Tortilla de Patatas

Ingredients
- 2 large brown onions, sliced thin
- 4 large potatoes, peeled and sliced thin
- 500ml olive oil (it's a lot I know… but you won't eat it all)
- 6 eggs
- Salt to taste
Method
1. Start by heating the oil in a large frying pan on medium heat.
2. Once hot, add the potatoes and onions.
3. Cook this for 10-12 minutes or until the potatoes just start to soften. You don't want to have this on a really high heat as you don't want any colour.
4. Once the potatoes and onions are cooked, drain the oil from them (don't throw this oil out, it's still perfectly fine to use just keep it in the fridge container until you need it).
5. Whisk together the eggs until they are homogenous.
6. Add the cooked and drained potatoes and onions back to the pan, season with salt and stir.
7. Now pour over the egg mixture and cook, scraping down the edges over medium heat for 4-5 minutes.
8. Once you can tell the base has started to set, place a plate over the frying pan and flip, sliding the tortilla back into the frypan to continue cooking.
9. At this point, you can cook this completely through or still leave it nice and runny in the centre.
10. Enjoy!

As a Spaniard: I see a lot of people complaining about mixing the eggs before or whatever... Spanish people are always super proud and protective of their tortilla but it's never that deep. You can go to 10 different houses in Spain and probably get 10 tortillas made in a slightly different way, but they're all bomb anyway, just like I'm sure this one was great. No mercy for people who make tortilla sin cebolla tho

From spain here!! That looks delicious and you have respected the recipe really welll. I recommend mixing the potatoes with the egg on the bowl while the potatos are hot, so they start sort of cooking the egg and also becoming a more homogeneous paste. Then drop the mix in the pan and flip it soon, so its nice and super juicy on the inside.
You just earned my eternal respect my man. Someone who's not from Spain making a tortilla as it should. And with onions to top it. Hats off.

Fry the onions separate until reaaaaly done like brown and very mushy. Then fry the potatoes. Then mix all together with the eggs. Than in the pan

Andy next time pour the eggs mix in the potato onion mix before the pan and mix it there, then use a slight smaller pan but taller for taller thicker and creamy middle. Cheers from Spain.

Felicidades from a Spaniard. A perfectly made tortilla. As a tip, I mix eggs with potatoes and let it rest for 3/4 minutes. I dont know what happen there, but it makes tortilla silkier than just mix and cook it. Congratulations for your content

@@oooxxx967 first fry potatoes with onion (or not, as desired), then wisk eggs and put drained potatoes (but still warm) and let it rest for 3/4 minutes. You will notice that eggs become like a cream. That will make your tortilla silky and juicy

@@falcon_emotions Probably starts cooking the eggs a little bit and homonegenously too and some of the starch in those potatoes has time to migrate in the fluid so that it all comes together nicely. This is also probably why when you barely sear the tortilla on each side afterwards the center doesn't feel quite raw

Yup, I like mixing the salted eggs with the potatoes (after you fry the potatoes) for at least a few minutes, overnight in the fridge if I have the time and then cook the omelette.

Travelled with a backpack for a month in Spain when I was 20. That eggy potatoey goodness and Pan con tomate were the main two reasons I got up for breakfast. Jesus, I want that now.

It's very easy to make.:) One of my favorite meals to make.
I studied abroad in Spain and this was my favorite dish I brought home! My host mom's was amazing. It's lovely to see it made again!

My Nana made this for us, but she is Sicilian, and when she was a kid, her mother made this for her too. We call it Frosia. The only thing difference is that we add Parmesan cheese to the egg mixture. Flipping it on a plate exactly how you did It, is how I learned. A wonderful dish❤

Wow! This is the first time I have ever heard the term Frosia instead of Frittata. I'm an old lady now. Grandparents from Sicily. My Mom used to take the leftover egg batter and seasoned breadcrumbs from whatever she was frying, mix it up well, and proceed to fry it like a big pancake. Delicious, and she called it a Frosia!
I just had my mom make this for me yesterday for my birthday meal! Torta de papa española!

This dish is excellent. The first time I tried was in Spain. I recommend a little grated tomato on top.
Good stuff! That looks real good and juicy! It is interesting how every family's tortilla española tastes diff with the same ingredients. Our house, we do smaller diced potatoes, slightly smashed with a fork after cooking in olive oil. We also use a small amount of onion or pre-fried onion for just a hint of onion taste.
That looks like it should be a breakfast dish (or something Andy would make when Mitch says, "potatoes").

Couple mistakes: You need to put the onions into the pan first otherwise it won't caramelize easily. And most importantly you need to crack the eggs into the bowl of of fried onions and potatoes mix and let it sit there for 30 mins then cook it. 5/10

This reminds of a dish back home (Tanzania 🇹🇿) called "Chips Mayai" or "Zege". You put together chips and eggs and serve with Kachumbari (salad). It's amazing

That's a Spanish and Cuban dish we picked up from our Spanish descendants called a tortilla de huevo. One of the very first dishes I learned how to cook when I was a kid it's delicious.❤️❤️❤️

Almost there. Dump the potatos and onions in the egg mixture. Mix al together and leave for 10-15 mins. The mixture will cool down and thicken up. Then you proceed to make the tortilla as shown. End result is a tortilla with a gooey but still coherent centre.
Yoo I don’t think I seen a tear drop when you cut those onions legend 😂
I'm Spanish and is first time I recall a foreigner who mades a proper Tortilla de Patata, o Spanish omelette as is also known. And of course with onion! If I would do it for myself I would let it a little less on the fire to be a little bit creamy, but is a personal taste. Well done, mate

@@justanotherlistener6373 toast for about 2 minutes on each side in butter on medium high heat (keep flipping every 20 seconds after the 2 minutes until the colour is perfect)

Potatoes and onions go lukewarm first into the eggs so they start cooking with the residual heat. Then the whole mix goes to the pan. I like it gooey inside which doesn’t seem to be the case here but that’s a matter of taste. Overall a good attempt and I’m sure it was deli

Now, this is something I can make, as (1) I have all the ingredients; (2) not complicated nor complex. Read a few comments that mentioned to add the potato & onion mixture to the eggs, to start the cooking process, use a smaller pan for thicker omelette, and someone mentioned adding a few other items - chorizo, jalapenos, and ... can't remember! I will be happy with just the original 3 ingredients. When I watched him slice potatoes AND onions, I was ALL in! Now I know what's for dinner!!! I also love how Andy gave Baba A slice, while he took the pan!!! That's what I'm talking about!!

You did pretty well. Just some advice. The potatoes and onions get mixed with the egg in a bowl, and later you add it to the pan. You don't do the mix in the pan. Also, the omelette was a bit overcooked. You can see it by the inside, when you cut a piece. It's too solid and dry. Other than that, fairly good!
