Traditional Flammkuchen - Tarte Flambée

This is a speciality of the historic regions of Alsace.
Recipe for 2 servings.
Ingredients:
250g flour
125ml lukewarm water
½ tsp salt
2 tbs oil
Method
10 min kneading, until you get a smooth dough.
Let the dough rest for 15-30 minutes.
Meanwhile you can prepare the topping:
Traditional Flammkuchen:
Crème fraîche (30% fat), salt, pepper
Thin sliced white onions
Bits of “speck” or smoked bacon.
After baking, decorate with chives.
Topping for vegetarian version:
Crème fraîche (30% fat), salt, pepper
Thin sliced (red) onions
Baby spinach
Feta cheese
Olive oil
You can vary with any toppings you like, as long as you keep the crème fraîcheas a base, and be generous.
Salmon, asparagus, goat cheese with honey, mushrooms, grilled vegetables, etc.
Bake in a pre-heated oven at the highest possible temperature (we did on 250C = 480F)
Depending on the oven, between 7 and 10 minutes.

Beautiful work, you deserve many more subscribers. Too many food channels waste time with too much narration and hosts tend to yell excessively. But this is very soothing to watch. When I try it I might add a bit of Gruyère on top.

Salut je suis de Strasbourg. C'est mélange de fromage blanc et crème pas juste de la crème. Les oignons doivent être blanchi et les lardons précuits sinon bonjour le mal de ventre après 2 flams.

Hi Letty, bake it at the highest possible temperature on your oven. For me it was 250C (480F). You can find it in the description. Thank you for for watching!

Recette pour 2 portions. Ingrédients: 250g de farine 125 ml d'eau tiède ½ cuillère à café de sel 2 cuillères à soupe d'huile Méthode 10 min de pétrissage, jusqu'à obtenir une pâte lisse. Laisser reposer la pâte pendant 15 à 30 minutes. Pendant ce temps vous pouvez préparer la garniture : Flammkuchen traditionnel : Crème fraîche (30% MG), sel, poivre Oignons blancs tranchés minces Morceaux de « speck » ou bacon fumé. Après cuisson, décorer de ciboulette. Garniture pour la version végétarienne : Crème fraîche (30% MG), sel, poivre Oignons émincés (rouges) Bébé épinard Feta Huile d'olive Vous pouvez varier les garnitures de votre choix, à condition de garder la crème fraîche comme base et d'être généreux. Saumon, asperges, fromage de chèvre au miel, champignons, légumes grillés, etc. Cuire dans un four préchauffé à la température la plus élevée possible (nous l'avons fait sur 250C = 480F) Selon le four, entre 7 et 10 minutes.

@@christophelanguedoc6398 Je ne le conseillerais pas. la pâte ne contient pas de levure et peut durcir. vous pouvez préparer la pâte jusqu'à une heure à l'avance.
Olivenöl sollte dort verwendet werden, wo es hingehört - in der mediterrane Küche. Ansonsten sehr ansprechendes Video und ein Rezept, das man nach sich merken sollte.

hallo Alin ! eine Frage noch: nimmst Du 00 Mehl, wie der Italiener für die Pizza oder doch 405, wie wir es alle kennen ? wie vorsichtig Du den Speck schneidest, . . . als wolltest Du ihm nicht weh tun ! Er kommt doch sowieso in den (bösen heißen) Ofen

Hallo Andy, ich habe Weizenmehl Typ 405 verwendet. Und das mit dem Scneiden… wenn die Kamera an ist, werd ich ziemlich nervös 😅

I followed the recipe, but I got a big bubble that displaced the toppings. Any tips? Should I poke it with a fork after rolling?

Hi Sebastian, bubbles mean air is captured in the dough. Usually it can be a few harmless bubbles, never had one big bubble. Poking with a fork is a good idea.
I think I'm doing the vegetarian recipe with bacon 😉
Question: is it traditional to not leaven the bread?

Yes, if you use yeast, it will get more like a pizza. Traditional Flammkuchen is not fluffy and airy

Nein, traditioneller Flammkuchen wird ohne Hefe zubereitet. Somit bleibt der Boden dünn und knusprig 🙂

Hi Don, traditionally no yeast is used. This is the reason why it stays crispy.

It's not the traditionaly receipe.
Gelingt leider nicht wie im Café. Das Rezept ist mangelhaft.
