Tips on Avoiding CRATERS in your Royal Icing Details

UPDATE: Since posting this video, I’ve come across an even better method to avoid craters over a dry base. Here is an updated tutorial of that method if you’re interested. 😊
• UPDATED! How to Avoid ...
To put it mildly, craters that form in your icing are BEYOND frustrating. Like many bakers recommend, adding text/detail over just a crusted base is the best way to avoid cratering. However, life happens, and we aren’t always able to add detail to cookies so quickly. Sometimes, the base dries fully before we can add our details. That can take us to Crater City, but there’s one extra step you can take in this situation to help increase your chances of avoiding that route. It has certainly helped me, and I hope it will help you, too! Follow along with this video for some tips on combating those pesky craters!

Hi! Loved this. One question…have you ever tried poking holes in the one that dried overnight before adding the puffed lettering? I’ve seen it done and I wonder if holes or doing the squiggle line before filling or both would be better? If that makes sense? TIA!
