Trying to make TUNISIAN MAKROUDH pastry - RECIPE! | أجنبي يجرب الطبخ التونسي
In this video I attempt to make one of my favourite treats from our trip in Tunisia last year - makroudh! Here is the full recipe:
Ingredients:
Dough:
350 g semolina
35 g plain white flour
160 g melted butter
Pinch of salt
150 g orange blossom water
Date filling:
400 g medjool dates
1 tablespoon melted butter
1 tablespoon orange blossom water
1/2 teaspon cinnamon
Honey coating:
300 g honey
1 tbsp orange flower water
Frying oil
Instructions:
1. Mix all the ingredients for the dough, except for the orange blossom water. Don't knead it, just mix it until it is thoroughly mixed.
2. Let the dough rest for 45 min - 1 hour while you make the date paste.
3. Steam the dates for around 30 minutes or until soft. Blend or chop together with butter, orange blossom water and cinnamon until a smooth paste is formed.
4. Add the orange blossom water to the dough and pinch with your fingers until smooth and homogeneous.
5. Divide the dough into two equal pieces. Roll each piece into a thin, rectangular log about 1 cm thick.
6. Make a well down the middle of each log and fill with the date paste.
7. Pinch the sides of the logs together, enclosing the date paste inside the dough.
8. Roll the dough and flatten it again just to ensure it is properly sealed.
9. Score the dough to make a pattern using the blunt side of a knife.
10. Cut the logs into individual makroudhs, each about 3-5 cm in width.
11. Prepare the honey coating by heating the honey and orange blossom water and then keeping it warm on the stove.
11. Fry the makroudhs in a pot filled with a deep layer of oil for about 3-5 minutes or until golden brown.
12. Transfer to the honey coating and then the makroudhs are complete!

Amazing! We actually salute you on the bravery to take it on making makroudh 😂 you tired something that most tunisians don't actually have the skills to do! Brilliant technique, and effort, only observation is that indeed, there was much filling, the more appropriate way to do it is roll a lengthy string of the mashed dates first, put it inside the dough, fold the dough, roll the whole thing using the palms of your hands, and then evenly flatten it and proceed with cutting.. Cheers!

Man I haven't had maqroudh for at least 3 years, I'm craving it now. When I was young my mother used to make the best maqroudh you'll ever have but I got tired of it, my half Dutch half Palestinian childhood friend would go insane over them and I'd be like have them all 😂

You have remembered me my child when my mother did Makroudh during Ramadan :) it's really very courageous... it is not easy as it seems but everyone you have to try :) if you don"t like date you can put any fruit without too much water or even jam .. you cn also put into oven if you don"'t like fried (as i do ) . You are welcome to Tunisia waiting form more people visiting Tunisia we are in economic crisis and we live mainly with Tourist. Please come and please try to do ecologic tourism (no use too much water, leave places clean and eat local) even if Tunisian themselves do not :(. Again Thank you Daniel :)

Nice job! An advice though: dates must be opened and checked before being eaten or blended because they frequently contain worms inside as they are sweet. So please be careful next time :)
