Trini Kurma- Divali Sweets

Kurma is one of the most popular Indian sweets in Trinidad. It is made mostly for Divali(Diwali) or Poojas (Prayers) but you can also find it selling at many street stalls and markets. It can also be found pre-packaged at the grocery.
It's a delicious dessert : easy to make and easy to eat lol
Don't confused this with the South Asian dish, Korma. Korma is a savory dish while Kurma is sweet. This is also call Mithai in Guyana.
Here's what you will need:
For the dough:
2 cups of Flour
1/4 cup of Butter (unsalted if this will be done for pooja/prayers)
2 tablespoons of grated Ginger
1/2 teaspoon of Cinnamon
5 tablespoons of COLD Evaporated Milk
2 tablespoons sweetened Condensed Milk
Paag or Sugar Syrup:
1/4 cup of Water
1 teaspoon grated Ginger
3/4 cup of Granulated/White Sugar

    Hey everyone! It's 3 years after posting this video and I know most of you might come here looking for Divali recipes. I noticed that a few people had an issue with the wearing of nail polish, my "dirty" pot and the sound. I agree that nail polish was probably not the best idea, and I've worked on getting better sound in my present videos. If you are familiar with cast iron pots, they don't look very pretty when they've been used for years. You're not supposed to scrub off the "seasoning" on the pot. Every true Trinbagonian owns a pot like this. Scrubbing with metal is actually worse for the pot and for your health (it is actually linked to Alzheimer's). Thank you again. I've taken your criticism and will work harder on producing better videos.

    If you're cooking everyday the pots gets aged, in big restaurants the pots are the same cuz it's being used everyday. Maybe some don't use their pots so it remains like new. You're doing great reshmi, love the way you cook and explain every step of a recipe. Tnx

    Hi, I have to say thank you so very much, your video was awesome, I never had any intention of making kurma until I saw this. It was the first time I ever made and not only was everyone impressed I impressed myself, you gave me confidence to try things I never thought about doing before.     We make same sweet with little variation in Fiji islands during festivities and mostly Diwali. We roll it a bit thinner and our pieces are about 2 inches long..called lakri mithayi.

    +Magdalene Mitchell It's actually not a very hard kurma, it's more flaky. Maybe your oil was too low and it absorbed too much oil. I'm not sure where you went wrong.

    Hi Natasha! I love all your recipes and have tried quite a few of them...with good results. When I make kurma, I add the kurma to the paagh. I see that you add the paagh to the kurma. I should try your method. I have a suggestion regarding music: Can you turn the volume down while you are speaking? Also, for your Indian recipes, some quiet Indian music in the background would add to the ambiance, don't you think? Thanks again for all your great recipes. I do not care about nail polish. I have to admit that my iron pot is well used and looks like yours!

    Hello thank you for your recipe, I am trying this for the second time. First time was great and that’s because I followed your written recipe. However, no offense I noticed some discrepancies with your recipe, you used 1/2 cup of butter in your video but your recipe states 1/4 cup, carnation milk was not enough either but I winged it, lol. Thanks again though but maybe update the buyer information and I loved mine was soft and flaky. Good job overall.

    My daughter is dairy free and I'm struggling to find a dairy free butter that will work. The kurma just breaks up. I can make it totally fine with normal butter so I know it's not just me lol. Any advice?

    +Michael Star Hey! This Kurma is not like the traditional one you would find in Trinidad. It's much more rich and flaky, but not soft. I'm thinking maybe your oil was a little too low when you fried it and it probably absorbed too much oil.

    I'm requesting video uploads for your versions (if you know how to and have access to the ingredients)of: - curry fish/goat/duck/shrimp/crab - drinks: mauby, sorrel, ginger beer - bhaiganee - chokas: tomato, ochro, bhaigan, etc - kuchourie (not sure of the spelling) - punches: banana, peanut, soursop, etc mind you, I know how to make some of these and don't mean to give you work. but as a fellow proud trini, I just thought I would encourage you to put more of the tastes of Trini out there. and I am clueless as to how to produce and upload videos and don't have d equipment either. still, be encouraged. TX 4 your work. congrats.

    +Janne L Thank you for watching and I love all your suggestions! My channel is still young (2 months ) so I still have a lot more videos coming up. I only post 2-3 videos a week so it will take a while but you'll surely see these recipes in the near future. Thanks for the encouragement! I actually don't use fancy equipment- I use my phone to record, a lamp as my light and a cheap tripod ($10US) lol.

    Welcome! The syrup will start to stick to the back of the spoon and when it drips it will have a thread like consistency

    Not hours lol, don't put too much water. However, if that's the case then yes you will have to leave it until it gets to the consistency of how mine is

    Good Morning Reshmi! I wanted to know if where I can purchase a tawa (whether online or in a store you know of) that's around 18" in diameter. I only have a 12" one. I'm located in NYC. Also I wanted to know which stores I can purchase curry leaves and pudina?

    Dee TheEmpress HI good morning! Liberty Ave is where I get my Tawas and curry leaves. Ace West Indian store has everything from Trini, go check them out. 110th St & Liberty Ave. let me know if that helps ☺

    +Taste of Trini hahahaha well its soo simple ull laugh... just knead plain flour with fresh coconut milk or a rich tin version of coconut milk. and a sprinkle of cardimon powder for taste bout a teaspoon. add a lil spoon of soft butter to the mix,this stops it sticking as they fry as it will all seperate in d hot oil naturally. the dough must be kneaded soft like sada roti. so its easy to measure the flour to coconut milk ratio. roll d dough out lika a sada roti dough. i use a pizza cutter to cut them into kurma size thin and small lika pinky finger... fry til golden... for the phag its same as you did. just add fresh grated ginger a lil cardimon n sugar. bring to rolling boil. then add fried kurma to mix wen ready. try this one...youll wanna marry meee 😆😆😆 a londoner

    GREAT VIDEO love the way you explain everything but honey i must say that nail polish on your hand urks me alot it pretty unsanitary especially when kneading flour goes against culinary codes that nail polish can flake into the food and contaminate it you should probably try using gloves or just forget about the nail polish especially if you cooking for other people as a profession
