one of the hallmark foods of my childhood. I am honored to share one of my dad's treasured recipes with you Joyful Chefs! Enjoy!
Ingredients:
8 ears of corn
1 dry coconut
3 cups water
3/4 cup coconut sugar (or brown sugar)
3/4 cup (vegan) condensed milk
1/2 tsp salt
1/2 tsp freshly grated nutmeg
3 bay leaves / siliment leaves
1-2 sticks of cinnamon (1 each cassia and ceylon)
2 tbsp (vegan) butter
*Set in 2 ungreased pyrex dishes
*Cool completely before slicing
*Best served chilled

I remember my parents using that galvanize grater to grate everything, pone, paime,coconut oil etc. Brings back a lot of good memories. 😊

Hi this an awesome rendition of your corn porridge. I was actually looking to find a liquid substance as you mentioned porridge. But instead found it to be a firm item such as a flan. 😂 Nevertheless beautiful. I wd also like to know where one can get the VEGAN BUTTER AND CONDENSED MILK? Thanks and best of Joyful cooking.

Hi, thank you for your feedback. The porridge changes consistency as it cools because of the starch. 😃 I’m from Trinidad and there are a few smaller stores that specialize in vegan and organic products. You can search on google to find one that’s close to you. 😉
Corn porridge is more liquid. Like custard porridge, cream of wheat porridge, tannia log, oats porridge, flour pop, sago porridge etc. Corn porridge is corn flour,sugar, spices and milk. From your recipe, I am guessing your dad is from barbados, and what you are making there is corn pudding ,just like sweet potato pudding and cassava pudding. If you boil your mixture in boilingbwaterb, wrapped in plastic or foil,they call it dukuna or set in a pan to firm up ,its called cou cou.

Hi, my dad is from Trinidad. 😊 This recipe isn’t meant to imitate cornmeal porridge. It was made when cornmeal wasn’t as popular and corn was used in many different ways with simple ingredients. Traditionally, we call this corn porridge.

@@joyfuloven my dad also a trini, never thought me that version of porridge, interesting. I wonder what your version of peleau, saltfish souse, paratha, samosa, channa, dal etc is like.

@@joyfuloven Hi Erica, I learned this method of making corn porridge from my father in law, he was a "carib/ spanish mix;" the first time I had it I was blown away by the taste, however he made it with condensed and coconut milk, no sugar. It was something we looked forward too having every "corn season" in the old days, especially when it was raining, we hardly ever left it to set.😂 I still make it whenever I get our local corn,which my children and grandchildren love! Thanks for sharing this, looking forward to other Traditional recipes.❤
