I wholeheartedly agree. However, the next step is educating people on how to use fresh produce. I was just having this conversation recently with someone who is my County nutrition specialist and she explained that you can give so many needy folks free produce, yet the problem is that so few know what to do with it. Sadly, we are generations away from women who taught their daughters and granddaughters how to can and preserve, and even cook for that matter. Our fast food and processed food industries have rendered a large segment of our population to be virtually illiterate when it comes to the preparation of food.

Great video! Congrats to Alicia & Ben for making a difference. As humans have known for over 1000 years, health is wealth and the only source of health is love & nutrition. Idea: To solve the food prep illiteracy, you can simply attach QR stickers to the bunch material where the QR takes members to a KZread video on Quick & Easy prep but delicious seasonal prep and best practices. As people gain more experience, they can add great kitchen tools similar to the innovative farm tools shown in this video. For instance, the instant pot is a game changer for quick & easy food healthy prep, especially in the fall/winter. It truly is healthy homemade fast food!

These can easily be the farms of the future where people who have an interest in farming learn that they do not have to have a lot of money to purchase large tracts of land and expensive tractors and implements. So much more food can be grown locally and the growing seasons can be extended, thereby eliminating the need to truck produce thousands of miles to the consumer. While farm markets, CSA shares, restaurants and local specialty store serve as ideal outlets for such small farms, getting a foothold into the larger grocery store chains will remain a challenge. Kudos to folks like this couple, hopefully the face of agriculture in the 21st century.

I was curious about the regulatory issue(s?) they faced. Why did they settle on Vermont--was she from there? I didn't catch that, if so--and did they consider other states where they might find a less restrictive environment?

I question whether it makes a difference to grow it closer to the city because of the industries and pollution or a little away somewhere in the countryside? Does that make any difference?

I'm sure the difference is not zero but whether the difference is significant enough to outweigh the benefits of bringing the produce closer to the community who will be eating it thus requiring less energy and effort to deliver the produce to the customers while also providing an opportunity for urban community members to find rejuvenation from visiting a beautiful farm in a city. Every situation will differ and personal preference will also help dictate which location is best for your situation.

The development of the greens harvester was funded by Elliott Coleman so Mr. Coleman could have an easier time harvesting. Basically, he paid a smart kid to come up with it. After its development, Elliott Coleman refused to maintain rights to it, leaving the kid free to sell it and benefit all. Every time I see a farmer benefiting from it, I am quietly grateful to Mr. Coleman.
