Can you just plug the Audio Technica mic straight into your Xbox and have it work? I can't seem to find a source that confirms this

You may have to use a 3.5mm cable & an adapter that connects to your Xbox controller. I recommend checking Xbox' site for any tutorials/added information.
And these usb mics only work while using Lightstream? Or can they be used all the time?

I have a headset I can plug into speakers to work, will these mics need to connect to my controller or my Xbox itself? if the controller I'm pretty sure I don't need a spliter

With an USB mic you can just plug it in to the ports on your xbox
If I have the mic plugged into the xbox am I able to have headphones plugged into my controller?

You should be able to, but please note: you will still need to use a stereo adapter/3.5mm splitter for your controller and 3.5mm audio cable in order to work. This is for the Xbox One and Series S. Most compatible microphones use the USB to draw power.
Is there a way to plug in a blue yiti to light stream and use the mic from there and use the headset to hear game ?

Absolutely! You can add a mic that's connected to a laptop/PC and continue to use your Xbox headset on the side.
