The tip to store it in the fridge probably applies to humid and hot climates and Japan is basically that in the summers. I don’t live in a constant humid and hot weather so I can still keep my matcha fresh as long as storing it In the fridge. Also before fridges was invented matcha was stored in a cool and dark place in an air tight container preferably. Also if you are going to put it in one. Put it in a mini fridge specifically only for matcha, the matcha will absorb any flavors or aromas in your fridge full of stuff.

Great Video, I've been meaning to try matcha, but in general I'm not a huge green tea fan, Mostly White and Dark tea, Sheng Pu'er is to green for me also and if I had to pick I would go with a Dragon well green tea over Sheng any day. How does matcha even begin to compare, would you suggest trying it straight or making a latte like I see most people doing ?
