    Simon, I'm learning with each video but my confusion is over the moisture content of clay for throwing. I seem to do better with very soft clay but of course it is then like working with peanut butter. Do you perchance have a rule of thumb on this issue? You have plenty of videos on wedging and kneading but I've missed this bit, cheers, Andy (Lincolnshire)

    I like that fermentation jar but I guess the groove has to be a lot deeper. Otherwise you´d have to refill it a lot because the water evaporates and you don´t want the water to spill when refilling. About an inch deep would be right. That´s what I´ve seen on other jars like that.
