Ingredients:
Wraps:
2 eggs
1 cup spinach
Fillings:
¼ cup cream cheese
1 teaspoon olive oil (plus more for greasing the pan)
1 tablespoon basil
¼ teaspoon pink salt
⅛ teaspoon onion powder
⅛ teaspoon dill
0.7 oz (20 g) slices Turkey Breast Tenderloin (Rotisserie)
0.5 oz (15 g) slices fresh mozzarella cheese
1 mini cucumber (sliced into sticks)
2-3 portobello mushrooms (sliced and dry-fried)
½ carrot (sliced into thin sticks)
¼ red bell pepper
2 big leaves of kale
Preparation:
-Watch my video for visual instructions.
-In a blender, combine eggs and spinach until well combined.
-Preheat a medium-sized non-stick pan to medium-low heat. Grease with olive oil and pour ½ cup of the mixture into the pan.
-Cook for about 2 minutes per side or until the top is cooked and not liquid. It's similar to cooking a pancake.
-Repeat the process to make as many wraps as desired. I made a bunch of wraps to save for the week. You do as many as you want! Just repeat the process.
-For the cream, combine the cream cheese, olive oil, basil, dill, onion powder, black pepper, and salt in a bowl. Apply a generous layer of the cream mixture onto each wrap.
-For the turkey wrap, add turkey breast, cucumber, mozzarella, red bell pepper, and kale. For the vegetarian version, add portobello mushrooms, carrots, cucumber, red bell pepper, and kale. Place ingredients evenly, avoiding stacking too much for easy rolling. Roll up the wraps and tightly cover them with plastic wrap.
-Let them cool in the fridge for at least 30 minutes.
-Slice them into half-inch pieces, and there you have it!

This recipe is for two wraps. The ratio is 1 egg + 1/2 cup of spinach per wrap, so you can make as many as you want. In the description, you will find the step-by-step recipe! I have never frozen them, but they hold up very well in the fridge.

Oh no! Important things to consider to avoid this: 1. Spray or grease your pan each time before adding a scoop of batter. 2. A nonstick pan is a must! 3. Use medium heat for only 2 minutes each side. Hope you try again! This one's worth the effort.

For me, the taste of spinach is strong enough. Once you add the cream cheese, packed of flavor, you'll love it!
Why only 2 ingredients?? Give me more! It will be horrible without seasoning and its just a spinach omelette without flour.

Hi! There are alternatives to the traditional plastic wrap that are compostable like the one we normally use at home! You can find them almost in every grocery store or online :)

Even though the wrap bread is made with eggs and spinach, the defining characteristic is the method of preparation and how it's served. Since you rolled it up with fillings inside, it fits the description of a wrap rather than an omelet. The omelet is folded in half and the fillings are just placed inside of the pocket.
