- 20g Corn starch

- 50g Sugar

- 250ml Milk
(牛乳)
- 100g Whipping Cream
(生クリーム)
- 1Tsp Vanilla extract
(バニラエッセンス)
- Refrigerate for 2 hours
(冷蔵庫で2時間)
●Choux Pastry:
- 130ml Water
(水)
- 50g Unsalted butter
(無塩バター)
- 1/4tsp Salt
(塩)
- 70g All purpose flour
(中力粉)
- Medium heat 90 seconds
(中火 90秒)
- Wait for 15 minutes
(15分待つ)
- 2 Eggs
(卵)
- Bake at 190℃ for 25 minutes
(190℃ - 25分焼く)
●Ganache Chocolate:
- 50g Dark chocolate
(ダークチョコレート)
- 50g Hot whipping cream
(生クリーム)

I tried these yesterday and they worked perfectly! I'm super happy. I used chocolate on its own instead of chocolate ganache for the coating and it adds extra crunchiness.

This is literally my moms eclair recipe 😁 except the whipping cream.. we usually add rhum into the filling mixture and the taste just awesome! Please try it
While watching this i got reminded of the HUGE eclaires i used to eat with my grandma These were thrice the size of an eclaire from those you made, and had quite a lot of toppings I miss that

I've made them. They are delicious! Thank you for your recipes! What I like most about your recipes is the quantitative proportion of batter and cream. I'm from germany and most of german recipes have more batter than cream, so you always have to try and do some math. I hate it! But I guess everyone hates cakes, that are not completely covered in cream :P

I'm always so impressed not only with how good and easy you make the food look, but also how well behaved the cats are! They are so relaxed and hanging out in their little outfits its so cute!
For those who actually want to make this cake: *Check the efficiency of your starch. Some variants may be "weaker" and then you'll need to add 10g more than required. You don't want the filling to be too liquid. And wait until it cools to skin temperature before you put it in the fridge. *Don't cook butter and water for too long. The water may evaporate too much and this will make your dough too thick. *When Nino said to wait 15 minutes after cooking the dough - it means that it should actually cool to room temperature. If it's too hot, the dough will become too thick after adding eggs, which will make it harder to squeeze out onto the baking sheet, and after baking it will be too rubbery. *Check the size of the piping tip! It's good if you can manage to squeeze out eclairs slightly thicker than your index finger. Assuming you have fine fingers like Nino :D If they're too thin, eclairs will be too thin as well after baking. And if you don't get them right from the first try, scoop 'em up and put the dough back in the bag, and squeeze out again. Don't squeeze the dough on top to make them thicker, because it won't mold with the existing layer, it will grow into an additional one! I love Nino's recipes because they are actually doable 😊 And I miss the roasting as well...

It was years ago since i made an eclair and cream puffs, because of this i wanna try baking again.
Thanks for the recipe! It’s really delicious~ Note to future self: Start at 190°C until risen and then turn to 170° then last few min turn to 150°C. Can make 2 batches as 1 batch only result in 15 eclairs.

Mình vừa làm thử eclair theo công thức của Nino. Kem trứng vanilla ko thì hơi ngọt, nhưng ăn chung vs chocolate glaze thì lại cực kì hợp. Mình thì chọn bơm kem ở mặt trên, như vậy khi nhúng vào glaze sẽ đc phủ một lớp kín, nhìn đẹp mắt hơn. Cám ơn Nino rất nhiều :))
