This is more of American-Chinese fusion food(but to be fair, Chinese food is very diverse). And eating with hands isn't uncivilised since a lot of people in this world do use their hands to eat instead of utensils. Had it the other way round a few weeks ago, massive trots for 3 or 4 days ... couldnt eat anything apart from a few crackers then. Also, haven't touched sardines ever since (which was the last thing I ate before getting sick). All the best for you
