    Thanks again for the finger meat explanation, I asked my butcher and he did look at me like I had 2 heads. I am going to bring this video with me and if he now understands I will let you know what it is here in the midwest.❤

    I went to a local meat packing plant. (California). I was told that this “finger” meat is not typically trimmed from the adjacent cut here in the US. I can’t speak to other areas of the US, but I cannot seem to get it. Short ribs are kinda outrageous in price, so cutting up chuck will have to do. This looks pretty yummy.

    @@FloLum it sounded like it was considered wasteful to trim the steak of the finger meat. I mean they thought it strange. I didn’t have a visual to follow.

    Did you also look for Boneless Beef Ribs or Boneless Rib Meat? Some places label it like that.

    @@lillypatience I assume the guys I was talking to knew cow anatomy better than I do, and they said this might ??? be something that’s done in another part of the country. I just skipped the part about Canada, because it might be available elsewhere.

    @@sherryw-ponyluv-er2394 I was googling around and found a Canadian blogger, site is Scale and Tailor. If you search her blog for “finger” she gives a great explanation of where it comes from and when a butcher might have them. I’m still not certain if there’s a term in the US for it but for sure we can get it 🤗. When a butcher cuts Tomahawk steaks, the butcher will end up with finger meat strips. I read that sometimes finger meat is called Tomahawk trimmings. As soon as I’m off bed rest I’m going to hunt for them.

I am going to have to ask my butcher about finger meat because I have not seen it and I may have to go to the Asian grocery store and see if I can get some there.     Get better soon Dude. Love your hair Flo. The meal looks delicious. Looked up the alternative names for finger meat. It has several. Brisket is close by but lower on the beef carcass. Beef finger meat is also called Boneless Rib Fingers, Beef Rib Fingers, Boneless Beef Ribs, Boneless Rib Meat, Tomahawk Steak Trimmings or 8:55 Chinese brisket (for ngow laum or ngow nam). I think there may be other names but these are just a few. Going to have to check the Chinese grocery store to see if I can get some. Have a Happy Easter weekend.

    Hi Flo! I tried finger meat once - picked it up in the meat section at the Asian market. I was thrilled to try it since I learned of it awhile back on your channel. And, yes, the cost was very affordable. However, I wasn’t crazy about the meat because it was overly membrane-y….not sure of a better word to describe the part that is closest to the rib bones - it is chewy and not appealing to me. If it weren’t for this part, I’d very much enjoy the cut.

    Hi Flo, love your recipes and thanks for sharing this particular cut of beef. I searched for it and here in Australia it’s called Intercostals - This cut comes from between the ribs. It has a unique coarse texture and very high marbling, making it extremely high in flavour.

    Someone suggested adding five spice, how much would you recommend Flo? A teaspoon? A tablespoon. I have never cooked with five spice before and I’m not sure how strong the flavor is, but I do have some in my pantry.

    If you’re not familiar with the flavour, I’d start with 1/2 a teaspoon and perhaps 1 teaspoon max.

    Mine is the same size, 6qts. But I don’t know about traditional pressure cookers, they scare me. If you feel that it needs more water, please feel free to add. It might take longer to reduce afterwards.
