I wish we saw more of this ability in the anime. Unfortunately, it got the Ninja treatment and only appeared once and then never again.

I think it appeared in one more episode? specifically the one where everyone thought that annoying yellow bird was the descendant of a pirate or something like that. the battle was underground and in a much later episode (one of the final ones maybe?) I do agree though, mirror didn't get the justice it deserved

Well the anime Kirby is by design more of a baby than the game Kirby. It's reflected in how Kirby in the anime doesn't really understand their own powers and lacks maturity and confidence compared to their game counterpart, making 'em much more easily scared and prone to running away, unless there's someone else there to act as voice of encouragement telling 'em what to do.
