🍋 Great video, as always! My go to Summer cocktail. I sometimes use Tanqueray Rangpur Lime to boost the citrus notes, but I will be trying your method soon.

🍋 Another exquisite cocktail time!. I've been experimenting lately. I' macerated the peels of 6 Lemons in 460 ML of 190 proof alcohol (Everclear) for about 4 weeks, the basis for a Limocello. I add it to cocktails and sip it with ice and soda water on its own for a fresh citrus drink. Cheer🍸
Could you make an elevated bushwacker drink? it just seems like it has so much potential and could really fit your style of cocktails too!

Hey Kevin, question kinda unrelated to this video😂. I love your batch cocktail videos (please make more btw). I was wondering, for a batch drink like the margarita can you just add water to the batch for dilution and make a completely ready to pour version of the margarita? This would avoid the need to shake and I was thinking it would be easier, let me know if I’m wrong though, thanks!

Hi! Diluting it would only make sense if you have it on tap because the gas will give you similar texture/text as you can get with shaking (check out my tap cocktails episode for more on this). I wouldn't recommend it to dilute for a ready to pour version.
🍋 ive been playing around with using lemon in tiki at the bar I work at. Using some lemon, sake, salted honey syrup with centrifuge washed rum and tepeche riff. Fusing together elements of Japanese cocktails with some tiki for the spring/summer

Favorite 🍋 cocktail? Hard to say. The tenebrous/tempestuous is great for a buck, the Ramos gin fizz maybe doesn't count with the split citrus. I'm pretty into the Army&Navy right now. Insanely simple gin sour, but the orgeat and bitters completely transforms it.
🍋🍸the hardest part of gin cocktail for me is finding one that isn’t juniper forward. It reminds me to much of mosquito spray, gunpowder Irish has been a success

Use this cordial in two weeks but it should be good for at least a week loger. Acids here are great preservatives. Cheers!

🍋 Cordials are the best! If you have some on hand it's easy to make cocktails and mocktails in a pinch

I worked with what I had to make cordial/super juice: ascorbic acid, it turned out fine. Would there be any drawback with ascorbic vs citric/malic acid?

When you're using agar agar to clarify cocktails, have you ever thought about using less water in the original cordial and then when heating up the agar agar just throwing it into the missing water later. So for this recipe: at the start use 110ml of water when prepping the cordial, add the ingreident, blend... Then add an additional 40ml of water into the pot for heating and add the agar agar into that, so that way you don't have to worry about heating up any of the components of the cordial while heating up the agar agar.

I read about this method in Liquid Intelligence, where Dave Arnold clarifies lime juice like that. I would say it's better than my method here, so you can, of course, do that too.

For those of you without spruce tips at hand, the company Juniper Ridge makes a Spruce Tip Tea in teabags that could be used as a stand-in. Edit: It's called Douglas fir spring tip tea.

I neeeeed to get citric🍋 and/or tartaric acid from somewhere.. I see it come by in your videos all the time but I cannot find it anywhere..😢. Also, spruce tips are such a local ingredients, I'll try and use kafir lime leaves, see what that brings me!

I feel your pain with local ingredients-the elderflower foraging broke my little heart. I do have spruce access, though. In the United States, you can find citric acid with canning supplies in most big stores. Other acids I have to order online. I keep citric and malic, but I also want to see if I can source lactic-so good for mouthfeel in cocktails.

@@HighKingTurgon that mouthfeel is so important right? Made a non abv cocktail the other day and it just doesn't taste the same. Made a milk washed cocktail after that and it was fantastic. I live in The Netherlands so finding the right stores and spots can be different than what you get suggested from the youtubers. But when I'll find the ingredients I'll buy a big stash!

@@felixverduin569 my lactic hack is to strain homemade yogurt and reserve the whey-it contributes a hint of sour and the suspended proteins form a delicate foam in a way egg doesn't. It's not vegan, but for those who want egg-free, it's pretty great.

The Tom Collins is named after the style of gin used, Old Tom Gin which is far closer to a genever than dry gin. London Dry Gin does not belong in a Tom Collins.
