To add more to the backstory: Paseo originally went bankrupt because its employees filed a lawsuit against the company alleging Paseo owed a significant amount in wages and overtime pay that they refused to pay to its employees and that they failed to abide by labor laws regarding breaks and meals. Racial discrimination was also brought in the lawsuit in regarding how Lorenzo Lorenzo, owner of Paseo at the time, treated his employees, particularly Hispanic ones. During the investigation, it was discovered Paseo owed a lot to its vendors and to utilities as well. The debt had accumulated so much that Lorenzo Lorenzo was forced to file Chapter 7 bankruptcy and liquidate its assets in order to pay back all of its creditors and the wages owed to its workers. Interestingly, the debt owed was relatively small compared to the amount of revenue Paseo pulled in each year--in total, the debt owed amounted to over $30,000 dollars whereas Paseo grossed $2 million in annual sales (before they filed bankruptcy). During the liquidation, there were a lot of bids for acquiring Paseo, but Lorenzo Lorenzo adamantly refused to sell the recipe. It's rumored Lorenzo would come in once a week to make the secret sauce that gave Paseo (and now Un Bien) its unique, citrusy flavor. After the liquidation was completed, Lorenzo, now free of debt, can open up another shop: Un Bien, now run by his sons.

As a local and regular of this location I can confirm that Mario is just as cool in real life as he is in this video. 10/10 class act always holds a great conversation too. This place is the real deal
I don’t know how much this sandwich has changed since the original owner left paseo but I went here back around 2009 and got the Cuban roast pork sandwich with a side of beans and rice and it was by far the best meal I’ve ever had. It was SO GOOD that it truly put me into a euphoric state, I literally felt high, like a giddy feeling that you get from opiates. Not even kidding, it was so delicious that I had an overwhelming emotional reaction to it and cried tears of happiness. I know most people will probably read this and think I’m a weirdo but I don’t care, I have to give this masterpiece of food the credit it’s due. The pork was the juiciest, most tender, most flavorful meat I’ve ever tasted. The caramelized onions were plump, sweet, so flavorful I could’ve eaten them plain and loved it, they almost tasted like the perfect mix between a fruit and a vegetable, sweet and savory in the best possible way, the sauce was tangy and creamy, just another layer of amazing flavor on the sandwich. Lastly it was all served on the most crispy on the outside, soft on the inside roll ever, just perfectly toasted to a godly level. Not to mention the beans and rice, both cooked to absolute perfection and the black beans were flavored like nothing else, you could taste a ton of spices and bay leaf, but it wasn’t spicy, just perfectly seasoned. AMAZING. I wish everyone on earth could try the meal I had that day.

Had some leftover pulled pork and torta rolls and made some caramelized onions ribbons (along with mayo and pickled jalapenos) and made me a sandwich inspired by this and it was one of the greatest sandwiches I've eaten.

Went to Paseo in early 2014. I think it was the best thing I ate in Seattle. Was quite saddened it had closed down due to the owners not paying wages to their workers. Glad to see it's back! Keep up the good work Lucas!

I went to Un Bien yesterday and the Caribbean Roast sandwich was awesome! Absolutely messy but delicious! I really wanted to try the corn but it’s off season...I will be going back!
These videos couldn't come at a better time. I'm back in Seattle and I'm totally hitting up the places in this version of dining on a dime.

My boyfriend and I went to Un Bien and loved it!! I got the pork sandwich and it was delicious..esp. the onions. The lettuce somehow stayed crispy and the bread was soft. Definitely going again! Thanks for showing this. :)

Well, I'm glad I got to go to the original Paseo before it closed, in May, 2014, and a couple of months before it closed that year. I had the Cuban Roast on the second visit, but on the first visit, I had the incredible Havana Seared Scallops sandwich, and the one with the pork roast, and smoked ham and swiss. I think that was called The Midnight Cuban Press, or something.

You know, I think you should have tried the #2 at Paseo -- the grilled pork loin. That's my favorite one there. I definitely like it more than the roast which has that pulled pork texture which is only ever ok to me no matter how many times I try it in its various renditions across the southern US.

I was the Chef at a small kitchen & beer place. We knew there was a "silent" partner (the $$ guy) but the day to day owner was very knowledgeable about beer. The kitchen/menu was mine to run/create, the place brought in TONS of money per sq. ft. After two years there was an ownership dispute, first the very informed and professional "beer masters" left. Shortly after I left. The deep pockets "silent owner" replaced us easily....1 year later the place went bankrupt. I was "texted" about 2 months after I left by the new chefs (friends of mine) how to make the staple menu items (sauces, marinades, what kind of potatoes EVERYTHING). Front of the house never trained anyone and I never wrote down a single recipe. The day to day owner told us not to when we first started. It was a great place but sadly great things never last at their peak.
It seems every restaurant in Seattle has a significant story to it!

un bien will always top paseos IMO i love both but grabbing a sandwhich from un bien then hitting up chucks hop shop in the summer for a brew is just amazing

For the record, there are some original staff members at both locations. Haven't been back to the original Paseo location since it reopened, but I go to Un Bien all the time. So damn good. Dude is right, the steak sandwich is fuckin' bomb. I've had most things on the menu and haven't been disappointed yet. It is true, we are sandiwch rich here in Seattle.

Mario is one of my favorite humans ever! Always so happy and always remembers you no matter how often you come back! Paseo is hot garbage now. Minimal care put into their sandwiches, and the pork is fucking dry as hell almost all the time. Ryan is just cashing in on the paseo name. Any real Seattleite will tell you Un bien is where the true experience is.

I've eaten at Paseo twice now at their location near the ballpark. As good as their sandwiches are, I don't know if it's worth putting up with the rudeness of the employees and the wait time (even when it's not busy).
