You increase your stats in this game by collecting the post boss orb in interesting ways, like dive kicking, or at the apex of your jump. Check out the instruction manual for the details on it. This game is really in depth.

The Great Armor has tons of physical resistance, that's why your melee strikes weren't doing as much, it does however seem to be weak to magic. Also, totally recommend giving Werewolf a try.

Idk, normal mode can still be pretty rough sometimes even when you're doing well and get lucky in the shop

As far as resistances or attacks? Because afaik the only thing he hard counters when it comes to damage types is fire, which heals him, he is however weak to ice and holy
