Nihari me oil is must bcz mutton waisi hi cook hota h nihari me islye itna oil h....process is that only and because before the nawabs used to have it in breakfast to get high energy that is why it has so much of oil...just a information.

Instead of removing that oil you should have mixed it in nihari wid spoon to enhance flavour some more
