Traditional French Knife: Laguiole en Aubrac
Ойын-сауық
In this video I'm taking a look at a famous traditional French knife. The Laguiole was born in 1829 and is deeply rooted in the culture of shepherds, farmers and cattlemen in the region around the small village Laguiole in Southern France.
My Laguiole knife is from the renowned manufacturer "Laguiole en Aubrac" and was crafted from start to finish by a single cutler.

Wine, cheese, baggette... and don't forget the babe! What a FANTASTIC video - this is a new quantum leap for your style. Well done, Herr Schmalhaus!
About "the fly" : It's definitely not a fly but a BEE. Even French people like me got confused. In traditional knife making we name the metal part on the top of the spring "Mouche" which is "fly" in English. It have been used for centuries as a part of the mechanism to lock open the blade. It was just a simple coin shape piece of metal. Around the end of the 18th century, the Laguiole knife (forget the "G" and "U" and prononce LaYOle if you want to sound "connaissor " and authentic), started to move from an humble paysan knife to a more luxurious item and began to have decorative "mouche". The first motifs used to be flowers or shamrocks sculpted into "the blade spring brake". But "The Bee" design only happens in 1908 as a signature for this type of knife. Napoleon and his victories were gone for ages so far ! This celebration story is only an urban legend that have been spread for marketing purposes over the years. Hope that feeds anybody's interest and curiosity.
A knife fully of french tradition! Beutifull combination of materials. Elegance for gentlemans.
definitely add more history and anecdotes, that's why us knife nerds are here for!
I just received a Laguiole Tradition knife made in france as a gift mine has horn handle scales and 12c27 blade steel, It will make a wonderful pocket knife and your video was most infomitive thank you!
very interesting. its very nice to have a single cutler finish a quality knife. its almost custom to have the cultery engrave his own mark. and the card included showing the different makers is too sweet.
I have a very nice one I bought a few days ago from a small shop in laguiole. It is branded as Glandieres a laguiole and the handle is made of juniper. Really nice knife I must say.
Thank you for this wonderful review. I really enjoyed learning about some of the French sayings and traditions. I got my Laguiole for Christmas and love it.
Great video your getting better with each one your English is spot on too keep it up I'm ordering a knife today
I really enjoy your videos Stefan, thanks for the work.
very cool video. I loved the history. Can't wait to pick one up
You could never bore me with too much history. You really should do an extended video of the history and stories of the Laguiole.
Thanks for the Great review/presentation. I was looking at several models from Laguiole en Aubrac. Having seen this and getting an appreciation for the blade in hand. Makes it more exciting as I wait for mine to come home! Happy weekend to you!
Beautiful knife. Stefan as usual a wonderful review and we are never bored with the history. It's what makes your review unique.
I'm going to have to add this to my ever growing list of knives to buy.
Excellent review, Stephan, very interesting and informative. I find your reviews usually head and shoulders over the majority of the ones on our side of the pond, sorry to say. Keep up the good work!
I own two of these knives...a black horn handle and a rams horn crust one. They are awesome. Also my corkscrews are Laguiole.
Your presentations and reviews are excellent,so much in fact that upon viewing this video I purchased a Laguiole by Robert David from Thiers. The quality is outstanding,as it appears to be a work of art than a mere knife and the prices in Canada are very reasonable. I would recommend youre site to anyone that is into high quality cutlery.
Great review with good information. I received my first Laguiole as a gift more than 10 years ago. I didn't know about that knife before, but I know quality and good design when I see it. You added to my knowledge and I thank you for that. Now if I just had the bread and cheese...
Informativ und sympathisch vorgetragen, wie immer. Danke! 👍🏻
Ive just bought one of these due to your video. Mine is the 11cm ebony handled one. Excellent video, love the history lesson behind the knife which Im trying to remember so I can recount it when Im showing friends my knife.
I've been a knife collector for many years and I watch many reviews of knives on KZread but find myself not making it to the end of the video.… You certainly have kept me hanging on the whole time very informative well-done video.… Can't wait to purchase one of my own
Thank you. Your video was enjoyable and informative.
An excellent review, and a beautiful knife.
I acquired one of these knives,very nice addition to my collection.a true gentlemen's knife.i would love to carry it more often but don't want to lose it. They are rare in Canada and expensive.
Fantastic review. Informative and entertaining too!
your best video yet I say thanks for the info
Thank you for an informative video.
Cool knife review the spine looks great on this folder.
I love it, very nice knife.
Nice review, and I liked the history behind the knife itself. Very informative, and really like the beginning with the wine, cheese and bread. Very Classy. Thanks for the review.
Great video lots of info and has helped on my next knife purchase of a Robert David Laguiole Pocket Knife.
Nice knife. Thanks for the great review and history lesson.

@Stefan Schmalhaus any experience with the fit and finish of Au Sabot's Languiole and Le Yatagan knives? They are a bit cheaper than Laguiole en Aubrac and I wanted the community's input on their quality. Many thanks!
Fascinating Stefan! Thank you for the history lesson! I subscribed to your channel. 👍🤗❤️ Best wishes from the UK! 😊👍👋

Thank you! I'm currently working on a video about some Laguiole myths.
Beautiful knife and very informative video
I got one in 10CM from Laguiole En Aubrac after your review! Thank you for that! But I am getting minor side to side blade play with mine. Also, the lower part of the blade, probably the last cm closest to the handle refuses to retain any workable edge. And I have tried sharpening it several times. Do you have this problem with your knife? I use a mixture of fine and ultra fine stones from spyderco.
That was an excellent review...
I was just gifted a Laguiole en Aubrac with Laurent's mark and an ebony handle. It's so beautiful that I hesitate to use it.
Thank you for the very informative video. I have a Laguiole knife and enjoy it very much.
very handylooking beautiful
Is there a notable difference in quality of fit and finish among the authentic Laguiole knife makers? If so, which are best?
Just bought the exact same model than found this video!
A beautiful knife
Another great review. Other youtube knife reviewers could learn a lot from your production values. Please, keep them coming. Cheers from Canada.

Hello Stefan.do they sell okapi knives in germany.im looping for one but here in netherlands they dont sell it.greetings
Lovely video. Like the Leica pre-M cameras these knives are, to my opinion, more ergonomically satisfying than many of their modern counterparts. They do indeed find a natural place amongst the essential French picnic components of baguette, saucisson sec, cheese and of course the inevitable Bordeaux. The Pataud version with the stop and the lock seem to be sensible design developments but my mind is conflicted on the corkscrew addition. Once again thankyou for taking the time to prepare such a comprehensive introduction.

The epitome of elegance.
So an Opinel is like an Volkswagen, while a Laguiole is an Audi?

This is just a beautiful knife! Very classy:) Thank you for the review! I'm not looking into acquiring one myself!
Shape and overall look reminds me of a fishing knife. While the fishing knife has no back lock. the handle shape is a sure grip for wet hands and the knife has an additional blade used to scale fish and remove hooks. Looks as if the fishing knife is patterned after the Laguiole. Fun to see how knife designs have been modified for different uses.
What’s your thoughts on Laguiole en aubrac knifes without Laguiole Origine Garantie on the heel of blade ? Can there be authentic without it ?
@StefanSchmalhaus
3 жыл бұрын
I know that some of the Laguiole en Aubrac knives don't have this specific marking but this doesn't mean that they are counterfeits. It's more important where you buy your Laguiole knife. Make sure that you buy from an authorized retailer.
@BardofCornwall Thank you for your very kind words!
Can you please specify the exact model and description of the knife in your video? Thank you.
@MultiEliaz Please remember that most Laguioles are slip-joins so it's not fair to compare them to let's say a Spyderco Manix. It all depends on your EDC needs. Fontenille Pataud produces Laguiole knives with a lockback.
One question, what is the name of the music you use as BGM for this video?

@bamtroop Wow! How did you find out? ;-)
I found a Robert David Laguiole i really like, are they any good?
so williams sonoma sells En Aubrac 6-Piece Mixed Wood knives, but I don't think they fold. Any opinions on that?
@jester02k Thanks! I'd love to see a video on your Laguiole.
How large is the one you're holding in this video? I just received my 9cm and it's....tiny!
Nice !
Very very good

@@anirudhmoudgal Au Sabot makes very budget-friendly knives. As for the build quality, it wouldn't be fair to compare them to premium brands.
Found a look alike Laguiole with the brand name Soprorga ,is ther anybody who has info please
How many cm is the blade?
What are your thoughts on the Lee Valley Laguiole? Not sure what brand they have at the store though.
@StefanSchmalhaus
10 жыл бұрын
Please note that Lee Valley is a knife retailer and NOT a Laguiole brand. The Laguiole knives they sell are made by Arto (Arthaud Chosson). This brand is easy recognizable by the sea horse logo The knives are ok I guess, I've never had my hands on one though.
Do you know of any books written about the Laguiole knife?
Merci Bien
I think i want one of these knives now.
@cumbas No problem. Believe what you want.

I was fortunate that my late uncle left me a set of Lagouile steak knives of the least quality in his estate At least it is a start Now I have a taste for better quality French knives
A terrific reveiw of a great knife. However, I have the inferior model and I am pleased with it anyway, even though the bee symbol is welded on and the blade is stamped. It came well packaged with the certificate inside the box, Coutellerrie Laguiole Actiforge. Made in France. The blade is 12 C 27. Incidendently, this blade is stainless steel and cannot be forged. It is stamped as the one in your video would have been too. C 100 is the material that can be forged so I have read. Best regards, Ray
@Gabbeitec ???
The by far best book about the history of the Laguiole knife is this French book: Christian Lemasson, "Histoire du couteau de Laguiole" I'm not sure though if it is still available.
@Georgiastonewall Congrats on your Laguiole knife! I'm glad my video was helpful to you.
Love your videos and your style of details. Thank you. A quick question, you mentioned the 'inferior' Laguiole has the fly welded in. Do you mean the fake Laguiole or are there inferior but at the same time genuine Laguiole?
@StefanSchmalhaus
7 жыл бұрын
There are also French manufacturers who offer inexpensive Laguiole knives with welded bees. I wouldn't buy them though.
@PavlovSandor In a world where almost everything is made by machines it's good to have a few things that are still made by skilled craftsmen. - Thanks for watching!
Seems you use this knife to cut most of bread and fruit, how long do you need to sharp the knife? and how to properly care for Laguiole knife? Please reply. Thank you ---Harold
May i ask the size of this knofe ?

What is the purpose of the spring if you have to open the blade by hand?
@StefanSchmalhaus

Are you new to the knife world? It's a slipjoint knife, the spring keeps the blade open. Don't confuse this kind of knife with knives that have a spring-supported opening mechanism.

Lol ok, you're right. I make a mistake..in french, "bois d'amourette" and "bois de serpent" are two diferente wood...the traduction of bois de serpent in english is snake wood...but it not designate the same wood in english and in french...so sorry, you re right!
@MultiEliaz Why not?
Stefan, is this the 9cm, 10cm, or 12cm version? It is beautiful! As usual your review is a wonderful one!
