Recipe:
Serves 2
10 min prep
25 min total
Ingredients:
• 2x 250g steaks (rib eye/scotch fillet is ideal)
• Lots of freshly cracked pepper
• Salt
• ½ shallot, diced
• 50g butter
• ¼ cup cognac
• ¼ cup cream
• 1/3 cup beef stock
• 1 teaspoon of green peppercorns
• 1 tablespoon of flavourless oil
Directions:
• Season your steak with salt as you usually would, then grind a thick layer of very course pepper over both sides of your steak, padding it in with your hand.
• Heat your fry pan on a very high heat with the flavourless oil, then drop the steak in and sear for around 2 min on both sides for medium rare (or until browned and done to your liking).
• Remove the steak and rest, then add the diced shallot and cook on high heat for around 1 minute or until slightly browned.
• Once browned, add the cognac (warning, this will ignite, so stand back!) then take some photos for Instagram or TikTok or whatever and blow it out after about 30 seconds.
• Once the fire and bragging has stopped, add the butter, stock, cream, green peppercorns and salt to taste. Let this simmer for about 5-10 min or until it’s thick enough to coat the back of a spoon.
• Pour the sauce on the plates first, then serve your steak on top. Ideally with a serve of greens and roast potatoes or chips.

    Pro Tip: buy green pepper corns in brine. When you get it home, drain the brine, rinse the corns, drain and put back in the bottle and cover in whiskey of choice. Keeps forever in the fridge. I like the whiskey taste better than brine.

    just great mate for a meal in the bush. However as a chef can I suggest that when adding butter to a sauce you do it until the sauce comes off the heat. Other wise the butter keeps cooking and can split, which it seems to have done if I look very closely at your plate. Probably being a pain in the rectum after such a lovely dish but it adds to perfection.
