This episode we will be making Strawberry Spinach Salad with Chicken & Avocado
This recipe makes 2 portions. Perfect for our travels but feel free to double it and have extra, I usually do.
Dressing
⅛ c extra virgin olive oil
½ tbs golden balsamic vinegar
½ tsp sugar
½ tbs roughly chopped tarragon
⅛ tsp kosher salt
⅛ tsp freshly ground black pepper
Salad
1 ½ c cooked chicken, chopped
2 c loosely packed fresh spinach
3-4 large strawberries , hulled and quartered
½ avocado , peeled, seeded and cut into chunks
2-3 thinly sliced rings of red onion
⅛ c feta cheese
1 tbs sunflower seeds (or other nuts)
Preparation
Whisk the extra virgin olive oil with the balsamic vinegar, sugar, tarragon, kosher salt and freshly ground black pepper in a small bowl until blended.
Place the chicken in a shallow bowl and cover with half of the dressing. Cover and refrigerate for at least 2 hours.
Arrange spinach, strawberries, and sliced onion in a bowl (or individual bowls). Lightly toss with the remaining dressing. Add the chicken and avocado, top with feta cheese and nuts.
