There's a reason why many chefs nowadays have started to actively avoid Michelin stars. Hint: It's not because they are stupid or something. It's because the system is literally all made up.

@@TheClintonio Only if you like French food. If you actually paid any attention, when the guide entered Japan, there was intense criticism including from the restaurants that received stars. It was profit driven. They wanted entry into the Japanese market so to do so, they generated huge publicity by awarding tons of stars in Japan. And you can see through their "recognition" as an institution through this lens. Because Japan as a food culture has a lot of tiny establishments the really good ones get stripped of their stars by Michelin if it's not French inspiring cuisine. The best rated sushi restaurant in Japan, rated by the Japanese for several years in a row was stripped of it's Michelin stars on the arbitrary rule that it's hard to get reservations but a French Japanese restaurant that is just as hard to get reservations for did not lose any stars.

I believe at least one of the risto's lost the star because it was effectively impossibile to book at any given time / get in the door if not introduced by a friend, and one of the requirements is to be open to public service

The Michelin stars were taken away because of the new criteria for type of service (not because of taste), most ramen shops fall into fast food type of service

I actually went to the Ginza Hachigou ramen restaurant this past December via their Sunday reservation system. Indeed, it runs out within 1-3 minutes after the reservation opens up. It took me two Sundays to finally get a reservation. But with a reservation, there is no wait. You just cannot show up late. I showed up 30 minutes early, but since they had space, they let me in early. Of all the ramen I've had, it was definitely the best overall bowl of ramen I've ever had. Their pork was one of the most tender I've ever had in a ramen. And the price for a bowl is the same price as most ramen restaurants. Would definitely recommend it to anyone who manages to get a reservation for it.

Couple of things on the Yuzu fiasco: It ended in a settlement which means that it does not set a precedent in any way. Yuzu chose to roll over rather than fight which often happens when a megacorp sues a tiny business. It was not behind a Patreon paywall. They DID put access to BETA builds as a Patreon reward. This did mean that if you are a pirate and want to play new games the day that they came out, you would want to be a patron but if you were willing to wait a few day/weeks then compatibility with the latest and greatest would eventually come. Emulation in the US is 100% legal. This has been established under the Fair Use doctrine, specifically with Sony vs. Bleem. Emulation in Japan is NOT 100% legal. Japanese law does not have any concept of Fair Use. This is one of the reasons that Big N (any many other JP companies) have such a contentious relationship with the scene. Generally if you are small/don't bring attention/don't profit then N leaves you alone. The nail that stand out, gets hammered. Yuzu's issues were that they were: Profiting from the patreon and in such a way as to heavily incentivize pirates to pay them. They had a leaked build of TOTK very early and would have had all the info around it be subject to Discovery in court. They used this to make Yuzu compatible with the game on Day 1. Big selling point. The emails that HAVE leaked have been very unprofessional (unsurprising) so it is very likely that again discovery would have been very damning and potential opened them up to other IP related crimes. This very much means that cut your losses and run was the only real option and the extent to which they did says a lot about how much they were over the barrel.

Hey, I think the Michelin starred Ramens got a "Bib Gourmant" award instead of a star, which means great food for a reasonable price. It's more logical since the ramens don't provide the "fancy" michelin-star service but still serve pretty good stuff

I'd agree but currently the ramifications of that (many emulation sites shutting down) as well as Nintendo attacking pokemon rom hack sites (that don't make a penny) its safe to say it wasn't an exagerration to say this has had a massive impact on emulation.

The fear of raw chicken (and eggs) is the fear of Salmonella, but I think Japan is pretty free of that? Kind of the same with raw/undercooked pork and Trichinella parasites. Handling raw foods has much higher requirements for hygiene etc. anyway. As long as there is little of such reported where you are, both can be safe.

That's a bummer. I've eaten at maybe 8 or 9 restaurants with various amounts of Michelin stars, and probably my favorite one was Nakiryu, which was also the only Michelin star restaurant where I had my meal for like $12. Ah well, it takes nothing away for me, I'll be back to Nakiryu in a couple of weeks, where I'm sure I'll enjoy my meal more than all those other overpriced swanky places.

i havent caught up with the new Shogun yet but i remember the series b4 with Richard Chamberlain. One Day was such a great series Pete and the soundtrack was absolutely amazing sounds of rave, new wave etc. Just finished watching The Holdovers - great movie about the bond between a student and teacher, shot like it was in the 70s, all vintagey grainy film.

When ordering in Japan always know what you're ordering so you don't waste your food. Also raw chicken has no brain worms, salmonella is the real danger. I take culinary risks occasionally and would eat raw chicken if offered but never would I eat Fugu.

Chris should get in touch with Gregg's and offer to be their brand ambassador in Japan.

Although most places in Japan serve raw chicken in unsafe ways, there are regions in Kyushu (incl. Kagoshima) that have official safety regulations for raw chicken, and the certified raw chicken they serve is actually pretty safe. Whether you like it is a different question though.

Shogun is amazing. Fun fact, it was apparently shot in British Columbia (Canada) my home. 😃

I think Pete got things a little mixed up there, so just for correction. I did some exploring on this topic too, just thought of sharing. You don't get some sort of brain worm eating raw chicken. Raw chicken is all the food poisoning stuff - campylobacter, salmonella and clostridium perfringens... the stuff that makes you forcibly pour liquids from places not intended. :P Oh, and also good to know - raw egg carries similar dangers, as well as several other types of meat, veggies and whatnot. It's the class of harmful bacteria that grows under the right conditions (read wrong conservation, transportation and preparation conditions). Raw pork is the one that will potentially give you brain worms, because of tapeworm larvae... trichinosis and cysticercosis. This is kinda uncommon, and usually happens to people with a weakened defense system, but still always a risk. Do note - this is also true for bacon and other pork subproducts, as well as some other types of meat. This is the parasitic stuff that some animals carries that can cause horrible diseases in a small percentage of cases. One thing to understand about those, is that if food is badly prepared, preserved, these animals are raised in poor conditions, the places processing the meat are unhygienic, and/or the restaurant doesn't follow some precautions, it's not only raw chicken or raw pork that can carry those - it's basically everything raw, including fish. Fish for the most part will carry the food poisoning stuff, but certain species of fish can also carry parasites that are dangerous for us. Most famously for Japan I guess, salmon. There's the whole story of salmon not being used for sashimi and sushi for a long time in Japan because of all the diseases it can carry, and it was only later on that Japan started using modern processing methods to make it safe that salmon became more common - despite salmon being one of the most common fish used by Japanese restaurants outside Japan. :P People tend to associate the problem with parasites with pork because of pig behavior and what they eat, but it actually has nothing to do with those. It has all to do with pigs being carriers of certain types of parasites that are dangerous to us. Doesn't matter how "clean" the animal looks, if it can potentially carry a parasite that is dangerous to us, their raw meat will also be dangerous to eat. In any case, if you want to take no risks on those, it's cooking time. Most of those bacteria, parasites, and whatnot die at 60-70C degrees. Here's something to give an apetite boost to everyone though - if the food is infected, you'll still be eating the dead bacteria and parasites. xD Yummy!

Torisashi isn't that bad. It's the texture that really gets you. My friend's uncle owns (owned?) a place near Osaka that specializes in it.

I'm still playing with a Nintendo Game Cube!!!! Raw fish is scary enough but raw chicken just sounds pretty dangerous. I've eaten at family style restaurants that had better food, bigger portions and better service than fancy restaurants that had 1 to 5 stars.

So, chickens in the UK and I believe Japan are actually vaccinated for salmonella (it's what the "British Lion" mark on our eggs mean) so you don't really need to worry about eating raw egg. It mostly comes from Americans as (if my info is correct) their chickens are not vaccinated for it. Also Pete - if you want to try the best black pudding get Stornoway black pud if you can. It's legitimately the best you can get and I suspect where that hotel may have sourced theirs.

Its not a ban on emulators, Nintendo uses emulators for their classic console stuff. They went after them because they where supporting and helping people pirate games. If they made the emulator and didn’t do that they would be fine.

Nigh everything about it comes off quite baseless and just unreasonable That being said Having Patreon locked builds of the emulator, ones specifically that have optimizations targeted at a game that isn't officially released, is an undeniable lapse in judgement and it's sad. If it wasn't for that I don't think the devs would have been hit at least as hard

It deprives the creator of the right to freely alienate. The immorality of stealing does not arise from it reducing the amount of stuff available. And stealing IP does actually negatively affect the types of stuff paying persons can get. The more a videogame is stolen, the less the proceeds from it being played go to the creator which reduces the incentive to create better experiences. @@Verchiel_

Chris, do you think decimalisation would help Japan in any way? Even if it just made it a little easier for tourists?

I'm hardly ever not afraid of ordering chicken at most restaurants. If its a new place I'll always default to some kind of beef, if its a little undercooked you'll probably still live. Chicken or pork too much of a gamble - and I've had too many bad chicken experiences -.-

+1 to Pete on raw black pudding. Exceptional. On the Michelin stuff, I once went to a restaurant in the UK that turned out to be in the Michelin guide - not sure if that qualifies as a star - but it was out of this world. Absolutely unbelievably good, and astonishingly reasonably priced.

Not sure I would classify Momotaro as youkai - more like mukashibanashi (fairytales), but lines between these things are rather nebulous. There are some Japanese media based on Youkai out there already - GeGeGe no Kitaro is probably the most well known. Its one of those cultural icons that everyone in Japan will know about and understand references from - for instance if you said somebody is like "NesumiOtoko" (literally mouse man), everyone would understand they probably let off a lot of gas.

Chris you can't miss Greggs anymore, not sure if its just my local one, but the quality of the sausage rolls is just awful these days, they are totally not the same as they were 10 years ago. prices went up quite high but they just don't give you that same warm feeling anymore.

I had experience with modeling and in late 2015 I was in contact with Capcom about the facial likeness role of Leon for the Resident Evil 2 Remake. I failed to mention I also have a voice acting background, in the end I lost the part and I can't forgive myself for wasting such an opportunity to visit Asia.

Oh, I forgot to mention in my other disgusting comment... xD I had raw horse meat and raw shrimp in a sushi restaurant at Shibuya 109 top floor, on a trip back around 2008... invitation from a friend who was living in Japan back at the time. This along with some other exotic stuff... those small fry you eat while they are still wriggling around, and this friend of mine tried forcing some raw... what was that thing? Sea urchin I think. Which I just couldn't take. Everything else I kinda forced down, but if I'm being honest, I didn't like any of it. Raw horse meat felt like chomping on a tasteless piece of hard fat, raw shrimp has a horrible mucky goopy texture, the small fry you only really taste the gravy that it's submerged into, and the sea urchin just tasted like sand with seasoning. To be fair to the restaurant and Japanese exotic foods, this is kinda also my perception of exotic foods in my own country. I often don't like the texture, or the flavor, or both. Guess they are exotic for a reason. :P

Michelin or any of food review guides are a load of nonsense in my opinion. The best culinary experience I’ve had to rival any guides rated by a bunch of baguette-toting experts was the Manchu Wok at one of Ottawa’s decrepit malls.

You don't need to lose weight to look healthier, even just recompositing your body to have more muscle than fat can sit you at the same weight but more tone since muscle is heavier than fat.

The only thing you may subconsciously have in your head is the knowledge that raw meat is dangerous. But in Germany, raw pork is still eaten, and until a few decades ago, sushi was not treated the way it is today. In the end, it's a fear of something unfamiliar to your own culture. I mean, think about it, why are you eating moldy cheese? Is cheese with maggots in it safe?

FYI, anyone interested: Yuzu was actually never paywalled, but had in-dev builds that were available optionally to anyone who supported their work. The stable builds were always available publicly. In fact, even if that were the case, because Yuzu was entirely original code (that is, not a single bit of it was sourced or copied from the Switch or Nintendo), there is nothing wrong with them making a profit off of it, even if it were the case that it wasn't available for free. Nintendo wasn't successful on any kind of legality or technicality, they simply had more money to fight with. If the team behind Yuzu had the same resources, they'd likely have won.

Call me uncultured but the Michelin Star grade is lost on me. Never quite understand the appeal.

Interesting. Haven’t seen it since it came out 44 yrs ago, so my memory is very fuzzy. However, I’m thinking you’re correct about the story. But also, it was made with a very Western perspective, which this version seems to veer away from. This one feels much more Japanese-centered, way more respectful of the culture. 44 years is a long time!

It is not like other stereotypical films like American Westerns where Indians are either very good and nobel or very bad!! The Japanese in this film series are playing their role with depth and not with the normal two dimensional character of this era!! They also speak Japanese throughout the film! I have the video collection and it have some very interesting revelations of how Shogun was filmed! What I really dislike about films in our time is the over exaggerated human strength or skills Samurais or fighters have. They are not real humans and rarely use their actor skills to show the person of their role!! That is compensated with explosions or over human fighting skills and a fast pace of action, which the original Shogun is not! It have a very good balance and lean heavily on the individual actors and tells a story! I hope You will have a good time rewatching the "old" version??!! Kindly Kim
