    You should check out "Cooking with Jack" he seemed very personable and like a nice guy, but there are definitely mistakes in his videos only cooks/chefs would catch. Aside from occasional cross contamination I mean more so technical mistakes me makes. RIP Uncle Jack but I still watch his videos to catch mistakes ngl.

    Btw if you end up prediabetic again one thing that's commonplace for remedying that is Cinnamon consumption. Helps correct your insulin de-sensitivity which is the true cause of Type 2 diabetes. Body becoming so stupid it can't register Insulin amounts correctly. Also nourishing your pancreas, which is where your insulin comes from. If that fries then you end up stuck with type 2 for life. Which could lead to you developing type 1. @Chef Brian Tsao.

    I don’t really want to be *that* guy but IMHO Uncle Roger has been really overdoing the dirty jokes recently. The vibe in the video is just too awkward, the chef clearly doesn’t want to keep it up. Esther Choi didn’t seem too comfortable with the dirty jokes either

    As a half Indian it is more about the feeling in the making of Indian food, I use a 50/50 white and brown sugar mix as the sweetness comes from the white sugar and the more rich caramel flavor comes from the brown.

    Just use white sugar and add molasses to control the flavour (brown sugar is just white sugar with molasses added back in).

    As an Indian, this butter chicken is definitely better than Jamie Oliver's butter chicken. However, there are a couple of flaws. Chef Sid is right, there was no need of MSG. However, it's Uncle Roger cooking video, so it is actually okay. Secondly, this butter chicken is too damn spicy, since Uncle Roger added too much chilli powder and chill. Butter Chicken is supposed to have balanced flavour, but this is on the spicier side. But still, it's a good butter chicken.

    Nigel is Malaysian and is used to super spicy food, so it figures he would feel the need to be heavy handed with the chilly. Although there's a lot of quite spicy Indian dishes, this is not one of them.

    Idk man, I've seen people put that amount of chilly powder to the chicken and as a reminder not all chilli powders are spicy. Some are of low quality and are very less spicy

    My father would use canned tomatoes all the time over fresh unless they were in house and mom forgot they existed lol. But the interesting part was how he would use them. There's was a restaurant owner in town who came over for lunch and dad used canned tomatoes in the dish he cooked. The restaurant owner was a known for his cooking everywhere (sadly he passed not long after this event with dad). The owner, he was also the cook, literally got into an argument with dad over the tomatoes cause he thought dad used fresh off the vine tomatoes when it was canned the time. It was that fresh to the owner. Dad had a way with food that in some ways back in the 90s was weird but interesting. He knew how to make things seem fresh when it was canned or something different altogether. And it was good. I miss my dad and his cooking. Too bad my brother and me didn't get his skills as a cook.

    As a Bengali watching this right now, Chef Brian Tsao, this butter chicken was really good. As a Bengali and enjoyer of Indian foods, I implore you to look at some Palak Paneer, or Spinach and Paneer, a type of cottage cheese that is popular here and in India, but most definitely, please do take the time to make some Indian/Bengali foods, for yourself or on YT, it would be nice to see.

    5:55 so there's only one indian cuisine restaurant here where I'm at in the Midwest, I have debated whether or not I should try and stagiere there, the last time I ate there I was the only person in the restaurant and it still took 20 minutes to get my food, WORTH IT! It was extraordinary, and it's now in my top 3 favorite cuisines, right there with Mexican food and Chinese food. I could go on for several paragraphs just on this comment alone but I still got 14 minutes if video to watch.

    There are so many varieties of butter chicken. The ones we have here in India is very similar to what chef Ranveer showed. Most places here use shredded Tandoori chicken or chicken tikka. Btw the entire Butter chicken experiance is incomplete without some Garlic Naan , you wont get that feeling with rice.

    I don't know why people hate canned tomatoes, but the canned stuff can be super high quality. Especially in winter, you can only get the greenhouse stuff. Especially here in Germany, we don't have the best tomatoes. And the fresh stuff we get is harvested while it's green. Canned tomatoes--especially from Italy--are amazing.

    For someone who made Butter Chicken myself for the 1st time by Ranveer's recipe I was pleased it was delicious. I don't have knowledge in Indian cuisine but it looks fantastic, well done to Uncle Roger and the hosting Chef who tolerated him with his MSG obsession. I am guessing that the base is always the same but different recipes comes from different regions. Just like the Romanian flag Soup called Chorba, in every district there is a local version and sometimes more versions within it never ends but it's always tasty in my opinion. About your guest I am guessing one of them will be Bobby Flay himself that would be great. Few more options: Uncle Roger, Joshua Weissman, Nick Digiovanni and Vincenzo.

    I've mentioned it before but indian and Nepalese are my favourite cuisines, absolutely love dishes with lots of spiced gravy that you can scoop up with rice and/or a naan. This butter chicken looks really good, but i haven't had enough butter chicken to judge if it's really accurate. I'd eat it and ask for seconds though

    I had a roommate and she hated the smell of garlic and welllll as a Cuban literally everything I ever cooked had an absurd amount of garlic 😅 but when she told me I was like what do you mean ??? Garlic is superior seasoning

    Not an Indian from India, but an Indo-Trinidadian. It was a huge culture shock when I found out that curries from India have cream in it. Our curry is made without them. Wonderful video as always.

    It’s more so the restaurant versions which have cream and butter loaded onto them. Indian home cooked food is much simpler, the gravy/curry bits are more watery and much lighter more suited to daily consumption. Restaurant versions are better suited to a ‘once in a while’ or a ‘treat yourself’ type of situation.

    @@123trixxx4 yaar I’m Sikh punjabi and trust me when I tell you it’s all about the ghee and butter primarily as sources of fat that too in very dry states of haryana punjab(overall north region). That’s how the cuisine developed. I live in Bengal so inspite of being North Indian we consume far less ghee and butter in comparison😅

    I think uncle Roger and Chef Sid did a fine job here. On visual presentation, it looks delicious! Tre spices sound right and I think it sounds about as reasonably close to authentic as you can get in a restaurant environment having to get it out in such large quantities.

    That looks really good. I'm not personally a fan of butter chicken- it's generally made too sweet for my tastes- but I can still tell this was done well. Also, totally agree about the garlic. You can never have too much garlic.

    I was gonna say it but the Chef mentioned it too, alot of tomatoes in the uk are amde in green houses and that makes them a bit more sour than ones that are not. It is cool that you want to learn more about Indian food. a True Chef.

    there are a few slight variations with some of the spices in some butter chicken recipes, also when you mix your own spice blends always much better in my opinion.

    I’ll be honest, this video is why I mostly watch Uncle Roger videos through reactors 😅 the humour can be a little too cringe 😬 But still, it’s nice that Nigel is reaching out to actual professionals. The professionals make dishes the authentic way and then Uncle Roger adds his own twists. And because it’s Uncle Roger making those twists, like adding MSG or being adamant about using chicken thigh, the audience subconsciously knows that this is just Uncle Roger doing it according to his tastes.

    I really like the use of Mustard oil here, its always a given when it comes to frying fish here. The oil has this amazing burst of flavor and a good ZING. Also, kind of warms you up.

    @@ChefBrianTsao few reasons, lasts longer, better quality control, easier and cheaper. No chance I'm preparing a few hundred say tomatoes for pasta sauce for X amount of people. Especially when I suddenly need to make some more because we've either ran out or something has happened.

    Please do more on Indian cuisine, I would like to see your journey of learning. Btw, there is not one specific recipe, there are few essential ingredients for an Indian dish, but quantities and additional ingredients are optional and passed down by tradition, so its different in every household.

    13:23 onion, garlic and ginger are 3 foods which you either LOVE or you get overwhelmed by especially when people go overboard. like i cannot stand onion unless it is well cooked down, garlic i can tolerate a fair bit more but still prefer it used in moderation . Ginger on the other hand I can take WAY more then others like i can gnaw on a stem.

    Exactly, it's just tomatoes. I'll use fresh tomatoes any day but sometimes they are just too expensive or seasonal taste changes, but canned are consistent and cheap all year round

    Thankfully in our country(India), every fruit and vegetable is so cheap and grows in such abundance that I haven't even seen a canned food product in my life. No canned meat, fish, fruits or vegetables in stores.

    @@aerinnmay7082 Yeah, canned tomatoes are generally riper than "fresh" tomatoes unless you have your own tomato plants and can pick them when they are perfectly ripe. Canned tomatoes are also picked when they are ripest (and processed at or near the farm), but "fresh" tomatoes are picked slightly underripe so that they can make it through processing and shipping and still last in warehouses or grocery stores.

    Funny thing 😄 is tomato 🍅 is winter vegetable here in India, i mean you can get whole year but that's not a taste 😒 it's not that good what you get than winter, also whole year it's expensive but in winter it's so affordable.

    Most of the tomatoes in Scandinavia is either Italian polpa in cans or grow-house tomatoes from the Netherlands or Spain, wich usually isn't that good.

    At my place I use jaggary . I like the taste when I use unrefined jaggery . I never use canned tomatoes I use 2 types of tomato but both are fresh hybrid and if lucky from my uncle farm home grown. 😍

    Store bought tomatoes pretty much suck except for a couple months in the late summer when they get fresh local ones. The rest of the year canned tomatoes are probably fresher.

    Gymkhana is one of the most renowned indian restaurants in London so fully expect that to taste solid. Similar basics to Chef Brar but key difference was using green chili over red chilli powder. Quite unusual for this dish.

    I think it'd be cool if you reacted to a video called "Salt Pork and Beef Pie" or "The Most Important Job in the World" from a channel called Townsends. It's more informative and gives insight to some ye old recipes and ways of life from back in the day (1700's-1800's) so I think it'd be at least somewhat interesting to say the least to get a modern chefs take on said topics.

    I usually go with a vindaloo or something else spicy if I'm ordering Indian food, but if I just want something comforting, a good butter chicken slaps. I never make it at home, though. I just feel like there's no way I'm gonna make it as good as the restaurant I like to go to. I'm gonna try, though. I feel like there are some good tips here. Also, if you were to tell me you had a magical bag of white powder that makes everything better, I would not expect you to pull out a bag of MSG.

    I don't know why people are so against canned tomatoes... a lot of professional chefs vouch for them - especially since many raw tomatoes found in grocery stores are actually unripe tomatoes forced to be red with ethylene gas (don't worry, it's just a naturally occurring gas to help the tomatoes turn redder faster). Canned tomatoes are canned when ripe, so the flavours are often better (of course some brands are better quality). For the most part, unless you're growing, and picking the tomatoes off the vine yourselves... well canned is actually a pretty good option.

    Local fresh is the best you can get but even then caned is better for some dishes. I am more likely to get canned or frozen veggies/fruits than "fresh" at a grocery store. With the way grocery stores operate you will usually get an actually fresher product with canned or frozen. The general ignorance of where food comes from is why I think cities should get half of the votes of rural areas. Everyone should do at least a week's worth of labor on a farm. #1 killer of small farms is the estate tax

    i get jealous of a lot of these dishes. Due to medical reasons I unfortunately can not eat stuff like butter chicken and a lot of indian dishes. I can not tolerate spice well at all which i hate. i LOVE cooking spicy foods for my family that loves it. I def have to cook with feeling because i cant taste along the way. Butter chicken and thai green curry are 2 of my favorite things to make for my family. ill enjoy the dishes through their happiness. I think he did a really good job. Praise to the chef that kept his composure with uncle roger lol

    You know for a stand up comedian Nigel/Uncle Roger seems to be a fairly decent cook. He seems like he reads the recipes and actually takes time to learn how to make the dishes he does cook properly. Which is more than i can say for 90% of the Chefs Uncle Roger reviews. Great video Chef Brian.

    In the Netherlands the tomatoes barely have any flavor ... well I mean they taste like water. so when I make butter chicken i use canned tomatoes.

    I love garlic! And for a while I used to think I couldn't eat it bc of my reflux. But when I decided to try ONLY fresh garlic instead of the minced in jar garlic, I found I could actually have garlic. Can you say, "HAPPYYYYYY"!!! Whatever they put in the minced or jarred garlic for whatever reason did not agree with my stomach.

    UK tomatoes are rather large and lack flavour. Vine tomatoes from Spain taste way better, no mater the time of year

    "If butter chicken kills you, you deserve to die" Well said 😅. Authentic Butter chicken is so good , it feels like heaven. The meat is so tender , the sauce is so thick yet tasty 😋.     Msg makes butter chicken taste different. It works well in many other dishes. But it’s not very ideal for butter chicken.

    See indian dishes are quite spicy " There is spicy means full of spices yes we used chillies in more amount then others " But other side we also serve another thing like Rayta (a salty yogurt drink), mango lassi, coconut water drinks to cool it down which makes food complete. Make shure serve something with spicy food which cool down the effect of chillies....
