Though I'm British I was born in Hong Kong (my dad was there in the Army) my Amah used to make chilli sauce very similar to this. I'm definitely going to make this with my grandkids this weekend. OMG, thanks for this. Was such a nostalgic blast from the past!! 😊😊
I had szechuan peppercorns for the first time at a dim sum place years ago. I had no idea what was happening to me. Every time I drank water I would get this intense taste of lemon, but there was no lemon on the table. Drove me nuts. But now that I know what it is, I love it, lol.

It’s crazy how so many cooking posts scrape ingredients with the sharp part of the knife, which dulls it faster. I learned on YT to flip it and to use the non-sharp edge to act as a scraper instead. It’s a nice habit to form when handling ingredients.
The first part of this video changed the way I make ramen forever. Excited for a part 2!

Szechuan peppercorn so good. American chinese dont use it much yet or black vinegar. Both transform the flavor from salty and sweet to a deep flavor that has many more layers of flavor

The chicken Raman packets in alfredo is addictive and cheap. Basically make the Raman like you normally would but swap the water for an alfredo sauce.

Welp, this is amazingly good. I didn't have mint which was the missing piece and it was still delicious. Used Ajika seasoning in place of allepo pepper and damn this is good!

Once I learned what amounts are what, you can use your hand and fingers. 2 for a pinch, 3 for a larger pinch. Your palm for tablespoon or teaspoon. Cooking with eyeballs isn’t hard and after a while you will have it down cold.
Just made a bowl of Nissin Fire Wok ramen watching this. I used the packet. 😂 But, I also melted in an S&B curry block.

Last one of these I bought the fly by jing 3 pack and made it, as cheap ramen still holds a spot since my early childhood. I'd like to throw my recipe in the mix, as I think it's worthy. It's roots are Based in the California correctional system. Boil your noodles, drain damn near all the way. Add spice packet, and some diced Embasa brand pickled jalepeno's. I'm tellin ya dudes. Snap, I also have that cleaver now, lol.
Next, get your wok ripping hot before adding two Chinese eyeballs worth of avocado oil...
Mix the avocado oil half with extra virgin olive. It retains almost the same smoke point while adding flavor and improving health.
