Not necessarily, did you see the difference in the quality from good vacuum to higher/bad vacuum levels. That may equate to more a dehydrated product than a FD product. That will affect long-term storage. It will also affect rehydration since it is not airy, it is more leathery. Harvest Right is not fixing the vacuum problem they are masking it.

It seems to me when Freeze Drying at nearly 1500mT the product resembles what you would get from a dehydrator. If you want to Dehydrate those machines are much cheaper to operate and maintain but don't have the storage life and quality. Version 24 is a very expensive Dehydrator. This is my opinion. Version 24 is a software Band-Aid fix for a hardware vacuum leak problem. NOT COOL.

The biggest complaints about freeze drying are the vacuum leaks. This can be frustrating and more than annoying. V24 try's to patch the problem until the real problem is solved. What's not cool is spending $4000 on a freeze drier that doesn't work.

I know from your previous videos that you freeze dry a lot of apples. I couldn't find a specific video where you go over your process. I have tried multiple times. I don't pre-freeze. I peel and slice the apples and pile them on the tray. I usually end up having the dry cycle go an extra 12 hours because of my availability. They come out crisp and delicious. I vacuum seal them into small portions. Then when opening them later I find that they are soft and foam-like. I have had the same thing happen with strawberries. I had 5.4.23 installed when I received my machine. I was getting memory losses, every few batches. It would forget the name, pump type, and forgot machine SN. It would go to a Factory Setup screen. You would have to reenter the SN to get it to go to the start screen. Harvest Right sent me 5.4.24 and it corrected the memory issue. As for pressure with 24, I normally see it start drying in 200 range, then climb to the 500-600 mT range, and end in the 180-150 mT range. Most of the shrinkage I've seen is in nectarines and grapes. Apples (Honey Crisp w cinn), pears, and sliced fresh mushrooms have come out fine.

You are doing good because you have low vacuum, as soon as that goes away that will change. The quality is garbage as he showed with the higher vacuum levels. It also makes me question, will it rehydrate well since it is now more like a dehydrated product instead of a FD product. Harvest Right is just trying to mask the real issue and that is vacuum. The other question that comes to mind is the product going to last long term since it didn't have a good vacuum to truly break the water molecule bonds. Deep vacuum is important for this process

With my version of .24 (yes, there are different versions) I don't get below 500-600 when the drying cycle starts. I know it can achieve lower pressures because they happen on the same batch at the end of the cycle. My thoughts are it's because the heat cycles start once 500 is achieved driving the pressure higher. Are you seeing a beginning 200mTorr in the log files or elsewhere?

This video helps explain version 24. I’m leery about doing any updates because they’re trying to hide something. My two cents ,my opinion is. I paid a premium for the little white plastic Oilless pump. I’ve only been using my freeze dryer for little over two months, it’s been working great. But now I’m losing vacuum I can’t get below 700 Mt. with a vacuum error number 11. Check for leaks can’t find any. But do a vacuum test on the pump. Run it for three hours. It won’t go below 700. And if I install the new version it’ll just prolong me from using my warranty. Whatever that’s worth.

Another excellent point. This is only hiding the real issue. I am not also convinced that the product after this high vacuum dry session is as good as it should be. I question the long term storage. There are many different write ups that state the vacuum needs to be low to achieve a proper freeze dried product. I have posted them and they get deleted, I feel it is because it contradicts the narrative.

I've had my unit almost four years. During the warranty period I never had a problem. In the past year I have replaced my relay board, pressure sensor, drain ball valve, lost a screw out of the door and shorted out a wire. I have run over 400 batches, don't know if this is high or low compared to other users. From a manufacturing standpoint, HR has work to do to improve quality. Their Achilles heel is shipping damage. I've seen their earlier models...they have come a long way and need to go further.

I appreciate your experiment and publishing the results. I have a few thoughts: mTorr, or more accurately Torr, is a unit of pressure. I know of no standard unit for vacuum. In order to prevent confusion with the higher-lower numbers I always think in terms of pressure. Freeze drying requires a very low pressure. Since it is lower than ambient pressure it appears as what we call vacuum. There are many different versions of the rev .24 firmware. Which are you using here? You mention you normally get 150mTorr. What version firmware do you achieve 150mTorr before drying starts. Did you see any significant delay in starting heat or the overall cycle time at the near 1500mTorr pressures? I've heard rumors that there is a 2 hour delay in starting the heat cycles if the pressures are near 1500mTorr. I can't say for sure. For years the accepted working standard for Harvest Right was the 500mTorr level. Others say the optimal pressure for freeze drying is closer to 150 mTorr, which is unobtainable on HR machines as the heating cycle starts at 500 to 600. Only after the recent rash of " Insufficient vacuum" errors did it become necessary to move away from that standard. Your work here proves that it is not without consequences. No one knows if anything else will appear 20 years from now. However, Harvest Right presents it as a cure and an improvement. The reality is that this is another patch used in lieu of repairing the root problem of leaking. Of course this saves Harvest Right MAJOR dollars in support and warranty repair costs. I hope those watching this realize this and get their machines truly fixed either in or out of warranty. Thanks again for your fine presentation.

I'm running 5.1.24 and I've been happy with it. I have done about 7-8 batches. I can get down to 150 mtorr or lower, in about 15 minutes during all cycles. I have the premium pump. There is a programing delay during the freeze cycle. If there is any sublimation during freezing, extra time will be added to freeze the food even more. Sublimation = food giving off vapor from not being a solid. I didn't notice any issues near 1500 mtorr. My buddy, Dr. Ahlborn is doing research on 45 year old FD Mountain House food. The future looks good unless you have carrots. They turn white.

I am assuming based on your comments that as long as sublimination accrues at low temperature (thus the temp and mtorres fluctuation) the program will keep it at a low temp until it needs to go to a higher temp. Until it gets to a higher temperature (say 130 degree F) and see less fluctuation it knows the process is not complete. Does this seem like an accurate assumption?

I got 24 to resolve the candy mode issue, but I've noticed that my drying mTorrs are often much higher than they were previously. Consistently pulling sub 300 whereas before it was usually 500-650. But I have noticed a few times the values have gone to nearly 800, which I didn't remember seeing before, so it seems like the vacuum process has a greater range now, which is good. Two things while I'm thinking of it: 1) I've had a couple of vacuum issues due to the door developing a leak. Rotating the seal fixes this issue, but it has happened several times lately even when the original seal was good. Is that normal? 2) Any way to stop food from "jumping" out of the trays? Seems that every time I do a deep clean my next batch has food that wants to escape - so annoying. School Reports put a damp paper towel over some of his food IIRC, does that make sense to you? Thanks!

Food jumping? Never seen this. Could it go back to water hiding somewhere? Have you tried turning the heaters on for a while to help dry out? I would pull the door gasket apart and see if the square bottom of the inner seam has cracks inside. I haven't had a leak in my door gasket. HR has a video to align the door and gasket.

It might be from air pockets in the food when they burst. Also, some foods get the bends from nitrogen bonding to lipids and releasing after a 2:1 pressure gradient is reached. It's the same as fat divers getting DCS easier than skinny divers. Any foods that like to spatter should be covered with paper towel. Black and raspberries should be covered as well as meats.

I saw a video where this guy covered his tray holder with aluminum foil. I have done this and I believe it has helped shorten the vacuum time and keeps everything contained. The heat stays on the trays and off the wall of the chamber.

Good question. I'm wondering if the "sunken in" look is from pressure fluctuations. I recently ran marshmellows on candy mode and because they weren't frozen they immediately imploded and clouded up the oil. Kinda looks like the same thing here, but I'm guessing the slow leak means minimal impact on the oil and food quality other than aesthetics. My 2 cents.

Unknown about any issues with nutritional value, but my guess is there is little loss since heat is a major factor. I plan on running another load on Normal Mode with lower heat to see if the shrinking issue stops.

Phil, nice video. But for me, I’m not sure I agree with HR on this approach in 24! First, I would prefer a way to “tailor” this, so that you can decide how it works. For example, I would rather get the message of a vacuum leak then have it do what it’s doing (especially looking at the poor quality afterward - that you showed at the end of your video). And my small freeze dryer can go all the way down to just over 300 mt! Now does this new version mean that is going to be the new standard? Will that cause my freeze dryer to run even longer? I think they should have made this an option via a switch setting in the configs. They should be following the 80-20 rule! If my freeze dryer is working fine (like probably the majority of HR freeze dryers out there), why mess with/fix something that is not broken. I have a feeling this new version will adversely affect my small freeze dryer. Just my thoughts. Thanks.

I'm running 24 right now. It's filled with rump roast. I just check it and it's at 125 mtorr and 3/4 across the green dry cycle scale. If HR is correct the program will still seek the lowest possible vacuum and build the timing and cycles around it. For those who may have a mid-batch vacuum error or a worn pump, it will accommodate those problems. My testing 24 will continue. The next test is using standard mode instead of fast mode.

@@Philat4800feet - Hi Phil… Sure, I understand. I just wish they would give you the option to turn these new features on (in the Custom menu) rather than just put them out there. I’m an application developer, and it’s always good to control new features by switch settings (instead of just turning them on for everyone). Again, I’d like to know via message if my pump pressure is going bad (rather than just have the software ignore it with a work around). Thanks!
