    I just turned 70 this month & was raised on cast iron cooking & was taught by fear of a whooping if I ever washed them in soap lol & was taught how to keep them well seasoned. I & the WIC program agree that cooking with cast iron is good for children because they actually are a good source of iron for growing kids & adults. As for acidic foods like spaghetti sauce are perfectly fine but not to leave it a long time in them. And as for fried eggs I've never had my fried eggs stick to them & they're the best fried eggs I've ever had & I eat my eggs with the white cooked & yolks nice & runny. As for fish fishermen will tell you cast iron is the best for frying fresh caught fish. You just need to make sure your skillet oil is nice & hot, like when you cook your cornbread in your skillet. You always put your well oiled skillet in the oven before you bake your cornbread batter is the best cornbread you'll ever have with nice crunchy edges & I always make my pineapple upside-down down cakes in the largest cast iron skillet. 4 generations & counting.

    I use my cast iron skillet for almost everything I cook,especially my fish, fried chicken and my eggs, I have never ever had a sticking problem! And I'm not going to tell you how old my skillet is! 🎉❤

    Mine is like 5-6 years old and I don't have any problems with mine either. Nothing sticks to mine, not even sugar. But, I use mine at least a few times a day, every day. I own 1 non-stick wok-style pan thing and 1 non-stick sauce pot. Everything else is cast iron

    been cooking eggs on cast iron of all shapes and sizes, well seasoned and stripped season, over gas, electric, and open campfire for over 20 years, the reason they stick is because there's either not enough oil (just a half a teaspoon will do the trick in a small pan) in the pan or they did not cook long enough for it to release cleanly. A tip: after cooking anything in cast iron, while the iron is still very very hot, spray a little oil in the pan, its better for the pan and makes for easier clean up once the pan has cooled

    And my mom taught me to clean it immediately after it was cool enough to touch it safely, but not yet cold, with a bit of course salt. Wipe out with a paper towel or a dry cloth. Then put a couple drops of oil in the pan and rub it all over and heat it gently to keep it well seasoned.

    Yes, if you have low iron it helps. The thing is, do not let the acidic food sit in the pan after cooking. The food will taste like iron. @@mariateresamondragon5850

    yup. you have to literally heat the cast-iron without oil first, like you would a wok. you then heat up the oil to the correct temperature and, *then* , add the food. if you don’t heat the pot up first, then heat up the oil, the food will stick.

    Not just that but if it's sticking, let it be. Fish and eggs stick when you try to flip it too early. Either cover it or wait. t'll detach itself when it's done cooking.

    Thanks for mentioning acidic foods. My grandmother told me that they strip the seasoning off of your skillet, which they do. No matter how much I season my 100 year old cast iron, eggs always stick. I keep a small non-stick pan just for fried eggs.

    Try using ghee as an oil for eggs (and other stuff) I cook eggs on mine every morning and they never sticks with it. and now after using ghee for a while idk if it’s correlated but eggs never stick with olive oil either

    I have not cooked eggs yet in mines, so thanks for the head ups. That’s all my grandma cooked with was cast irons. And she faithfully cooked sunny side up eggs daily in it.

    Despite what we're told, cast iron won't cause problems. The huge myth is that you should never use dishwashing liquid, which is hogwash. You do need to be careful, but you can use a drop of dawn (the best one to use) and scrub it well, then season it with olive oil and add some himalayan pink salt. Use a paper towel to scrub the salt in with the oil, into the pan. I've found it to never disappoint. 🙂

    Food will not stick to a well-seasoned skillet if the skillet is heated prior to placing food in it. Place the skillet on a medium burner for two minutes or place the skillet in a 350° f. oven for five or so minutes to heat before placing food into the skillet. Food will stick if placed into an unheated cast iron skillet.

    I cook everything in my cast iron skillet. I also clean it with soap; most folks don’t. The trick is to treat it like a wok and season it each time. Get the dry hot pan smoking hot, add oil, let it smoke again, remove oil, wipe and go. It will never stick and always remain clean. Happy cooking.

    Soap does not ruin cast iron - sometimes you gotta clean the thing depending on what was cooked in it. As long as you thoroughly clean and rinse it, dry it completely, and oil it properly, it's good to go. I've seen people's cast iron skillet or Dutch oven that they've proudly "not cleaned with anything but a dry towel in 20 years" and I wouldn't want to eat anything that comes out of it. You shouldn't be using soap every time but even if you do, as long as you're putting in the extra effort to finish it, it's going to be fine.

    I use a drop or 2 of soap and running water to wash my cast iron and then re-oil it. I'd never soak it like my stainless steel pot for sure

    First let me say that I love your advice....took me very many yrs to learn that when cooking eggs on cast iron...put down your fat first, butter? Then salt& pepper, then eggs...the s&p holds the eggs up off the surface... don't stick

    wtf are you talking about. The reason why your eggs aren't sticking to the pan is because you are both adding fat and letting it get hot while you put your pepper and salt on the pan, not because it "holds the eggs up off surface".

    Daddy kept their skillets well seasoned and eggs were fantastic! I had heard if one is anemic to prepare tomato sauce (like spaghetti) in the cast iron skillet to increase the intake of iron. In my cooking days, I made wonderful pineapple upside down cakes in my skillet!

    Preheating really helps. Scrambled eggs tend to stick but they stick in lots of different pans.

    Using some melted butter helps me to keep eggs from sticking to my cast iron for the most part but once I get the eggs out I add some water to the pan to deglaze any leftovers off. Same for anything else that might stick.

    Problem with eggs is the temperature is to hot. Been cooking with cast iron for 50 or so years and if i get it to hot eggs stick. Stay low and slow and you'll be ok Edit: Thank you for the beautiful video and smile!

    I do too!!! I also love to do coffee cakes and the like. They always come out perfect. I am southern and I know my northern friends don't use cast iron much, if at all. Maybe using cast iron for everything is a southern thing.

    I was told by a dietician that tomato based dishes and sauces will absorb some iron into it. Acidic foods like tomatoes and citrus fruits that are rich in vitamin C are necessary for our bodies to be able to absorb iron. I was anemic at the time, and it helped reverse that within a couple months. It did make the skillet less non-stick, but after 3 months of using a skillet for acidic foods, I was no longer anemic. So I use my 10" for tomato/acidic things, my 8" for meats, and my 6" for eggs. Nothing sticks as long as I bring the skillets up to temp before adding ingredients and brush them with oil after cleaning them out. I worked at a restaurant that offers many skillet entrees. After every use, they scrub them with coarse steel wool to loosen the food, rinse them with water only, then spray with Pam 😉 after they're dry. I started cleaning mine that way, and it keeps them well seasoned. Cast iron is as resilient as you are. I have learned a lot from you. God bless you and your family.

    You lost me at using cooking spray. That junk is aerosolized silicone! Why do you think your baking pans gets that funky sticky gunk on them after a while? You will get a better result from using a folded paper towel that has been dabbed in liquid grease or cooking oil. Rinse your cast iron after cooking, get the food particles off and if you have to scrub, use a chain mail rag (yes they exist and are designed for using on cast iron) then heat the skillet on a burner just until the moisture disappears. Grab your greased paper towel and spread a light coat of grease evenly over the interior of the skillet then let it cool to room temperature.

    If I'm making fried eggs, I heat my skillet and oil up first. My eggs don't stick. Scrambled eggs stick to almost everything, lol. I tend to make scrambled egg breakfast bowls in the microwave anyway. It's just the two of us. I don't use nonstick skillets. You're right on about acidic items. Most folks don't think twice about using tomato products in their cast iron. Folks should also be aware to never store any food in cast iron. Love your videos, Pam!

    To cook eggs in a cast iron pan is a learning curve. To make scrambled eggs you want to scramble then first in a bowl (not the pan). Melt some butter in the skillet and then pour your eggs in. DO NOT scramble or stir UNTIL the eggs start to “peel away” from the sides. Then take your utensil and pull the cooked part to the center or side, allowing the uncooked eggs to spill into where the cooked egg parts were, until all the eggs are cooked. Basically, don’t touch/flip the egg until it peels away from the pan.

    What most "new" cooks don't understand about cooking eggs in cast iron is DON'T USE HIGHEST HEAT SETTING! Yes, preheat the skillet, yes get the oil/butter/duck fat/beef suet/bacon grease hot, but then turn the heat down to somewhere between medium and medium high after adding the eggs to the pan.

    My sisters' boyfriend caught a bunch of catfish,cooked them up in my cast iron dutch oven with tomatos, onions & garlic in a type of soup.The fish acquired a nasty iron taste & the cast iron pothad to be scrubbed & seasoned real good!Needless to say we didn't eat it because he left the heads on & we got grossed out because the fishs were staring at us🤢😝 !

    There's almost nothing that a cast iron skillet can't cook as well as long as it's well seasoned and the temperatures are correct. I have cast-iron that is older than I am that belonged my grandparents. I really enjoy your channel.

    I've never had a problem with any of that. What did our grandparents and great grandparents do, back in the day, when almost all they used was cast iron? My grandma never used any other skillet and she lived to be 99 and 50 weeks...2 weeks from her 100th birthday. God bless cast iron. I cook everything in it. 🙂

    My mother gifted me a brand new cast iron skillet a year or two ago. I’ve learned a couple of things that really keep it well seasoned. Clean it IMMEDIATELY after cooking. Don’t let the food sit. Pour salt in & scrub it with parchment paper or even notebook paper (in a pinch). Then dispose of the dirty salt. Repeat if needed. I use olive oil or coconut oil for seasoning & rub it in & all around the skillet with one of those silicone brushes that’s typically used for marinades & sauces. I only occasionally put it into the oven for setting the oil. Hope this helps.

    The best way to season a cast iron: -Properly wash with soap and water after cooking. You can use salt, a scrubber, or chain mail to remove bits that are hard and caked on. -Dry immediately and completely. -Apply an oil with a high smoking point (i.e., sunflower, safflower, avocado oil, etc.) using a coffee filter (the best for this!) on all parts of the cast iron. Front, back, sides, handles. Everywhere. -Bake, upside down, at 450°F for 1 hour. If you think you've applied too much oil, put a large baking sheet or aluminum foil on the bottom rack to collect any drips. -Turn off the oven & allow to cool completely inside the oven.

    OK. I have to confess.😅 I love spaghetti sauce in cast iron cooked until the edges brown. Add a little chili powder before you burn it and it's really good 😋😂 I also love cooking onions in it then baking bread. The bread picks up that onion flavor.

    Yes it will add an extra 2 to 5 mg of iron. My iron skillets have to be at least 100 yrs old. I use them daily.

    Miss Pam, I make corn bread in my cast iron skillet all the time. And, never had a problem with flavors. The skillet you have would be perfect for cakes or brownies 😋 It looked like you had a good season on your pan. I don't think you would need to worry about that.     Sorry, but this is 🧢 😅 You most definitely can and should cook eggs in a cast iron skillet. Go back and watch The Color Purple 🍳 lol As far as desserts, that's why God made more than one skillet. 😂 I mean have you not had cornbread in a skillet?? It never tastes like food cooked from before. Lastly, I ALWAYS cook my salmon in a cast iron skillet. I sear both sides and finish in the oven (put the whole skillet in the oven.) PERFECTION!!! 😋 Love her, but if she don't know how to use it, then she should just say that. 🤣😜

    I have 6 cast iron pans on my stove top at all times ready to go from crepes and eggs to fish, I have a over a hundred year old cast iron Dutch oven gifted to me as well as grill pans and another whole set of assorted sizes,I have used two pans of same size to bake in one inverted as a lid for baking or roasting, It’s a learning process in care and cleaning but they will last generations. I got tired of replacing cooking pots and pans ever few years and the Teflon aspect. Do not be afraid of Cast iron, however I don’t not recommend using them on glass top stoves, gas is best or electric. You can buy silicone handle grips that stay cool. They are heavy but worth the purchase ( not expensive and can find in some thrift stores) yes you can get that rusty pan looking brand new! It’s all online for you to learn.

    My mom taught me a dish with fish and I cooked it in a cast iron skillet, it had potatoes at the bottom. The fish didn't stick, it was not overcooked and the potatoes had the added flavor delicious. 😋

    That's because food sticking is caused by too high a temperature while cooking. Oil acts like water to keep the temp controlled. A nice heat absorbing liquid that doesn't boil as low as water. This took 5 seconds to Google. I'm just salty at the weird level of misinformation surrounding cast iron. It's... it's fucking wild.

    We fry eggs all the time in ours . Never have a problem. But we keep ours well seasoned. But everything else is right on. We have done salmon cakes though. Thanks Pam! ❤️

    I cooked anything I want in mine and it doesn’t stick because it is well seasoned. Seasoning it after each use is the key.

    I don't use lodge for exactly these reasons, ive got an old Wagner, and that thing is slick as glass. I do agree about the acid, not because of leaching metals out, but because it damages the seasoning. If you're skillet is properly seasoned the foods you cook should never be in contact with the metal.

    I cook Argentinian Red Shrimp in my cast iron. They leave an oil that is exquisite in flavor. I leave it overnight, and then fry my eggs in the red oil left behind by the shrimp, and the flavor is *DIVINE.*

    I cook anything I want to in my cast iron pans. I also use a drop or two of Dawn dishwashing liquid to clean them. I just rub a little bit of oil into the pan over low heat and it is just fine.

    A seasoned skillet means the oils have polymerized to create a non stick surface. I cook almost exclusively in cast iron, and I cook eggs, fish, etc with little issue. Cast iron takes awhile to heat evenly, but preheating properly it is worth it!

    Good info! I usually prefer cooking with steel pans, cast iron, or ceramic. They even made some glass frying pans for a while with corning glass. It's best to avoid non stick because of the forever chemicals which cause cancer or affect your body's hormones

    I only have multiple cast iron cookware. I cook salmon in one skillet that is used for meats only. I also cook eggs all the time. I bake my cakes in my cast iron baking pans. I keep my pans well seasoned and use plenty of coconut oil when cooking things that might stick like eggs. I do agree about acidic foods as they can eat away at the coating. You just need to reseason more often.

    Pam I have used cast iron since I could stand on a chair and make biscuits, yes ma'am if you leave acidic foods in cast iron it will pit the cast, you can fry eggs in my cast iron skillets with out any butter grease or nothing and they slide right out, my cast iron has been handed down from generation to generation I believe I'm the 5th generation, your exactly right on the eggs they will stick so badly if your cast iron is not heavily seasoned. I so appreciate you speaking on this because a lot of people have not been taught how to use cast iron or how to clean it after it's used.thank you Pam your awesome 😊🎉❤

    I cook trout all the time in cast iron skillets. All you have to do is use a touch of olive or other type of oil and a very small amount of unsalted butter for flavor. It gives the fish a very nice, browned outside while maintaining the texture of the inside meat. Key is not turning trout too soon. I haven’t tried flounder. Perhaps that is too thin. But no troubles on the trout.

    You’re very wrong about not using acidic food in a cast iron skillet. Its a good thing! It’s made of iron, and when you add acidic food to it, like citrus or tomato, it leeches a bit of that iron into your food. It’s actually recommended for vegetarians, vegans, and people who have anemia in order to get more iron into their diet. There are even cast iron shaped into thumb sized fish, and you can buy one to add into your dishes, soups, and stews to add iron into any meal as it cooks. They even use them in third world countries for populations that don’t naturally have iron rich foods. Once again, acidic food is absolutely fine to cook with in a cast iron pan!

    I grew up on cast iron and cook everything in it. I have over 90 frying pans, pots, roasting pans, baking pans, cake pans, bread pans, griddles and grills all made from cast iron and I use every one of them. As long as they’re well seasoned and soap never touches them, they won’t stick or hold flavors.

    Norwegian here, we fry fish such as pollock and redfish covered in seasoned flour in 50/50 butter and rapeseed oil and have no problem with it sticking. same with egg medium heat and butter.

    I have a designated cast iron skillet for cornbread. My others are for frying. Proper care is necessary for longevity and the more seasoned the better that skillet cook.

    I specifically use my cast iron skillets for eggs because they get crispy around the edges in a way I can’t get from other pans. My cast iron pans are well seasoned and well used as they are over 100 years old and have been passed down from my great grandma. I believe she got them when she got married around 1900.
