@@hoybastien OH BOII HAVE I WAITED FOR THIS! To keep it simple, think of it like cheese, different breeds of durian have different flavour, smell, and texture profile. From my own experience the biggest difference is in flavour, and I seperate them in these categories: 1) Cream-ish sweet 2) Sweet with slight bitterness 3) Sweet with flavourless aftertaste 4) Bitter with hints of flavourless 5) Flavourless with mix of bitter and sweet hints The top 3 are what people generally want when consuming, personally I prefer it to be Sweet with slight bitterness as it balances the creamy taste, but the bottom 2 are what most consider "cooking durian" which is used for making "gulai" (comparable in shape with stew or curry, made using various ingredients sometimes containing fermented durian), tempoyak (a type of fermented durian used to enhanced flavour in cooking), porridge (doesnt contain grain rather just durian), dodol (a type of sweet made by long hours of cooking sugary stuff generally containing durian), and more. Of course, different breeds will produce different taste and smell, this is further complicated when involving "un-fresh" or frozen/exported durian which are generally bland. As for the smell, some durians produce a flowery or creamy smell, while some produce what some say "smell of petroleum". In the current market, the main rivals for durian production is Malaysia with Indonesia in VERY close second, Thailand has quite the industry however they are quite known for having mostly bland durians. Here's a trick for finding good durian by the way, the smaller the durian and sharper the thorns, the higher chances of it being either creamy-sweet or creamy bittery sweet. Some of my favourite durian that I would recommend would be: 1) Durian hutan (or wild durian) However be warn, it is quite strong and can cause some to get fevers. 2) Durian kampung (village durian) a more "tamed" variant of the wild ones. 3) D24 Some would argue the Musang King is better, but well it is up to one's taste.

In the UK they wrap the Fried Fish in Newspaper to soak up the extra grease and serve it that way to be sent out to the public.

Looks like London fish and chips from the kebab shop! Fish and chips is usually more chunkier and golden overall, and best coming from seaside parts of the country, where the seagulls steal your food :) thanks for the vid :)

That was not a real English fish and chips, not quite. Those were french fries not chips and there should have been extra salt as well as vinegar, most people, including me, typically put on a lot of salt and vinegar. Also, it should have been pretty greasy lol.

They did a pretty good job, though. When some were saying the fish didn't have much taste, I figured they used a local fish because the ones I have tried always had a strong fishy taste.

Seaside fish and chips. Definitely. Much better than what they have served up. Mushy peas, pickled onion, pickled egg, salt and vinegar, tartare sauce.
