Sugar flowers last for years but you wouldn't want to eat them anyway. I've still got mine from my wedding three years ago. It's the sugar flowers she is talking about. The cakes would probably be only a week or two old at most. Because they are wrapped in fondant, they are completely sealed and stay fresh for ages depending on the type of cake.

I think the decorative flowers were sculpted through the year and then finally the assembly with baking the cake and icing it. So I think the cake itself is edible, but I'm not sure but the flowers may be as well. It's probably sugary enough to preserve itself
