Sponge cake baked with meringue and almonds becomes the centerpiece of this delightful layer cake filled with custard and whipped cream. Kvæfjordkake began its inception in the north of Norway and has earned its nickname as verdens beste, “the world’s best”.

Recipe:
The cake base:
100 g/ 3,5 oz soft butter
120 g/ 4,2 oz + 200 g/ 7 oz sugar
4 egg yolks and 4 egg whites
50 ml/ 1,7 oz milk
160 g/ 5,6 oz flour
1 tsp baking powder
1 tsp vanilla sugar
100 g/ 3,5 oz almonds
Stir butter and sugar until light and fluffy. Add egg yolks, milk, sifted wheat flour, baking powder and vanilla sugar. Cover the long pan with baking paper and spread the dough in it.
Whisk egg whites to a semi-stiff consistency. Then add little by little sugar. Spread the mixture over the dough and sprinkle over the almonds.
Bake the cake at 180 degrees C/ 356 degrees F in a heated oven, in the middle of the oven for 35 minutes.
Cool in the cake pan.
Cream:
500 ml/ 17,6 oz vanilla cream
300 ml/ 10,6 oz cream 33% (whipping cream)

Divide the cake into two equal parts. Place one part on the cake plate with the meringue side up.
Mix the whipped cream and icing sugar into the vanilla cream and cover the cream on the bottom with a spatula. Place the other cake part on top with the meringue side up.
