This avocado salad is very simple, healthy and tasty. If you're trying to eat healthy and lose some weight, this salad is for you! It's low in calories and high in nutrition. This avocado salad recipe is refreshing, crunchy and healthy all at the same time. The combination of herbs pair beautifully with avocado, making this super simple avocado salad a winner.

RECIPE (4 servings)
INGREDIENTS
1 large/2 small cucumbers
3 regular tomatoes OR 200g/0.5 lb cherry tomatoes
1 medium onion (any kind)
1-2 avocados (1 is sufficient for 2 servings)
5 stems dill
5 stems cilantro/coriander
5 stems mint (leaves only)
1 tsp lime juice
1 tbsp extra virgin olive oil
1 tbsp toasted pumpkin seeds/pistachios
Salt and pepper to taste
METHOD:
1. Clean all the vegetables and herbs thoroughly. Use 1 tsp baking soda per litre (34 oz) of water and soak all the vegetables for half hour. Rinse with running water after soaking
2. Dry the herbs with a salad spinner or paper towels. This will prevent the salad from going soggy
3. Slice cucumbers and onions. Dice tomatoes and avocados. Finely chop the herbs
4. Add them into a large bowl along with 1 tsp lime juice, 1 tbsp olive oil, 1/4 tsp salt and 1/4 tsp black pepper. Gently mix until everything is combined. Taste and adjust as needed
5. Set this aside for 15 minutes so the veggies soak in the flavour. This mix can also be stored in the refrigerator for upto 24 hours
6. Just before serving, add the diced avocado and gently mix. This keeps them from turning brown and mushy
7. Garnish with toasted pumpkin seeds/pistachios for added crunch and nuttiness
8. Serve on its own or with a side of grilled fish/chicken

SUBSTITUTES:
• No pumpkin seeds or pistachios?
Peanuts, almonds, walnuts and pine nuts also work
• Don’t like raw onions?
Soaking the diced onion in water for 15 minutes will soften it’s taste and will be more palatable
• No olive oil?
Use avocado oil or skip it altogether

TIPS:
• Cherry tomatoes work well in this recipe as they tend to be sweeter than regular tomatoes
• Core the cucumbers if you don’t like their seeds
• Cucumbers can be peeled as per preference
• Taste the salad and adjust seasoning as per taste
• Add some green chillies or peppers for added heat

Amazing! I could eat this everyday! I used to make this with feta cheese, but now that I'm vegan I know avocado will make a great substitute. Thanks for sharing.

Awesome salad, thank you! I would also put either lime or lemon juice all over the avocado before putting the avocado in the salad. The lime or lemon juice will keep the avocado from browning and getting as mushy. This will keep it looking and tasting good even if you must store the salad leftovers for a couple of days.

I thought I was the only person in the world who does not like mint. I have an aversion to the smell , also
I made this salad recently for a few friends and myself, it was delicious!
Cover the avocado with lime or lemon juice before adding it to the salad and it will keep the avocado from turning brown! Plus it tastes great! I think that adding a bit of white vinegar to the oil would be another way to change the salad up a bit in a good way.

Спасибо за идею!!! Очень вкусно как идея для салата! Я приготовила и поняла, что чего-то не хватает и его надо бы еще немного доработать! Соглашусь с тем, что было уже предложено до меня - если добавить малосольную красную рыбку - вкус салата станет более полным! Но тогда без острого перца. И семечки тыквы здесь совсем, на мой взгляд, ни к чему в любом его варианте! А авокадо надо довольно много - 1 целая штука на 1 порцию салата. Только тогда векс авокадо будет чувствоваться, раскрваться и украшать весь салат в целом!!! А так - великолепно!!! Спасибо за идею!! 😊

That salad has $20 worth of herbs in it alone. Of course, everyone likes it. It’s as expensive AF by the time everything is in it, and it’s only fresh to eat for a few minutes.
