    Wang Gang's technique is out of this world, from the basics to the complex. I love cooking, -almost- everyone I've cooked for loves my food, but watching his videos shows me how much I still have to learn. Great video as always, kudos to Adam for very stoically enduring Uncle Roger's roasting. 😂

    Fried rice is not difficult to cook, but not easy to cook correctly, and there's a huge difference in taste and texture. I think it's proper that Uncle Roger is focusing so much of his content on fried rice. It's basically like a barometer for skill on the Asian chef. Having said that, without actually tasting the rice and merely seeing the video and presentation, it's impossible to actually know how good it is.

    I'm an African woman in Africa and will forever be grateful to Uncle Roger for his content. A year ago I came across him and took his critiques very seriously. I went online to purchase authentic Asian ingredients because we can't get them easily in my country. And then through this I found Adam Liaw I have now cooked authentic Chinese and Japanese foods for my family, something we would never have experienced without traveling to those countries. And because of the cost and effort of getting these ingredients we went all out. One month of Chinese cooking, one month of Japanese cooking. My Thai ingredients arrive soon, we can't wait to "travel" to Thailand. Thank you Uncle Roger! From a mum of 7 in Africa (I can't watch your videos with my kids though, the language! Haiyaaa! 🤭🤣) Edited to add: Wow, thank you for all the kind comments.🥰 I was not expecting this at all. We have successfully done our month in Thailand and it was superb! Prawn Tom Yum Soup was my favourite (making the Nam Prik Pao was challenging, but totally worth it) The kids loved Thai Green Curry (yes I made the curry paste 😅😅, uncle Roger will be pleased....a lot of pounding involved🤭) and Thai Spring Rolls with Sriracha. And my hubby's favourite was chicken Pad Thai. Wish I could post pictures here....thank you all again for the kind comments and encouragement. Edit#2: Several people are asking why I don't just buy from Chinese shops in the country, as I mentioned above, it is difficult to access from where I live, we live hours away from the capital city. I have tried to ask for sources from the respective embassies too, but they have sent me to supermarkets where most items are in bottles. With a mobile phone and internet it is actually easier and sometimes cheaper to shop online, we have good shipping and delivery services now, strange but true. Lastly, I never thought to mention that we do not eat gluten (we have coelic in my family), so I have to make everything from scratch using cassava flour and other gluten free flours....that is how I started to research properly....I even make gluten free dumplings. There is a great video on KZread if anyone is interested I can share.

    Thank you very much, Uncle Roger, for saving the video of Wang Gang making egg fried rice. Some Red fans believe that Wang Gang's video of making egg fried rice is meant to mock Mao Zedong's son, who was allegedly bombed to death by U.S. Air Force in Korean War while he was making egg fried rice. This led to intense online bullying, causing Wang Gang to promise not to make fried rice again in the future.

    He's known for showing real professional way of cooking as opposed to chef dumbing it down to the public and making "quick and easy" meals. You can tell even Uncle Roger doesn't mess with him, as this chef is extremely highly regarded in China, for the good reasons. 😊

    This isn't a difficult dish to make. Finding those ingredients would be harder. I've also spent 20 years working in restaurants, and 8 of those working in Thai restaurants and working with woks alot.

    Adam Liaw is a true masterchef. Clearly a very, very, intelligent man - who completed University at 21 with a double degree in Law and Science. Its awesome that he has been able to apply that intelligence into something he loves with cooking, which absolutely shines through with all of his knowledge in the culinary arts. His calm personality is awesome... I would love to see him in something like Hells Kitchen with Uncle Gordon yelling at him!

    Since I am from Hong Kong and have an account in bili bili aka China KZread, so let me explain what happened to Chief Wong. But first, we need to know what happened in 10/24, it’s Mao Zedong’s son birthday, and he was killed on 11/27 by bombs because he was cooking egg fried rice and those bombers saw the smoke(might be fake).And now, let’s back to Chief Wong. On 2018 10/20, he uploaded a video about egg fried rice, and on 10/24, People’s Daily retweet that video, and Chief Wong said that he was famous in the social media later that day. But those dumbs thought that Chief Wong posted the video on 10/24 not 10/20. 2 years later, in 2020, Chief Wong posted a video about YangZhou fried rice on 11/24. But then, he deleted it because someone was angry about it. Actually, he prepared this video for 3 months already, and he already posted 2 videos that time.(from September) And just now, he posted a video about egg fried rice on 11/27 so quite a lot of people are angry about that. I have to say, sometimes those people’s imagination is good… Oh, and actually, Chief Wong posted 2 videos about different types of fried rice in 2019 November and 2021 November. This is all about the reason why some of the Chinese are angry about him. Just dumb as shxt, right?

    Just a thought for next wijio: Get Uncle Wang and Steven He watch you cook the same thing on your show as Wang holds up a bamboo stick as Steven (and/or his dad) translates throughout your cooking process.     For the choice of ham, actually the ham from Rugao is more salty and more greasy and normally used as an ingredient for a broth. However the ham from Xuanwei, which is Chef Wang's choice in his tutorial, is less salty and less greasy and slightly softer so it's a better choice for wok dishes. Plus Chef Wang had visited Yangzhou and learned this recipe from the Yangzhou Cuisine Association before he made this video. And the recipe is a modernized version of a few ancient recipes and is now THE official recipe for all the restaurants in Yangzhou, that is said,if the chef of a random restaurant doesn't follow this recipe, the the fried rice served in this restaurant can't not be labelled as Yangzhou fried rice. For anyone who is interested in preparing Yangzhou fried rice at home, you can remove the sea cucumber which might be expensive for some and replace it with some small pieces of squid and replace the Xuanwei ham, which is hard to find outside of China, with French lardon. Don't try to use any Spanish or Italian ham to replace it, they're delicious but not for this recipe. The only problem is, you MUST prepare the egg shred as shown in the video 🤣🤣🤣 to make it Yangzhou fried rice. Good luck!!

    the trick about frying green onion at the beginning is that you TAKE IT OUT after the flavor goes into the oil. you dont leave the brown residue cooking with everything else because you are going to end up with bitter pieces at the end.

    It is crazy to think that the modern low end version of Yangzhou fried rice is probably the most common fried rice in the world, common in every Chinese takeaway - ham, egg, spring onions, peas. But it's so easy to forget that the original high end Yangzhou fried rice is incredibly fancy - sea cucumber, shitake mushrooms, dried scallops, bamboo shoots and cured ham specifically from a few regions in China. I've only had the high end version a few times and it's like a completely different dish, the umami and textures are wild.

    Adam Liaw is future Australian food royalty. The only thing separating him from someone like Maggie Beer is time. Give it time, he will be a national treasure. That's my prediction. His staggering knowledge, mixed with his warmth, humour and humility are second to none. I'm no fan of Master Chef, but he has transended all that to well and truly prove himself.

    The Kuan oil “broad oil” is a pre seasoned oil, where the green onion, cilantro, young garlic and other spices are fried and added to the aroma of the oil…so when Adam mentioned he adds green onion twice, Chef Wang already did….gotta say Chinese cuisine’s depth is really on another level.

    Uncle Wang used multi-yolk egg floss and sea-land-mountain umami source for a Yangzhou fried rice is just an overkill, and I love it! Also, using bamboo shoots as replacement for carrots' crunchy texture is also a good idea.

    Depends on how you're looking at it. Chef Wang video was never meant to teach the lay person how to cook those dishes because come on lets face it none of us have a jet engine inside our kitchen? It's more of to show case how those dishes are cooked so we can appreciate it more. This intentions determine the style of the video and ingredients used and such. Though Jamie is like a butt of a joke in this channel but those substitute his is using is because that's what he though is easily available in most British household and the flavor acceptable by them if they every decided to make the dish. I don't think there's any controversy on that jet engine contributing to overall taste of food, but I'm getting quite a few people educating me on it don't matter and they can cook just as well but later all acknowledge there's taste different. What's with all those same same but different argument?

He left home when he was 15 and he became a chef by chance. He find it hard to find information on how to cook, so he decided to make these videos for educational purposes.

The person who would benefit from those video won't have a jet engine in their kitchen and those setup aren't cheap so his audience are unlikely to buy the whole setup and follow through. Those who own the equipment knows how to cook and honestly won't benefit for his video. The problem with most restaurants chef isn't with skill or recipe but cost. Take the premium fried rice in the video for example, with all the ingredients that go into it and how the eggs is being done how much will it retail for and honestly how many of us can afford it on a day to day basis?

After doing so ingredient list would have change, and you'll continue to make adjustment because you'll add or remove ingredients based on what goes well and what doesn't. That's how complex the whole process is and it take lots of skill and knowledge to do so. If not you'll be like using method to cook A5 waygu without that A5 waygu, the end product won't be good. BTW this issue is why many experience professional chef have failed to convert non-halal food to halal ones (might taste good to my Muslim friends but for people like myself who have tasted the original, it's no where near as good). All in all I'm only going to say It's near impossible for a kitchen rookie to identify a few truly essential steps and make miracles.

    For me, I usually fried the white part of the spring onions and after making the fried rice, I add the green part of the spring onions last. That way you can have some smell from the fried spring onions while also having the texture of the spring onions. Don’t need to fried all, just the white part cuz the white part is a little bit heavy to taste for some people, so fried them can make those people still can “taste” the smell instead (I think)

    I'm asian, sometimes i do this as well. Sometimes you just get young spring onions with harder white part that can be unpleasantly strong if raw. Western pople make a huge fuss about authenticity. But back here at home we actually just use whatever available lol. Sometimes you have the ingredients in the fridge, sometimes you replace it with something else.
