    Microbiologist teahead here. That's really interesting! It certainly would make sense that fermenting/aging under vacuum would result in a different flavor than under oxygen-exposed conditions. That's because it would favor the growth of anaerobic bacteria rather than aerobic. An interesting experiment would be to prepare the leaves in parallel, in exactly the same way, but then 1/3 would be dried fully and stored under vaccum, 1/3 would be dried less fully and stored under vacuum, and 1/3 would be dried less fully and stored in the usual paper wrapping for fermented teas.

    My wife usually doesn't pay much attention when I watch Mei Leaf till I watch a video with Celine. Don is like an exciting documentary alone, but my wife doesn't like tea enough to watch documentaries about it. (nothing against Don I love his solo videos as well, but it's not my wife's style). When Celine is in the videos the energy changes and it is more her style. She loves watching couples and vlogs and it feels more like a vlog with Celine. Watching them both together is a huge treat for my wife and it leaves her laughing and smiling. She likes tea, but not enough to watch videos on it till you two are together! Lol I hope this comment doesn't come of wrong it's supposed to be a complement to the two of you. Keep up the great work.

    I just finished watching the 'how to age white tea results" previous to this video and maybe the results of the high humidity aged white tea strengthens your hypothesis of why this tea tastes older than 2018! Packaged and sealed with a high humidity!

    I just had this tea come in, and I must say, it is so complex and SO cozy, that I just want to sit by a fire and drink this tea all night long. The aftertaste persists incredibly long, whilst changing as time goes on!

    also one of my fav teas is a 1990 sheng pu erh that is just called border tea, because it grows in a forrest at the vietnamese border. it has similar tased to this one. but it is so expensive and also very hard to find nowerdays. so this is a nice tea to trick myselfe into drinking my fav border tea :D

    I shall buy some of this tea tomorrow it sounds very interesting and thought provoking. Normally fermented teas like puerhs have access to a reasonable amount of oxygen. particularly when first compressed, so have a high ratio of aerobic to anaerobic microflora. However, the Japanese discovered that excluding oxygen by replacing it with nitrogen increased gamma amino butyric acid (GABA) hence gaba oolong style teas came about so your hypothesis may be very valid. Perhaps under more strict anaerobic conditions from vac' packing, the anaerobic fermentation of an aged tea takes on the characteristics of a long storage fermented tea giving the impression of long age. Definitely food for thought - whoops! I mean "tea for thought".

    Hi, your videos have been very helpful to me and i thank you for that, i have one very important question and i hope you can answer it , what is the brewing method for the healthiest tea possible?, i drink green tea for its benefits ( especially catechins) and am ready to sacrifice the taste for a healthier tea, so how much should i brew the tea, which temperature etc . please that's really important for me ,thanks in advance. keep up the good work.

    Hopefully isn’t too late, but based on quick searches green tea is still at the top. If you wanted to go the extra mile, drink matcha green tea. From research, ideal temp for maximizing catechins and L-theanine is between 45 to 75 Celsius. Anything past that will destroy many of those chemical compounds. For green tea, I do 8 grams of leaf in a 200 ml gaiwan for as many brews until the flavor is gone. For matcha, I make a thin usucha with about two chashaku (bamboo matcha spoon) scoops into my bowl with approximately the same 200 ml of water. Hope this helps! By the way in terms of health green tea is green tea regardless of brand. Don’t get too hung up on it, but buy from brands that are reputable. For green tea I buy from Yunnan Sourcing, for matcha I get Ippodo.

    To hell with it I just ordered a pouch. I'm enjoying this one while it lasts! Drinking this is the first time I ever got tea drunk, and I felt so good! I want my husband to try it. Now I'm wondering if my cheeks turned bright pink when I was drinking it 😆
