Using a Pressure Cooker/Canner Safely (Including Glass Top Stoves)

I know that it can be a little nervracking to use a pressure cooker/canner for the first time but they are actually quite safe and easy to use. In this video I am going to show you everything you need to know to confidently cook or can in your pressure cooker and do so safely.

    Thank you so so much for this video! I have had my pressure cooker for 1 year which was a Christmas gift I begged for, and never used it because I was afraid and didn't know how. I searched many videos and xouldbt3find anyone with the exacte Presto canner/cooker that I have or when I did they didn't demonstrate well. You did a wonderful job and now I'm comfortable enough to use it. I'm about to give it a shot right now! Kuddos to you!!

    Awesome. I am so glad that my video was helpful. Keep in mind that you may need to replace your seal on yours. You should know right away though if water or steam is spewing from the seal.

I am a new pressure canner person, and the visual and talking about how the weight should rock and how long it will take and how low you actually put your burner to get it to the proper pressure.     THANK YOU!!! I inherited a pressure cooker with the house I bought, and I've been wanting to use it for 3 years. I looked at it, watched other videos, but was still terrified and put it back in the cupboard. I'd even tried it with water only, but when steam started coming out the locking valve, I decided it was too unsafe. Your video showed me that was normal and not to be afraid.     This is better advice than on some of the other videos I've seen on the subject. I don't know a lot about your particular jiggler but you can typically let it wobble/jiggle just once every 30 seconds or so and it'll still maintain pressure appropriately. Either way your advice is better than most who just crank it thinking they need the heat to be as high as possible the whole time. This info used to be on all the old pressure cookers but not sure about that any more since I haven't bought a pressure cooker/canner that's been less than 30 years old.

    thanks for the kind comments. True, once every 30 seconds or so if fine but I do find that it is hard to maintain that level. It seems that when that is happening it is very easy to get it to stop jiggling before you know it.

    Thanks. I am glad you found the video helpful. Honestly, for just cooking dinner, I like my electric pressure cooker for the convenience. (not an instapot but basically the same thing). But for canning, the stove top canner is the way to go.

    This was so thorough, and the obviously translated instructions with the Butterfly cooker I just received made me unsure if I understood. Thanks for making it all very clear. One question - my weighted valve seems not to have removable weights. Is it pretty much fine to only have one weight for everything?

    I am so glad to hear that you found this video helpful. I can't say for sure with your cooker. If you just plan to use it for a cooker it is probably fine but I wouldn't use it as a canner.

    Slightly Rednecked Thanks! I only need it for cooking; after checking various sites for basic info, I found one that said the 5, 10, 15 weight is equivalent to low, medium, high heat (& that most recipes use high). I’ll go with that and a little experimentation.

    You are so precise and easy to follow along with! I decided to get my recently acquired, estate sale pot going while I was watching the video and after heating up, water spilled on to the stove from the lid in quite a few places. Although it looks pretty much brand new, I'm guessing the gasket needs replaced (it might be a non brand replacement that does not fit correctly?). I have an old cooker like your grandmothers with the round regulator. Somehow, there was a reaction between the metal in the pot and the black surface on my BRAND NEW glass top stove and sadly, there are now permanent discoloration marks on the stove top, sniff, sniff. Now, I don't want to attempt it again on a glass top. Any advice since you also use the same? I was so looking forward to fixing the chicken and rice I remember having from a pressure cooker in the 60's. I appreciate you!

    Thank you so much for the kind comments. It does sound like a bad seal. You should be able to find a replacement seal if you know the brand of the pressure cooker (mine is a mirro). I get the same discolored spots on my glass top stove from other pans too. Most of the time I can scrape them with a razor blade and get them off but a few are permanent. I am sorry to hear about your problems and I hope you get them worked out.

    I have an old mirror like the one at the end of your video ~ I noticed a couple of things on my first attempt to can raw chicken ~ I put in the 3 c. of water (actually a little more) and by the end of the process there was no water (Some steam was still coming out before I turned it off), at the stem there was leakage ~ can that bolt be tighten or loosened and cleaned? I was afraid of totally destroying it ~ can it be replaced as like I said, steam was coming out from under the bolt and a tad of chicken juice (as there wasn't really any water left by the time it finished)

    I have one like your Grandmas but i've never used it. It's a mirro-matic 16. I know the presto ones have a locking handle to prevent opening the lid, what does the mirro-matic 16 have? i know to never open it but i was just wondering if it had a safety feature like the prestos

    Good video - thanks. One recommendation. At about the 12:00 point of the video the canner begins to emit steam and you say, "...if you're cooking you're good to go". It's easy to misunderstand what you're saying and it can be interpreted as meaning that you don't need to do anything else, to include adding the pressure weights. We know that's wrong but to clarify you really mean to say, ".....if you're cooking you're now ready to add the appropriate weight(s)". Obviously the weights are required for either canning or cooking but somebody new to a pressure cooker/canner might think "good to go" means you don't have to do anything else. Great video.

    You are such a great teacher. I'm getting in to canning. I live in middle Tennessee. I can't find the weight size I need to use. 5 10 or 15 can u help me?

    Thank you for the kind comments. THe weight depends on what you are canning. Most likely you will use the 10 or 15 pound weights the most. depending on where you are in TN you may be over 1,00 feet above sea level so you may need to adjust pressure for that. I would suggest picking up a Ball Blue Book (Ball Guide to Canning and Preserving) and following the recipes in there. It will tell you what weight you need to use for each recipe It even has a section on weight adjustments for above sea level. I hope that helps.

    Just wanted to say a big thank you for this video! I've waterbath canned a few things (on my glass cooktop) and was recently handed down an old Presto pressure canner/cooker. It looks very similar to the newer one you have but it has both the weighted pressure valve and the dial. The instruction manual is copywritten in 78-79 so I think it's pretty old. Any other tips on using an older one like that? Do you think they could still be safe? The manual suggests replacing the gasket every 2 years so I definitely want to order a new one. Seems a lot of parts are still available for it. Is there anything else you'd recommend replacing? Your tip of pressuring just water as a few test runs is such a good idea, I'll be doing that! Thanks again!

    I am so glad that you found this video helpful. I think replacing the gasket is a great idea and I would definitely do that. Most extension offices will be able to test an old pressure canner to ensure it is still functioning correctly and holding pressure. If not they can probably point you in the right direction to get that done. I don't know what state you are in but in Missouri, they do that for free. That may be something you want to have done just to be sure. If it were me, as long as it isn't leaking or anything like that after replacing the gasket I wouldn't worry about it and just go about using it.

    I bought a pressure cooker new online, and when it turned up the instruction book is entirely in Chinese! ( Rolls eyes! ) Your video is very well presented and has excellent explanations on the parts. It has got me going with my new toy, so thanks very much indeed!

    Very very good video, I have the very same cooker as you and you answered all my questions, I've had this cooker for 10 years and never used it yet been doing the water bath in my other pot but need to process some deer meat.one question though can I use quarts in this canner or only pints?

    Thanks for the video... I've been canning for years and it's always good to refresh your memory before you start again. I do have a question... The last two times I canned, I had a terrible time getting the lid off, even my husband struggled getting it off. Do you have any tips on removing the lid. Note: after the first time, I replaced my ring thinking that was the issue but it wasn't, it did it again.

    That is a fairly common problem. Especially with new All American canners. It is caused by a vacuum being created between the lid and the canner itself. You can usually take a screw driver or claw hammer and use it to pry the lid up until the seal is broken. Don't pry to hard just enough to get the lid to pry upward a little and break the seal. I hope that makes sense. You might try to put some vegetable oil on the gasket as well. This can help to keep it from sticking as bad. I hope that helps.

    @@Slightlyrednecked Thanks! I took my lids to the County extension office to have the gauges checked, all good. I mentioned my problem and she said to scrub off the old oil (my grandmothers would oil around the lid), and then just slightly grease the gasket. It works much better now. I can easily get it on but still struggle to get it off but it's due to my arthritis in my thumbs not the lid! :-) 28 pints of salsa and 7 qts. of tomato juice today! I'm happy!

    Ive had this in my pantry for 3 yrs & never used it because I was intimidated by it. I want to pressure can beans and meat. I lost the instructions! Ugh! Thanks for this video, will try it!

    Cool video! I’ve done a lot of canning (found you looking at meat rabbit videos) have you tried canning rabbit? I was wondering if was to greasy to reliably get the lids to seal and if so how you dealt with it.

    I haven't canned rabbit meat but it should can the same way chicken does. I would think it would work fine as long as you wipe the rim of the jar down like you do anything else.

    It depends. There will still be some steam venting out when the weight is on. if it is a lot of steam it could be because the temperature is a little high and the weight is rocking too fast. If it is just a little steam hear and there and your weight is rocking nice and steady, it is normal and nothing to worry about.

    I am sorry but I am not familiar with that brand. Most pressure cookers work the same way though. The only difference is how they measure the pressure, with a weight that jiggles like what I have or with a gauge that shows actual pressure. Either way though, the work the same way.

    Can u can on a glass top stove with a pot.that the induction is the same height as the pot r does it have to b lower than the rest of the pot for the little space under it

    I didn't understand why you start without the whistler on it, isnt dangerous to put it later ? whats the benefit of doing it this way? great video btw nobody else explained as clear as you

    The cooker needs to expel the air from it in order to get up to pressure and heat. You need to run it with steam coming out of it for 10 minutes before adding the weight in order to do that. I hope that makes sense. And thanks for the kind comments.

    A smaller Presto with the handle that sticks out the side, like a saucepan, was on the kitchen counter at work, last week with a sticky note that said "Take Me," so I did. No instructions. Anonymous donor. Vague memories of my grandmother's kitchen and the sound of the steam rocker persuaded me to bring it home, but then I felt very afraid. Your video was perfect. I really appreciated the advice to start with water, maybe even practice a few times with just water to get to know how the cooker and the stove work together. One question: do you always use the rack? As in, do you put the chicken and potatoes and carrots in on top of the rack? Another question: if a new seal ring or valve are needed, is that something a store will have, do you buy it directly from the manufacturer, or is it easily found online? Thanks for all of the excellent advice and a great video that really shows how it is done.

    I am so glad that you found my video helpful. Keep in mind that what you are describing is a pressure cooker not a canner. It works the same way but should only be used to cook food in and not for canning. You don't need a rack when just cooking though. And as far as the seal, it should be pretty easy to locate one. if you know the make and model of the cooker it should be readily available online. I hope that helps.

    Presto has a manual on line you can download as a PDF. Even though I don't have a Presto, it gives step by step instructions how to use it and recipes.

    Yesterday, I dumped a box of orzo and a can of whole tomatoes with liquid and one jar of asparagus, 1 cup of filtered water in this old pressure cooker--it was delicious. I had no idea you shouldn't do that. The tomatoes went right into the pasta. As soon as it pressured, I put it in the sink and waited then it was done. I think the whole thing took less than 5 minutes. I want to get great at this so I can eat good healthy meals in the summer.

    It doesn't sound like you did anything wrong. All the things you mentioned can be eaten raw so there is no concern with how long you cook them. If you are cooking meat you need to follow a more trusted recipe and cook at the right pressure for the right amount of time though.

    Very good video. I have owned a pressure canner for years but am always afraid to trust the food so don't use it. You really cover everything, I just wish you would have shown the Mirro being used as well because that is the brand I own and I would have liked to see that brand rocking.

    Mirro works much the same way EXCEPT that once you get the pressure regulated, the Mirromatic weight should only jiggle once or twice a minute. That's the primary difference between Presto and Mirro. On Presto, the petcock (weight) must jiggle constantly but gently as Chris demonstrated. On Mirro, it only bobs or jiggles once every 30 to 60 seconds. And on the Mirro, there's no secondary lock, so you you wait for several minutes (ten minutes or so) and carefully test whether the pressure has released by pulling up on the petcock (the weight) ever so slightly. If it hisses at all, replace the petcock immediately and wait a little longer before trying again. Also, if you're canning, it's always best to err on the side of caution and leave the canner locked longer. Just let it sit and cool down. If you rush it, the glass jars could break.

    @@HiddenBlessingsHomestead I use both, but I'd have to say I have a slight preference for the Mirro. I have a big Presto canner and an even bigger Mirro canner, so if I've got an enormous batch to can, then I simply must use the Mirro in order to hold all the jars. My Mirro canner is sometimes referred to as a "double canner" because after loading the jars onto the rack, you can place a second rack on top of those jars and load in a second layer of jars. For smaller jobs, I sometimes go for the Presto, but honestly, I guess I just prefer the way the Mirro operates and it seems a little easier to regulate the temperature. I'm not sure my preference is justified--they both work equally well. Where I do have a strong preference is for the jars, domes, and bands. I have a strong preference for the Ball brand. I've had too many failures with Kerr domes. Sometimes they seal, and sometimes they don't. Most annoying. Of course, if the seal doesn't take, you can just refrigerate or freeze the jar and treat the contents as if they were "fresh," but if I wanted several jars of "fresh" food, I wouldn't have bothered canning it in the first place. Always choose Ball brand. I also happen to have a mixture of wide-mouth jars and standard jars. For canning times and methods, they work the same. The wide-mouth jars are easier to get the food into, but they tend to stand wider and take up more room in my canner, so if I've got a big load, I try to use all standard jars just to fit that one last jar into the canner. Again, most annoying to have that one last jar that won't fit...and I'm not really eager to run another pressure cycle for one jar, so I end up refrigerating or freezing that last pint. When I'm running a double load in my Mirro, if I have a mixture of jar sizes, I put all of one size on the lower level so that the rack is stable for the top layer. And if you ever process a combination of quarts and pints in the same batch, then you must use all times and directions for the quarts. The pints will be slightly overprocessed, but you must never risk the possibility of botulism.

    Hi! I have a vintage lagostina cooker. It does not have a pressure regulator, it has a little tab you flip down to build pressure. It is a unit like yours that goes on the stove. How should I tell how much pressure is in it?

Keep in mind that this is a pressure cooker and not a canner. It can be used to cook but you can't use it for canning food for long term storage. I hope that helps.

    I'm curious about that gauge as well. I have a presto washer type weight like shown but can I use that with my mirro? Do you have a video of the other weight? 3 holes with the 5, 10, 15. But how do I know if it's steady pressure?
