Ingredients: (makes 30 macaron sandwiches)
Ube Cookies:
1 1/2 cups almond flour [140 g]
1 cup powdered sugar [120 g]
3 large egg whites [90 g]
1/4 tsp table salt [1.4 g]
1/4 tsp cream of tartar [0.8 g]
3 tbsp + 3 tbsp granulated sugar (divided) [37.5 g + 37.5 g]
1/8 tsp ube extract [0.6 mL]
Ube Buttercream:
3 large egg yolks (room temperature) [60 g]
1/3 cup granulated sugar [66.7 g]
1/4 cup water [60 mL]
12 tbsp (1 1/2 sticks) unsalted butter, room temperature [170.4 g]
1 tsp ube extract [5 mL]
1/4 tsp table salt [1.4 g]

@@cookingwithkurt OH MY GOSH THANK YOU THANK YOU THANK YOU They were so amazing!!! The French buttercream with the hint of ube extract just hits the spot!! I let them mature in the fridge overnight and let them come to room temperature So soft and chewy and the buttercream with ube!! So delicious This is the BEST ube macaron recipe ever!!! I never thought of using French buttercream it is a game changer!! Way better than American buttercream Thank you so much Kurt and Donald for this AMAZING RECIPE! I love all your ube recipes, my favorite is the ube overload cake, so much better than red ribbon!!! And I live an hour away so now I can have ube at home thanks to you!! Again thank you so much! Keep up the amazing videos I love how you and Donald show step by step all the way precise on measurements and how to do things a lot of KZreadrs don’t do that so thank you!!! I really enjoyed these ube macarons!!

Yes! It’s similar to the sylvanas cookies, made of a whipped egg white meringue. The texture is just bit different, with a chewy texture inside the cookie 😊
Hi guys this is my very first time to make macarons and of all the videos I've watched, yours is the most precise and clear instructions. My macarons turned stayed glossy and grainy and not smooth even after waiting for more than an hour for the batter to dry. And after baking the macarons all have cracked. Pls let me know where did I go wrong. Thank you.

Hi Hope - sorry to hear your macarons didn't turn out as you had liked. It's difficult for me to say for sure what went wrong without seeing what you did. But it sounds like too much air was knocked out of the macaronage batter (i.e. it was folded too much). Instructions on the right consistency starts at the 4:55 mark in the video. I'd suggest to stop folding as soon as your batter passes the ribbon test, and err on the side of a stiffer batter (less folding) than a runnier batter (more folding). Hope this helps! :)
Oh wow perfect timing. I just did macaron baking marathon last week. I thought about making ube macaron and here you are with recipe. I will try your recipe and see how it turns out. Can I use the french method? I do not use swiss meringue method.

Should I have put the almond flour in a food processor first? I followed this recipe very precisely, but the almond mixture made the dough very grainy (even after three siftings). For the macoronage, the dough remained stiff and never achieved the ribbon consistency, even after 200 - 300 folds (70 is the usual number of folds). I gave up, piped it, and the shells maintained an ugly piping shape, like the nautilus of a snail shell. I reread the recipes several times and honestly think that I followed it to the T! Oh well. Cookies taste good but are too unsightly to serve 😢. I wonder what my mistake was?

Hello - it's difficult for me to say what happened without seeing what you did. We didn't need to use a food processor with the brand of almond flour we used (King Arthur). I'd suggest following the recipe and not piping until the batter passes the ribbon test, as shown in the video. Hope this helps! :)
