Trapani Couscous in Milan Cooking Lesson at a Villa in Milan - A Milanese Evening [Italy Vlog #66]

Hello from Italy!
I am Morimi from La Cucinetta.
Living in Milan, I import and introduce Italian ingredients to Japan with a lot of care and love.
In this vlog, I learned how to make Trapani couscous from Ms. Monia from Pantelleria, Sicily, at a friend's house.
It is one of the traditional Sicilian recipes that I have always wanted to learn.
We also had a dinner at the home of Paolo, a hobbyist from Milan.
I hope you'll take a look!
Cous Cous with Trapani Directions
Ingredients for 4 persons
300 g couscous
3 zucchini
1 red bell pepper, 1 yellow bell pepper
2 large eggplants
Olive oil (for frying oil, soup, and couscous)
Half a garlic clove
1 onion
1 celery stalk
2 tablespoons tomato paste
1. cut zucchini, bell pepper and eggplant into dice.
The bell peppers should be slightly larger. 2.
Fry each vegetable in olive oil for a long, slow fry. 3.
Drain the oil from the vegetables and set aside on a plate. 4.
Put olive oil in a pan and add the peeled garlic, onion, and pepper, cut into wedges, and the onion, cut into wedges.
Add the peeled garlic, onion cut into wedges, and celery cut into chunks.
Sauté slowly over low heat. 5.
Bring a large pot of water to a boil. 6.
6. dissolve the tomato paste in a small bowl with the hot water and add it to the pot of aromatic vegetables. 7.
Add about 1 liter of hot water to the pot of aromatic vegetables. 8.
8. add the filleted fish to the broth. Add the chopped Italian parsley to the soup. 9.
9. drizzle the couscous with olive oil, add the boiling water from 5 and mix well. Then add the broth from 8.
10. season each fried vegetable with salt.
11. mix the Italian parsley into the couscous, then mix all three vegetables into the couscous.
12. simmer the soup for 15 to 20 minutes, then turn off the heat and drain the fish.
13. place the couscous on a plate and place the fish on top of the couscous. 14.
14. when ready to eat, pour the fish broth over the fish and Buon Apetito!
