金香上海粗麪
材料:
上海粗麪2個
金香芝麻
處理:
1. 大火煲滾1鑊水。
2. 搣開麪條放落鑊,用筷子分開它,冚蓋,大火滾起,熄火,焗5分鐘。
3. 預備醬汁:
a. 生抽1湯匙
b. 老抽半湯匙
c. 蠔油半湯匙
加入清水300毫升,攪勻。
4. 麪條已焗了5分鐘,開大火至滾起,熄火,再焗5分鐘。
5. 麪條已焗好,擎乾水,清水沖洗乾淨,再擎乾水。
6. 洗乾淨鑊。
7. 白鑊,放芝麻落鑊,用最慢火,烘半分鐘,放碗內。
烹調:
1. 大火在鑊內燒熱油2湯匙。
2. 放麪落鑊。
3. 加入醬汁,炒勻,冚蓋,轉中慢火,煮5分鐘。
4. 轉大火,炒勻,加入調味料:
a. 蠔油半湯匙
b. 胡椒粉半茶匙,炒勻。
c. 糖1湯匙,炒勻。
d. 麻油2湯匙,炒勻。
5. 完成,上碟,灑上金香芝麻。
6. 可享用。
Stir frying Shanghainese noodles with golden sesame
Ingredients:
Shanghai noodles (thick) 2 Nos.
Golden sesame
Preparation:
1. Heat up a wok of water at high flame.
2. Split the noodles and put in wok. Separate it with a pair of chopsticks. Cover up the wok. Heat up at high flame. Turn off fire. Leave it for 5 minutes.
3. Prepare sauce:
a. Light soya sauce 1 tbsp
b. Dark soya sauce 0.5 tbsp
c. Oyster sauce 0.5 tbsp
Add in 300ml of water, mix well.
4. Noodles have been soaked for 5 minutes, turn to high flame until it boils up. Turn off fire. Cover up the wok. Leave it for 5 minutes.
5. Noodles have been soaked well, get it drained. Rinse thoroughly. Drain again.
6. Rinse the wok.
7. Plain wok, put sesame in it, low flame, heat it for half minute. Put it in a bowl.
Steps:
1. Heat up 2 tbsp of oil at high flame in wok.
2. Put noodles in wok.
3. Add in the sauce, fry well. Cover up the wok. Turn to medium~low flame. Braise for 5 minutes.
4. Turn to high flame. Fry well. Add seasoning:
a. Oyster sauce 0.5 tbsp
b. Pepper 0.5 tsp, fry well.
c. Sugar 1 tbsp, fry well.
d. Sesame oil 2 tbsp, fry well.
5. Complete. Put on plate. Put golden sesame on top.
6. Serve.
