    2 cups of water for 1 cup of rice.... And the rice wasn't washed.... No wonder why it almost turned into porridge. Also how on earth does 1 cup feed 4 people, are they birds!!! 2 cups feed 3 in my house and sometimes that's not enough, even living alone I've never made only 1 cup.

    My Thai neighbour taught me to place your (arched) hand almost flat on top of the washed rice and pour enough water to just cover to your knuckle - Heavy lid/towel and turn off the heat when you can't hear the water boiling anymore. Best technique I've had for fluffy rice!

    I am Thai and totally agree with Uncle Roger. Its not wrong to cook an authentic menu with adaptation to your style and taste but at least do not confused others who never experience the dish with that title "Thai green curry" please, as its not even closed.

    Agree, at least remove the name of our country from that soup. I refuse to call that thing curry. Call it Jamie Oliver's mushroom green soup .... or Jamie Oliver's coconut milk mangetout soup. Just don't call it authentic, or Thai, or curry.

    I just bought a frozen Amy’s Kitchen vegan Thai Green Curry meal a few days ago. I don’t eat meat or fish and am allergic to egg and dairy, so let’s not start a fight about it being vegan. I also don’t cook, so no argument about frozen package. I know what Thai means but I have no idea what green curry is or Thai cuisine in general, being of Irish extraction with no knowledge of Irish cuisine either (although my mother gave us green water on St. Patrick’s Day) So it will be an adventure. Probably a completely inauthentic adventure, but hopefully tasty enough. Perhaps the phrase “Thai green curry-like” would work, or “homage to Thai green curry” or “vaguely resembling Thai green curry” or “based on a comment by a German about Thai green curry.”

    Prepackaged food are usually quite good here in Asia. If you serve them in restaurants with nice plating most customers would not notice. I wouldn't trust a Western brand to make proper Asian prepackaged food though.

    I’ve got one of those Thai green curry kits by blue dragon, the instructions on the packet are exactly the same as Jamie’s. Mr Olive Oil is just doing an off the shelf kit with extra steps.

    No Englishman would put mushrooms in any kind of curry, let alone use Basmati in a Thai dish. Jamie is what we would call "a knob". Mind you, I use minced beef in my Bolognese and fully expect to be disembowelled by Italians :D

    Thai here, I remember about 4 years ago I was eating dinner with my grandparents while we were watching TV. Then, Jamie Oliver's show came up. He show how to cook an asian dish( I forgot what it is) and my grandparents were so annoyed and angry that I had to turned the TV off LOL.     Thai green curry paste has a minumum of 15 ingredients and I've never managed to get it close to tasting like my local Thai restaurant - They said you can get the best crab paste from Thai markets (hard to find a store ready jar brand).

    I will say, I use a rice cooker now but I was raised making rice in a big pot. But medium heat is wrong. First clean that rice!! And then after adding water and salt put it on high till it boils than lower to low put the lid on cook for 15 minutes , perfect rice! I’m Puerto Rican if anyones wondering lol

I probably should have known how bad it would be as soon as he threw 1 cup of unwashed rice into a pot with two cups of water... the correct ratio is 1:1, and even most white people know that you have to wash rice. I'm 99% sure that the rice packaging also tells you explicitly to wash it... guess Jamie reads as well as he cooks.

    As a Thai person, I'm in literal pain. I can excuse the small amount of green chilies because we all have different spice tolerance levels but the mushroom and the peas are just oof... Also if you want the green color without the spiciness just use less chilis and more basil. Pound them real fine, too, don't leave them chunky like Jamie's curry paste there.

    In my mum's recipe, we put at least 8-10 chillis no matter what's the colour. And crush all salt white pepper galangal chilli and a little shrimp paste together then season with sugar (brown sugar or traditional jaggery) She will cook a fatty coconut milk with all paste until it's going hot. Put some beef or pork + some a little hot water. Cook it for a while until a meat is done. Then season with fish sauce and serve. I miss my mum so bad now.

    Pretty much no accent and deeper voice when he says in the outtakes "Oh, this video is gonna be painful." (12:34) The accent is part of the comedy, like Larry the Cable Guy (who's actually from Nebraska and has a neutral accent) or Gedde Watanabe (Long Duk Dong in "Sixteen Candles", really Gary Watanabe from Ogden, Utah.)

    I'm glad that Uncle Roger exists, so that people will not be fooled by someone like Jamie Olive Oil. Imagine that you want to experience an Asian dish as a white people, but the first person you type in a Google/KZread is him.     I as a white person, used to brag to people how great I could cook Indian curries that my mother taught me. Then one day my wife's new friend from India came to our house and showed me how to make Indian curry..... I felt ashamed and betrayed by my mothers teaching!

    I honestly love Indian food, the flavours are amazing, but I have such a low spice tolerance, so I can only eat a tiny number of dishes :(

    I'm Thai, I can assure you that it isn't. It's wrong in many ways. Uncle Roger got everything right. If you want to know how delicious the real Thai green curry is. You have to follow Uncle Roger. Jamie should go on vacation.

    This is why I like Ramsey, he doesn't just cook things by looking stuff online or something, he literally goes to the country and learns from the people. He did an amazing job in India. If he cooks indian food for me, I bet it's gonna be authentic as hell. I know he did something similar to jamie in his thai green paste but he later went to thailand and learnt things properly
