It's not in Chinese culture to offer help when the stranger is not in obvious need. You can always ask a bit loudly "can anyone help me". If by chance someone speaks English he will stand out and help.

Cucumbers are eaten raw to relieve the spiciness and do not need to be placed in hot pot. Eating hot pot, drinking beer, can also reduce the spiciness. As long as Chinese people are not from Sichuan and Chongqing, they usually choose Double-flavor hot pot, and dare not order pure spicy food.

No, we cook it in the hotpot ,but for only a little while before it goes soft, when it tastes still crispy
So nice of the restaurant employee to offer you a lower level of spice. They cared about you and your experience even though it would have cost them more. You guys have been so nice to the locals and so open minded. Really enjoy watching your adventure.
Each province in China has its own unique culture and cuisine, and even different types of hot pot. In my hometown of Jilin Province, you can taste different cuisines. I look forward to your exploration.

I will make a suggestion for your next hotpot experience. You should keep the broth boiling at all times. Not at high boil, but medium boil with bubbling on the surface. The broth will evaporate along the way, the server will periodically come fill it up for you. Also, depending on how you like your steak normally, if you can eat a median steak with a bit of pink, then you probably don't want to cook your meat to dead. For beef and lamb, when the broth is boiling, which it should be at all times, your beef or lamb slices should be cooked in about 15 - 20 seconds. Keep moving it in the pot. The key is to do 1 slice at a time, hold on to it with your chipsticks or in the mesh skimmer. Never let it get out of sight. Cook it until it is pink, that's it. Just use your own judgement based on how cooked you normally like it. Trust me, the meat will be so tender and juicy. You will be in heaven. 😋 Happy hotpoting! 😄

As a Sichuanese, totally agree. And you don’t need to add the fresh chilli in your sauce because that’s really hard core too especially when the sauce is getting warmer as you go. Also for potato slices, how long you cook it is completely up to you, younger people generally like crunchy potato, and others like overcooked potatoes that’s soft and flavourful. And yes Chinese use cucumbers in stir fry and soups etc too, but I have had Chinese friends from other regions tell me it’s weird that we put in hotpot too but what can I say it’s yummy 🤤
The tradition of eating spicy food is based on geographic reason, and spicy cuisine helps eliminate the negative effects of high humidity in your body. 😊

Correct, hotpot is not really haute Chinese cuisine, it is more of a necessary medicinal diet to rid humidity from the body and limbs.

Next time you eat Chongqing hot pot, I recommend ordering Yuanyang hot pot. The Yuanyang Hotpot is half spicy and half non-spicy, which gives the palate a break.

Sichuan hotpot and Chongqing hotpot are generally the same, so the dipping sauces are similar as well. The most basic recipe in Chongqing includes minced garlic, MSG, and sesame oil. In Sichuan, the basic ingredients are usually minced garlic, oyster sauce, and sesame oil. Other ingredients can be added according to personal preference. So next time when you have hotpot, just make sure the basic three ingredients are correct.

Chongqing hot pot is all about offals so it's very hardcore, but it may be a little bit weird for foreigners haha. We usually order dishes like duck intestine, chicken stomach, beef tripe, pork blood, pork kidney, beef or pork aorta etc and most of them only need like 10 seconds of cooking😋

My favorite episode so far, really respect the way you guys choose to try our local food. Many of the visitors would choose mild spicy when trying those decent hot pot in Chongqing and Sichuan, which is totally fine but you can't have real experience if you do so. The burning, numbing, sweating, and heavy breathing are the correct way to go! That's the spirit of Chongqing and Sichuan hot pot! A good Chongqing hot pot should come with pain and pleasure for sure. Dig in!

Some hotpot restaurants offer an option to order different kind of base soups, i normally order1 spicy and the other just plain broth base soup

One suggestion: if you are ready to eat something too spicy, you can drink a glass of pure milk first to protect the stomach lining. If the food is too spicy, you can drink cold milk, cold soy milk and cold beer or drinks to ease the pain.
It would have been an intense experience the next morning, I'm sure you both had a ring of fire😅😅

Three provinces in China where food is the spiciest (not in particular order): Sichuan, Hunan, and Jiangxi. I love Hunan spice the most, it's just straight hot. You can try to find some Hunan restaurants in any province in China.

There is sesame oil in your bowl. The cooked ingredients should be fully dipped in sesame oil, which will allow some capsaicin to dissolve in the sesame oil and it will not be particularly spicy.

When eating hot pot, be sure to add vinegar and drink milk to offset the spiciness. Never drink Coke or Sprite, the more you drink, the spicier it becomes. Some people say garlic is spicy, but when eating noodles, if you mix garlic with noodles, it will not be spicy.
It's so nice of you. When people say their English is bad, your response is so wise and kind. Chinese is more difficult for foreigners to translate, however, we can type and input alphabet anyway rather than just rely on picture translation.
Just a little extra info for you guys here. There are quite a number of types of hotpots in China and Sichuan hotpot is definitely among the most popular ones across the nation. As a Chinese from northern part of the country, I personally have never been a big fan of the dipping oil of Sichuan hotpot. But according to the locals, the oil not only add extra flavor to the stuffs you cook in the pot, more importantly it helps ease the spiciness to some extent. (And for people who can't really handle or enjoy the extreme spiciness, me included, they will often choose half-and-half soup base.) I myself would always turn to other dipping options like sesame sauce or vinegar & soy sauce mix. But its just my personal preference I guess. Looking forward to seeing you guys explore other parts of China in the future.

And in terms of checking whether or not the food is fully cooked, the rule of thumb, in most cases except for some meat and potatoes and stuffs like that, is to see if the food is starting to float in the boiling soup. If it floats, it's ready to eat, most of the time.

重庆火锅的辣是全国出名的,我们普通吃辣的中国人到了重庆都只敢点微微辣,所以对你们不能吃太多辣的外国人来说最好的选择是微微辣+其它锅底的组合,你们今天点的菜,除了牛肉片其它的都需要在锅里煮个十分钟左右更好吃,黄瓜、南瓜、土豆都要煮烂一点,会更加软糯入味,牛肉片只需要在热锅里涮烫10秒左右,牛肉慢慢变色了直到粉红色就可以吃了,这样最鲜嫩。

Usually, I will order some drinks or sweets to "解辣"(help with the spicies). Soymilk, coke, or some local sweet of Sichuan, like "冰粉"(icy-jelly with brown sugar) or “糍粑”(glutinous rice cake with brown sugar). New things like "冰汤圆"(a special ice-cream with bubble, glutinous rice cake and so on) are also very good.
Guangdong sausage can be cooked for a few more minutes, and beef slices are about 10 to 15 seconds. It's better to drink more milk when eating in Chongqing to protect gastrointestinal health.
Whether hot pot is delicious or not, the dipping sauce is very important

Bravo! Being from Hunan province, China, where people love pepper just as much as those in Sichuan or Chongqing, I'd like to offer some suggestions. The next time you eat hotpot, you might enjoy ordering some chilled drinks like Sprite or beer. We enjoy the 'burn' and keep eating, sipping on chilled drinks or water when it gets too intense, which makes it the most enjoyable time. Seeing you enjoy hotpot without any drinks, I must give you a thumbs up. I'm looking forward to your next video! I'll consider it part of my preparation for the College English Test-6.🥰

I'm glad you tried the Chengdu hotpot first and they made you the dipping sauce in front of you. So when you tried Chongqing hotpot, the dipping sauce was self-service, you had an idea what to do, and you already know to ask the oil. I saw some other youtubers eating hotpot and went to the self serve sauce section just didn't know what to do, and even though the little can of oil was to drink 😅
You two are so brave, even as a Chinese from other region, I don’t think I’ll be brave enough to challenge myself to that spice level 😅
@ Two Mad Explorers, I really admire your adventurous spirit and willingness to go to unchartered waters and try new things/food! Personally, and 'I speak from my personal humble view', as long as acts that are not illegal and immoral, it is always worth trying. Even if we don't like them, at least we tried and know. If we don't try, we might miss out on some 'gems'. Seize the moments while we can!!
You guys are so adventurous LOL. Maybe it's too late but I still want to offer some tips: 1. For someone not super good at eating spicy food, it's better to not put anything that looks red into your dipping sauce because the broth is already very spicy. (That tiny fresh chopped chilli pepper is especially spicy). 2. Cantonese sausage is not a common choice for hotpot in general, but maybe it's popular in Chongqing. Cantonese sausage has a very interesting texture and can appear in a lot of other dishes (like Bao Zai Fan) 3. Yes cucumber is quite common in China. But I feel people enjoy it more when served as a salad rather than a cooked dish. Definitely try 拍黄瓜(smacked cucumber, Chinese cucumber salad) if you come across it. 4. Take care of yourself. You might feel uncomfortable after eating hotpot, not because it's not clean, but because your stomache is not used to such a large amount of very spicy food. 5. Potatoes are common in China, but they are more used as a veggie rather than served as a staple food. 6. I recommend ordering dairy-based drink, that will ease the spiciness. 7. Chongqing and Sichuan hotpot have a lot of interesting organ choices (鹅肠goose intenstine, 黄喉aorta of cow or pig, etc.) Recommend you give it a try if you are OK with organs. 8. Kinda wise to not order leafy veggies with this red-broth only hotpot. It could be bloody spicy as it absorbs insane amount of broth.

I think the difference of price is due to different orientation of these two hotpot restaurant. According to decorations of that Chengdu restaurant it seems like upper-intermediate orientation, but this one in Chongqing looks like a more average masses oriented, maybe this is the reason why it's more affordable.

作为一个中国人,我很佩服你们两个有挑战这么辣的火锅的勇气,要是我,至少点个鸳鸯锅,就是既有辣的也有不辣的锅底,自己可以两边选择。。。
在中国云贵川渝,口味相同麻辣,但是湖南湖北江西吃辣椒很厉害,陕西,甘肃也不差 建议外国人到中国点鸳鸯火锅

You should order a double-flavor pot (half spicy). I guarantee you'll feel a little uncomfortable when you poop the next day. Great video. Your pronunciation of Chongqing(重庆)and Chengdu( 成都)is very good.
