Note that the vertex can be located from the vertex form by plotting (-h, k).

what does reflected across the x-axis mean?

it means that the a variable is negative and the parabola flipped over the x-axis.

wait for the one at 8:12, won't it be -2, since it was at 5 before, 7 units down will actually make it -2, not -7

You can use quadratic equations to find a neckline if you make clothes. The vertex would be the bottom curve of the neck and the x-intercepts are where it joins the shoulder seams.
