1. Real life reason: Most obviously the writers were probably not aware of this/ wanted to make Endgame more interesting. 2. Thor had no idea that the Bifrost was the key to Eternity. (Rewatch the "Did you just throw Stormbreaker out of the window scene" ) 3. In the Comics, Eternity scales below the Gauntlet and was imprisoned by Thanos along with the other abstracts, Galactus, Celestials etc. So if the MCU works similarly Eternity may not be able to undo the actions of the Infinity gauntlet which is why they needed actual Infinity stones to undo the snap.
