Two sheet pan shrimp dinners | asparagus & sweet corn, chickpeas & leeks

**ASPARAGUS + CORN RECIPE, FEEDS 2-3**
1 lb (454g) shrimp (bigger ones are more likely to cook in the same time as the veggies)
1 lb (454g) asparagus
2 ears fresh sweet corn
2-3 shallots
2-3 garlic cloves
1 lemon
salt, pepper, oil and spices (I used garlic powder, onion powder and smoked paprika)
fresh herb for garnish (I used lemon balm but parsley would be good)
If using frozen shrimp, get them thawing submerged in trickling cool water. They should take 10-15 minutes, depending on size.
Trim off the woody ends of the asparagus and put them on a sheet pan. Peel and chop the garlic and zest the lemon - put all that on the asparagus. Peel the shallots, cut them into a few large chunks and don't trim of the part at the base that holds the layers together - put them on the sheet pan. Shuck the corn - you can put it on the pan now or halfway through the cooking depending on how cooked you like it.
Peel and devein the shrimp if they weren't already, blot them dry and put them on the sheet pan. Season them with whatever spices you want and a little salt (most shrimp are pretty salty already). Season the asparagus and the shallots. Drizzle everything lightly with oil. Toss to get everything coated and make sure everything is laid out in a flat, even layer.
Heat your oven's broiler/grill to maximum and put in the sheet pan, right up near the element. Close the door and check it halfway through, after maybe three minutes. You can flip things around for more even cooking, or you can leave them and get pieces with very brown tops and moist undersides. If you want your corn just warmed up and barely cooked, put it in now. Everything should be cooked after 3-4 more minutes.
Scatter over some fresh herb and squeeze on some lemon juice - I recommend eating right off the tray, to keep everything warm.
**CHICKPEAS + LEEKS RECIPE, FEEDS 4**
1 lb (454g) shrimp (bigger ones are more likely to cook in the same time as the veggies)
1 15.5 oz (439g) or thereabouts can of chickpeas
2 big leeks (the thicker the better)
1 red chili (very optional)
tzatziki (store bought or homemade from my recipe below)
salt, pepper, oil and spices (I used whole mustard seeds, celery seeds and chili flakes on the shrimp, and harissa powder on the chickpeas)
fresh herb for garnish (I used purple basil but cilantro or dill would be good)
If using frozen shrimp, get them thawing submerged in trickling cool water. They should take 10-15 minutes, depending on size.
Peel the top layer or two off the leeks, since they tend to have a lot of dirt underneath them, and trim off the green tops. Rinse off the stalks and start cutting them into thick rounds from the top. If you still see dirt between the layers, toss those rounds out and keep cutting down the stalk - the dirt is usually only near the top. Put the leak rounds on your sheet pan. Thinly slice the chili and put those slices on the leeks.
Peel and devein the shrimp if they weren't already and put them on the sheet pan. Drain and rinse the chickpeas and put them on the pan. You can use the same paper towel to blot the shrimp and the chickpeas dry on the pan. Season everything with whatever spices you want - I used some cracked whole mustard seeds, celery seeds and chili flakes on the shrimp, harissa powder on the chickpeas and salt & pepper on the leeks. Only put a little salt on the shrimp and the chickpeas - they're probably already salty.
Drizzle everything lightly with oil. Toss to get everything coated and make sure everything is laid out in a flat, even layer. I put the chili slices on top of my leek slices to the chilis would char.

Scatter some fresh herb over the pan and drizzle with tzatziki (you might need to loosen up store-bought tzatziki with milk or water to get it to a drizzling consistency) - I recommend eating right off the tray, to keep everything warm.
**TZATZIKI DRIZZILING SAUCE RECIPE**
1 English cucumber
1-2 garlic cloves
1 lemon
1 cup (237mL) plain yogurt, ideally Greek-style
a little fresh dill and/or lemon
salt, pepper and olive oil
milk or water to achieve a drizzling consistency

    This reminds me of growing up in my Filipino household where my grandma would lay down banana leaves and dump down rice, corn, fresh caught and steamed red rock crab, fried mackerel my grandpa caught, and a side bowl of vinegar soy sauce and chilies. We'd gather around in the steamy kitchen and eat with our hands and sip on watermelon cantaloupe punch during the summer after a long day of fishing. This one simple recipe unlocked all those memories i thought i lost, so thank you Adam.

    watermelon cantaloupe punch sounds amazing! I've mexican aguas which are include either watermelon or cantaloupe but not both. But yeah those memories are awesome. It's almost more the experience and the people than the food--which is saying something because the food sounds amazing.

    One reason I think people in the US at least are so fat is the portion sizes, that is, people think they need to eat a lot per sitting. A case in point, I was watching Kenji Lopez Alt do crab cakes, and he had 3 of them made up, one small, one medium and one larger for him, his wife and 3 year old daughter and several people kept saying they'd eat them all in one sitting, but I think they also forget there will be other sides to go along with the crab cakes too. That said, I do find I'm watching my portion sizes, especially when it comes to pasta and rice as both are hypoglycemic. Pasta is not as high as white rice though as it runs a 46, whilst white rice is 64, so keep the portion size to about a cup to a cup and a half of either, but not both at one sitting though. That said, adding protein to either will reduce the hypoglycemic tendency of each, or so I've read and that is often how I eat pasta and rice when eating white rice. I do white and brown, but brown takes longer to cook though.

    Anyone whos gone on a proper diet (via counting calories) will tell you just how relatively smaller portions you really need to get a full meal. Its really eye opening for many people (when you can fudge the numbers).

    Agreed, total is about 2200 calories, meaning 550 per serving. Good for a breakfast, perhaps. 1lb shrimp = 500 calories 1lb chickpeas = 1500 calories yogurt = 200 calories

    All you need is to remember to count in the olive oil, which you may douse on as heavily as u like, at this point [Greek culture speaking here 🤭!...], as well as serve a small but nice enough helping of carb', some toasted sourdough or fresh French baguette, to dunk in, and I'm sure you'll be hitting a 700 per head in no time... Besides, especially if in the evening with friends, you're forgetting the 1 (or more) glass of wine, whatever appetizer, or beer, and maybe some fruit salad, or dessert? Adam didn't plan your evening for you, here... But he's so damn right, eating too much gets our system addicted, and that's how diabetes stands right round the bend, even long before weight has actually become an issue!

    Lemon Balm is an extremely easy plant to grow. It is a perennial (can't speak to how well the flavor holds up year after year) and is very cold tolerant, may be somewhat invasive, mints often are. The basil looks like what Baker Creek Seeds sells as "Dark Purple Opal Basil" it looks great though I don't think there is a difference beyond the look, probably has some anti-oxidants making it purple, though. As mentioned by Kim, you can find both of those sold as plants in many stores. I have grown both from seed, the Lemon Balm is definitely the easier of the two, but if you give basil some heat while germinating you shouldn't have too much of a problem (I put it on a heater vent in the spring, you don't need specialized equipment for small scale gardening.) If you don't have the space for a garden, I would suspect both of those would do well indoors, the basil will hold for at least a couple months inside, that's all I'm certain of.

    you can keep food scraps, but them in a bin and use as compost for the garden. my mother used to do that. egg shells are apparently really good for plants too

    Anything and everything vegetal goes into my compost, and that includes paper towels and kleenex, un-color-printed paper/bags/cardboard shredded in and alternated with wet items. In fact, now that we have biodegradable plastic bags as well as paper in our produce department, they both go in and disappear within weeks. Check with your local garbage/recycling service to see if they offer compost bins - they did when I lived in Seattle a zillion years ago and they do now here in France, for about 10€. The one myth that always mythtified me was citrus peels. I've seen happy baby angleworms curled up in the remains, so I don't know what the problem could be unless there are some that are waxed or treated, which I wouldn't buy. If you have a tiny garden, as I once did, you can also dig in your waste among the plants and shrubs. Keep a trowel handy, and make a regular route around the garden; after a week or so, when you go back to the beginning, you'll find it's all been 'digested'. They say not to put meat scraps in a heap/bin, for fear of attracting pests, but if you bury fish bones/skin they make an excellent fertilizer and disappear quickly.

    Sea shrimp might be, but a lot of the shrimp in your supermarket is probably sweet water shrimp from aqua farms - this of course depends on where you live :)

    I don't understand why I've heard people call you pretentious Adam , you're quite literally the opposite. You frequently provide instructions for what the average person will have accessible and let the viewer know if something can be done with out an additional expensive piece of equipment or technique which simply isn't' needed to achieve the desired results. You've always been highly educational and never claim to have the only way to do things, and have advocated for people doing what they like best food wise/what works best for them, the same cannot be said for all content creators, thank you.

    We just made the first dish for dinner tonight. Holy hell is it awesome! We bought fresh shrimp (we live on the coast, literally 10 minutes from the ocean) so grand total it took 10 minutes to make and about 15 to eat. So good! Can’t wait to try variations of this!

    I've watched a ton of your videos but this is the first recipe I actually tried (it's the simplest!) and it turned out great! I accidentally bought smaller shrimp, but it still tasted great. I'd be into more of these sheet pan dinners if there are more recipes.

    Man aluminum foil has really converted me to broiling lots of food in the oven. Zero dishes AND you can wrap your leftovers in the foil!!

    since making his recipes i’ve realised how much more acidic i like my food. i’m almost always putting in a little bit more lemon juice or vinegar in dishes when i make them which is really interesting!

    Here's a relatively quick hack for the cheapos out there. That woody part of the asparagus is just as good once you take a peeler to it. Put the asparagus flat against a cutting board. Peel the woody part going away from the tips, rotate, peel--should only be about 4 or 5 rotations to get all the way around and you have an extra 1/3 asparagus, or up to 1/2 asparagus in this case! Once you know what you're doing it should only be about 10 seconds or less per piece.

    Helpful hint about lemon balm. If you take some powdered sugar and feather it on the lemon balm put it on a baking sheet in the oven for 10 minutes it comes out tasting like a lemon flavored frosted flake it’s great try

    I 100% agree with you on the asparagus - my standard is just a bit of salt and pepper with lemon zest, roll them in oil and roast in the oven and it's ridiculously good for how easy it is

    I cannot emphasize this enough: PLANNING. I use a plain old binder and lined paper, and plan out what I'm going to eat. Try and make things that use similar ingredients, and don't be afraid to substitute something. It takes about an hour, I do it right before I go grocery shopping. I push things that use fresh veggies towards the beginning of the week, and anything that uses mostly canned goods or ingredients that spoil more slowly towards the end of the week. Learn how fast things spoil, and learn how to store your vegetables so they last longer.

    "unless I get it from a guy off a boat" Even then... depends on the boat. A lot of big fishing boats freeze this stuff on the boat... so unless you're going with a smaller proprietor, still probably frozen.

    I tried panfrying chickpeas once, it didn't turn out so great as it turned into refried beans but with chickpeas. definitely gonna try roasting in the oven, fantastic stuff. Chickpeas are so good

    Good take on the tzatziki. Usually I just chop it in small enough cubes, which gives some bite to it and produces no liquids to be removed. Also, a great addition to it is finely grated carrot! The slightly orange color is a plus too!

    MORE OF THESE PLEASE. I'm thinking you could easily have several smaller pans that you add one at a time, according to a timer. That way they all finish as the same time. Prep the longest one first and prep the others while the first one gets a head start. I'm not above using multiple ovens.

    I know a few guys with boats in the industry, and they snap freeze product on the boat for freshness. Cooked prawns cooked on the boat - snap frozen. Raw prawns - snap frozen. At least in Australia, I’m not aware of any large scale wild caught prawns that are not snap frozen when caught. Snap freezing still produces amazingly fresh product.
