Created by Julio Bermejo at a restaurant called Tommy’s in San Francisco. According to Robert Simonson it came together over the course of a decade so no exact creation dates are available. The Tommy’s Margarita was the restaurants flagship margarita put on the menu by bermejo and what made it special was that he took out the Orange liqueur and replaced the simple syrup in modern recipes with Agave. Boom! A legend was born!

1 1/2oz (45ml) Reposado Tequila
1oz (30ml) Lime Juice
1/2oz (15ml) Agave
Kosher Salt for Rim
Lime wedge Garnish

    La Gritona is a fantastic and sustainable Repo Tequila distilled (and owned) by women. It has been my go to for Tommy’s Margaritas and it makes me super excited to see you use it in this cocktail as well!

    Judging by most bars I've worked at this seems like a very clever (but admittedly tasty!) ploy to cut down on spirit costs. For cocktails, but thank god they did.

    The way I always made it was to remove the triple sec and make up the missing liqueur with tequila, and with current prices of tequila, that actually makes it more expensive to make than a regular margarita.

    Serious question, but what would be the point of taking out the orange liqueur? To me that's what really makes a margarita a margarita and not just a sweet-n-sour tequila. Though subbing the simple for agave syrup seems like a no brainer to me and I can't believe I've never thought to do that

    In the original Margarita the Orange liqueur is the sugar content but because it’s a liqueur and doesn’t have enough sugar to balance the citrus yet if you leave it in and add agave the drink is too sweet. That said I love to up the lime and split the Orange liqueur with agave, to me that’s the best build. Another good way is to take out the Orange liqueur, use agave and shake with an orange peel to get the orange flavor back in. Many many ways to build drinks…

    Skip the orange bitters and orange liqueur and use an orange oleo saccharum for the sweetener. Plenty of salt on the rim, tajin if you've got it. Best marg. Period.

    I do a Mezcal float, of course its not the same cocktail, but it is a great variation for my taste

    The only way I do it. I never really got why there was Orange liqueur in Margaritas. I usually skip Orange Liqueur for Mai Tais also crazy as that sounds

    Yeah it’s real easy to act cheeky about this now, there’s agave in almost every drink but the REASON for that, the reason agave is such a no brainer is because of this guy.

    this is not a thommy margarita, they never use garnish... this is your version of this cocktail and not the original. that should be noted!
