This time we're going to make gingerbread cookies, yes, because it's Christmas! This gingerbread cookies are super crunchy, gingery with the perfect sweetness. This is probably my favourite gingerbread cookie recipe until now! Hope you will like it too. :))
PS. Sorry for not posting for a while. I was also busy at work and preparing my own small online dessert shop. I hope this recipe still made it on time for this Christmas.

120 ml soya milk
1/4 tsp apple cider vinegar
100 g self-raising, I use gluten-free one: amzn.to/48GVm0K ,See blog post for substitutes
75 g organic cane sugar
2 tsp matcha powder
1/16 tsp salt
10 ml vegetable oil, neutral-flavour
- Matcha Cream
125 g raw cahsews, soaked
60 g coconut cream
45 g soy milk, unsweetened or sweetened
1 Tbsp maple syrup, taste to adjust
1/2 tsp vanilla extract
1/16 tsp salt
1 tsp matcha powder
- Matcha Soak
1 tsp matcha powder
1/2 Tbsp organic cane sugar
60 g hot water
