On mango chutney. Greetas is head and shoulders above other variants. It's all about the added whole spces. THey even do vairants now from chilli versions, to lime pickle to a tamarind version. Add the later to joghurt for a raita.

The problem with Jamie is not necessarily what he cooks, different people different tastes and everything, but what he names stuff. He could call it a quick Indian inspired chicken dish and nobody would bat an eyelash but when he calls it butter chicken he sets some expectations... and then he happily proceeds and ignores them all, ending up with something completely different.

To be fair to Jamie, his cooking style is not an authentic one, but rather,he tries to encourage people to get in the kitchen and experiment with different food so they can avoid having takeaways, which can be expensive and unhealthy.

Not sure which one is worst whether it be the Red or Green Curry. I get Jamie kinda dumbed things for a western audience that might not be able to handle spice. I don't really like spicy food myself but it at least needs to be in the ballpark of what your saying it is. Can't call it Red Curry if it's not red and can't call it green curry if it's not even green

Not an Indian but I am eating Indian food for more than 30 years here. Most Indian food get it flavor from harmonizing a lots of spices and ingredients. If the taste was dominates by single ingredient then it become a totally different thing. Not just anyone can improvise Indian food and I believe Chili JamIe Olive Oil is definitely not 1 of them. If anyone here want to try Indian food, just go to nearest authentic Indian restaurant. Great video and I believe that chicken breast is flat, hard and tasteless as Auntie Helen's 😁

I'd even be interested in seeing if there was a way to make this particular version be a better balanced dish. I understand why some of the choices were made for it, even if I violently disagree with them. But the same dish, but reducing the cashew butter, marinating the chicken properly... perhaps using thighs instead of breasts, small and easy changes to make it tastier, but still accessible. And please, for the love of food... thicken up the sauce properly!)

Cashew butter does not belong in indian food, but cashews are a nice garnish for indian food. The only time I've used cashew butter for cooking is to make creamy pastas without dairy and I keep the ingredients/flavours very simple. Chickpeas are definitely popular in India, just not chickpea rice. The large chickpeas are the kabul variety more used in the middle east and mediterrainain, while the desi chickpea is smaller and is split to make channa dal. Fantastic video James, thank you for taking one for the team.

I use cashews in my chicken korma. I basically make a paste with onions and cashews to make the korma gravy, so I guess I could understand using cashew butter as a kind of shortcut 🤷‍♀️. But I've also seen where someone with dairy sensitivity used blended cashews to thicken butter chicken. I think Jamie Oliver is trying to thicken the butter chicken gravy without using the traditional ingredients that would do that, namely butter and some cream. I'm not sure why, except he seems very worried about using high fat ingredients.

Indian home cook here. I've seen Jamie's original video, Uncle Roger's reaction, your reaction and now this. Even though what he made is by far not even close to what traditional butter chicken is like, this recipe in itself wouldn't taste absolutely rubbish. Yes, it's gonna be sweet and creamy because of the Peanuts, Chutney, absence of chilies and Yoghurt/Curd, but one can easily balance it by adding some more chilies and some whole spices. While it's true this isn't something that is expected of a professional chef replicating an Indian dish, the dish in itself, wouldn't taste rubbish.

if you replace the butter with "I Can't Believe It's Not Butter!" margarine, then this would be margarine chicken, miles better than whatever concoction that Jamie has made here. On a side note, a little tomato salsa type thing we do here. Char tomatoes on griddle/flame, then break/smash them on said griddle and throw in some salt, chilly flakes/chopped green chillies and medium sliced onions. Garnish with coriander/mint leaves and enjoy with rice and any kind of nice curry!

If it's 10 minutes...the food's gonna be crap and I want you out of my house... lol One and a half of THOSE little chilis is not a lot! One and a half of what I grow...you'll sweat for a day and a half! The mango chutney gives me an idea! I'm making a Thai 'Blue'rapa hot sauce (Thai Burapa/Blueberry)... Tomato and pepper skins always make it through the digestive system. They often are a cause of gastric distress/ Charring, blanching or using a peeler can work depending on the level of cooking required for the veg (soft / crisp) - latter for salsas, nacho platters, etc for texture and vibrance

  • @erinlikesacornishpasty4703

Butter chicken is one of my favorite back pocket recipes. I make a kind of pilau rice and some garlic naan too. I've always used tomato puree, and I've used regular cream or coconut milk depending on what I have. My family can't eat spicy food, but I really upped my game by using kashmiri chili powder and kasoori methi. I usually use both ghee AND at least a stick of regular butter. I have used chicken breast, but you have to marinate it for at least 6 hours. When I use thighs a 20 minute marinade is fine, when I've done thighs overnight and they get wierd and mushy. It's absolutely not difficult to get the specialty ingredients in the UK and it's not difficult now with ordering from Amazon in lots of other places. I get my specialty spices from Walmart, so Jamie Oliver's premise that us backwoods folk can't find ingredients is just WRONG. When the "people of Walmart" can get the ingredients to make a proper butter chicken, ANYONE can 😎👌.

Given that his children were featured in the video and that the overall palate of the dish leans toward sweet, I wonder if this version was to make it easier for children to eat especially considering how he changed school lunches way back when and this is just my theory especially after I watched clips of him kinda “lifting the veil on processed foods” to school children which is kinda funny because there is a particular clip of him showing kids bones and marrow and saying these things are in hot dogs but then when in gourmet cooking, he’s like these are the best bits. The way it came across was very food shaming

I don't think so, the chicken is the only part of this dish that has seasoning but he only marinated them for 10 minutes, that won't add much flavour, the curry: lacks seasonings, not enough tomatoes, not enough chilies, too much water, 2 teaspoons of mango chutney can't save that, not by a long shot.

I can't imagine water with a few tomatoes, some mango chutney and a ton of cashew butter with no other seasoning tastes good. Adding some bland chicken that didn't marinate won't exactly make that better. It also is so far from actually being butter chicken that I'd say it's rude to other peoples culture and cuisine to call it that. If I saw him take a crack at my cultures food and do something similar, I'd honestly be offended.

I’ve been watching a lot of James Makinson’s videos and really respect his point of view (I’ll be trying to make his Gambas Al AJillo at the weekend). But one thing I’ve noticed about James is his evolution. At the beginning of his KZread career, you can see he was very stand offish and didn’t engage in the roasting and dirty jokes. But over time he got more and more involved the “finer” aspects of YouTubing (shall we say?) to now where he’ll voice his opinion on other cooks’ food and even indulge in a little roasting of his own! Sheer class, James! Thanks for the videos and keep going. 😀

James, is it alright if I call you James? James, I was a complete noob when it came to cooking a few years ago. Now I would say I am at rank 5 out of 10, with 10 being a michellin star chef and 0 being incapable of cooking. I walked all those ranks, from being unable to cook to being capable to enjoying cooking. I have mastered recipes from China, Japan, India, Spain, Mexico, Italia, Ukraine, France ... I started to challenge myself, to do more complex things because I enjoyed the challenge. I can also bake cake and stuff now too! Long story short, Jamie tries to make something easier that shouldn't be easier... the challenge should be enticing, something you can overcome and then literally enjoy the fruit of your labor - IMHO.

When I was losing weight for a wrestling match, I did eat 2 chickenbreast filees a day, but I took them from freezer, into boiling water for 45min and then ate right from the water hehe(sacrilege for a chef?) Got boring after a few days, but made me drop 15 kilo in a week
