Just a suggestion, smoothen the icing first before you use the patterned scraper so it does not leave some rough bits..

Thanks for the suggestion! I usually do smoothen buttercream frosting out with a bench scraper first before making the pattern with the comb, which I tried with this roll when testing the recipe (not shown in video). The fibrous texture from the fresh mango mixed into the buttercream frosting made it a little clumpy, unfortunately. So the “rough bits” you refer to were difficult to avoid even after smoothening it out. I suspect using mango extract (instead of fresh mangoes like we did here) would result in a smoother frosting 😊

Hi Angelica - yes, this is a plain vanilla chiffon. The orange zest is an optional flavor. If it is not available, you can just leave it out. Hope this helps! :)

If i use frozen mangoes, do i thaw them first?

I made the buttercream twice but as soon as I put the vanilla, the buttercream turns into a "looking like a scrambled egg". Could you tell me why it happens. I finished the cake though, I used your ube cake frosting recipe instead. Thank you and thank you for this recipe.

Hi Liza - I’d suggest just continue whipping the buttercream till the vanilla gets combined again. It will eventually become smooth and silky after enough whipping. Buttercream is very resilient, and you can never “over whip” it. Hope this helps 😊

Hi Kathryn - if cake flour is not available, you can substitute with all purpose flour and cornstarch: for every 1 cup of cake flour needed, add 1 cup of AP flour, subtract 2 tbsp, then add 2 tbsp of cornstarch, and sift this together. This will act similar to cake flour. Cake flour has a lower protein content compared to AP flour - it creates a more tender texture, finer crumbs, and better rise, which are ideal for chiffon cakes like this. And substituting with AP flour + cornstarch combo imitates that. Hope this helps! :)

Hi! Pls help po. Oven fan na kasi ngayon ang ginagamit ko. Di na po successfull ang pag bake ko mg cake. Nagiging dry po sya or di luto sa gitna😭 ano po ba dapat ang temperature sa oven fan?

Hi Kat - I don't own a convection oven, so I don't have personal experience with it. But from what I understand, there should be a setting to be able to turn the convection feature "on" and "off". If there is, bake this cake with the convection setting "off". So convection ovens should be able to work like a regular oven. For baking cakes, it is better not to use convection - since the movement of hot air from the fan and exhaust system might dry out the cake, and cook it unevenly and prevent it from rising. But if there is no way to turn off the convection feature, I'd suggest cooking the cake at 325 degrees Fahrenheit (25 degrees F lower than in the recipe). And check on the cake doneness about 10 - 15 min earlier than required. If not yet done, put it back, but keep checking on it every 5 min. Baking with convection is more efficient, so they will cook the cake faster than with a regular oven. Hope this helps! :)
