On this episode of All The Tacos, host Francisco Gómez is searching Mexico City for the best visceras tacos. What are visceras? They're the offal and entrails of cows, chicken and other animals, and it makes for delicious tacos. Think tacos made from animal tongue, eyes, tripe, lungs, stomach, intestine, brain, udders, uterus and testicles-and these are some of the juiciest and most flavorful parts of the animal.

@@idontwantcorporateretaliat6301 It's actually CORN and beans, and all the many native vegetables because they grow easily. I don't know the exact percentages, but it's more complicated than simply vegetarians by choice or not. In Mexico, there are still many indigenous communities, or mixed and a bit more modern communities, all of them in rural areas. They farm their own food and they eat mainly vegetables, but also occasionally some turkey or fish or even bugs. That's part of the traditions and food that existed before europeans came. Some of these people might also farm non-native animals, like cows and chickens, but in small scale, or only for their milk and eggs. These people are not "truly vegetarian", but they are very close to it, and I'm counting them in here. My grandma who lived in a rural area when young, up until she died she used to eat meat or chicken only like once a week, she would prefer vegetables, cheese, milk and eggs, despite living in Mexico City and having full access to meat. That's by choice, but also the way she grew. There's also all the city people from medium and high class, who chose to become vegetarian or vegan, and the large availability of native vegetables year round play in they favor. Finally, there's poor city people, who can't afford urban life but also can't farm their food, and have to survive with corn and beans, and some other cheap vegetables or rice, and they don't do it by choice. That's the people you are thinking about, but it's not the majority of vegetarians. The majority is actually the "almost vegetarians" like my grandma. But, when it comes to me, I can't live without chicken, meat and of course bacon.

I do actually. Ideally if you really wanted to eat meat you should only source it from roadkill. And then just eat everything from it

@@elguerokabron Not all the latinos are Mexicans though, they're are from different countries of Latin America, most of them are poor people that believe they would have better opportunities and a great lifestyle if they go to USA but that's not the case; they don't have enough money to process their passport and Visa that's why they cross illegally. It also depends on each person ideology, in the majority of the cases the people work really hard to have a nice lifestyle. Here in Mexico most of us really enjoy our life and our traditions and we love other countries too.

Hell ya! same here. My family used to own a small shoe store. So my grandpa said if I wanted to make some money to recycle the cardboard. I was probably 7yrs old hustling cardboard along with a cousin of mine same age. And I still remember our first time cashing in and going out to eat some tacos. Out of 4 tacos we made 8 lol
I loveee MEXICO so much!!! This made me so hungry, can’t wait to travel back again some day.

I couldn't get down with eyes, tongues and brains but everything else is fine
I just tried cow cheek tacos for the first time last week I got to saw they were delicious, its getting your mind past the fact your eating parts of an animal you werent raised to appriciate 😊

When i was in mexico city, i wanted to visit tepito. My friend who was a local didn't want to bring me there because its one of the dangerous areas of mexico city. Not tourist friendly

Tongue, head meat, and tripe are my favorite tacos. Spleen is under rated too. Never had liver taco though, now I want one.

Liver is chewy and harder than most meats a care to eat. Not to mention the metallic aftertaste. When eating liver tacos, you gotta go heavy on the onion and cilantro.

That's simply the result of an increase in prices relative to an increase in demand. Without taken a cesus count, to could roughly figure out demographical changes, simply through following changes in prices of foodstuffs consumed by newer residents

Toungue isn't cheap in mexico either, right now it's around 16~ USD per kilo at Walmart/any supermarket, it may be around 12-13 USD if you go with your local butcher.
I'd love to see more recipes for those offal tacos.

I'm Mexican but I believe Fililpino, Indian and Mexican cuisines have similar cooking methods but different in preparation. All 3 have great individual dishes.

People say it’s gross but you have to try it before you knock it personally I’m not a fan of some of these cuts but I know because I’ve tried them and it’s good that there are people who eat the whole animal that died for your nourishment.
This is fantastic. Gunna be hard to replicate in Norway, I'm sure there's a lot of the parts I just can't buy.

Notice how in DF, the tacos are made real good, but from the left overs of the cow.. they made something out of nothing from the Spanish days, the Spanish would eat the bigger better pieces of meats from the cow or pig.. In Michoacán, they’re more known for their carnitas and buche suadero and stuff.. I see that this channel goes to DF a lot.. that’s cool I’m glad they’re getting some love.. you can see that most of the people still have the Aztec blood because of their features and height.. amazing

Watch the video more carefully. At 3:15 they say that people started to eat the "left overs" of the cow about 100 years ago, bacause they were starving. Spaniards were kicked out of Mexico nearly 200 years ago (1821). Nice try!

My parents grew up in a village in Mexico. Cuts of meats like beef or pork are expensive so the tacos they normally ate were offal, head, and brain usually. Ik it sounds gross but my parents hype up the tacos so much so dont judge till you try it.

tacos de lengua and cabeza are some of the best better than carnitas to me.
