Understanding The Burr Or Wire Edge

One of the basic fundamentals of knife sharpening is to understand and identifying the Burr or the Wire edge. The Burr or Wire Edge is a result from the process of sharpening your knife. When you achieve the Apex or the perfect V you then begin to fold over the steel...this is the burr or wire edge. When you achieve the burr or wire edge from tip to heel it is time to turn the knife over and sharpen the opposite side; first knocking of the wire edge you created and then create a new wire edge. For me, it is at this point I begin to work each side very evenly so as to not damage the apex I've created. Once the Apex and Burr is created you simply go through your various sharpening stones to refine the scratch pattern. The USB Microscope does a great job displaying the scratch pattern in the knife steel. The knife sharpened here is a Pampered Chef with German Cr Mo V Steel. A cheap knife but it works well in the kitchen and after just a few minutes of sharpening it is honed to a razors edge.
If you do not create the Burr or Wire Edge then all you are accomplishing is polishing the side of your knife and not creating a sharp edge!!!
